A little one is on the way...that message will be clear as can be when you roll out this carriage confection for a baby shower! To make the sweet treat, our cooks used ordinary round pans to bake two same-size cakes, then cut them into basic shapes to produce a buggy. Fancy cake decorating techniques provided all of the pretty finishing touches. Need a dessert that serves more than 12 guests? Prepare two buggies-making one baby blue and one pink.

1 cup butter, softened
1-1/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
FROSTING:
1/2 cup butter, softened
1/2 cup shortening
1 teaspoon vanilla extract
4 cups confectioners' sugar
3 tablespoons whole milk
Pink and blue gel food coloring
Pastry coupler ring (optional—see note)
Pastry tips—basketweave tip #48, round tip #5, star tip #32, and drop flower tip #129
14-inch square covered board

Steps:

  • Cake: In a bowl, cream the butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla., Combine the flour, baking powder and baking soda. Add to the creamed mixture alternately with the sour cream., Spread batter into two greased and floured 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing the cakes from pans to wire racks to cool completely., From one cake, cut out and remove one-fourth of the cake in one wedge, creating the buggy shape. Set wedge aside. Place buggy on covered board., From the rounded side of the reserved wedge, cut a 3-1/2-in. long x 1-1/4-in. wide slight curved shape for the handle. Set aside., From the second round cake, cut two 3-3/4-in. circles for the wheels. Position the cake handle and wheels next to the cake buggy on the covered board. Save cake scraps for another use., Frosting: In a large bowl, cream the butter, shortening and vanilla. Add the confectioner's sugar and milk. Mix well. Place 1/3 cup of frosting in each of two bowls. Tint one pink and the other blue., Frost the cakes white., Cut a hole in the corner of a pastry or plastic bag. Insert the basket weave pastry tip and remaining white frosting. To begin the pattern on buggy's bottom section, pipe one vertical line, then pipe several short horizontal lines that overlap the vertical line. Repeat this process, making the horizontal lines alternate and connect the vertical lines, until the entire bottom section has a basket weave pattern., Cut a hole in another bag. Insert star tip and pink frosting. Pipe a rope border around the handle, wheels and hood. Pipe two dividing lines on hood., Replace star tip with flower tip. Pipe three pink flowers in the center of buggy's bottom section. Set aside remaining pink frosting., Cut a hole in remaining bag. Insert the star tip and blue frosting. Pipe a rope border around buggy's bottom section. , Replace star tip with flower tip. Pipe three blue flowers among the pink ones on the buggy., Replace flower tip with round tip. Pipe two blue spokes on each wheel and add the center on each pink flower., With pink frosting, pipe two more spokes and add the blue flower centers.

Your baby shower guests will be amazed at this adorable baby buggy cake and will probably think you bought it!

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1/2 teaspoon almond extract
Blue or red food color from 1 box (2.7 oz) Betty Crocker™ classic gel food colors
1 container Betty Crocker™ Whipped fluffy white frosting
1 can (8.4 oz) Betty Crocker™ Cupcake Icing sky blue or petal pink
1 can (6.4 oz) Betty Crocker™ Easy Flow white decorating icing
1 colored plastic straw

Steps:

  • Heat oven to 350°F. Grease and flour bottom of 8-inch round cake pan. Place paper baking cup in each of 12 regular-size muffin cups.
  • Make cake batter as directed on box--except add almond extract and 2 drops blue or red food color with the water. Spread half of the batter in round pan; spoon remaining batter into muffin cups. Bake as directed on box for 8-inch round and cupcakes. Cool in pans 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour.
  • On serving platter, place cake layer bottom side up. Frost top and side of cake and 2 of the cupcakes with white frosting. (Frost remaining cupcakes, and serve on the side.)
  • To make baby buggy, pipe half of top side of cake with blue or pink cupcake icing, using basket-weave tip. For buggy hood, pipe one-quarter of top side of cake with blue or pink cupcake icing, using star tip. Pipe around edge with white decorating icing. Pipe white lines on buggy hood. Add baby face as desired.
  • To make buggy wheels, pipe blue or pink cupcake icing for spokes on each of 2 cupcakes and around edge of each cupcake. Place cupcakes at bottom of cake for wheels. Add straw for buggy handle. Store loosely covered at room temperature.

You don't need to be an engineer to make this impressive construction site birthday cake, just a few toys, some chocolate coated wafer bars and a little creative flair

250g pack unsalted butter
50ml whole milk
150g whole natural yogurt
½ tsp vanilla paste or extract
3 large eggs
250g light muscovado sugar , any lumps squashed
250g self-raising flour
2 tsp baking powder
50g cocoa powder
2 tbsp cocoa powder
2 tbsp milk , plus 1 tsp more if needed
200g unsalted butter , very well softened
300g icing sugar
1 tsp vanilla paste or extract
large round cake board or a large flat plate, about 13inches/33cm
2 plastic diggers and one dumper truck, or similar
9 four-finger KitKat bars
handful Smarties or other coloured sweets
marker pen
10 x 5cm rectangle of yellow cardboard
1 drinking straw
sticky tape

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Use a little of the butter to grease the sides and bases of two 20cm sandwich tins. Melt the rest of the butter in a small saucepan. Off the heat, add the milk, yogurt and vanilla, followed by the eggs. Beat well with a fork.
  • Put the dry ingredients plus ¼ tsp salt into a large bowl. Whisk to combine - this aerates and saves sifting. Tip in the wet ingredients and whisk to a smooth, silky batter.
  • Don't hang around at this point. Pour the batter evenly into the prepared tins and put onto the middle shelf in the oven. Bake for 25 mins or until risen and a skewer inserted into the middle of the cakes comes out clean. Cool for 10 mins in the tins, then carefully invert the cakes and leave to cool upside down on a cooling rack.
  • Make the buttercream. Stir the cocoa into 2 tbsp milk until smooth. Put the butter into a large bowl and sift the icing sugar on top. Add the cocoa mixture, vanilla, and a pinch of salt. Beat for a few mins with electric beaters until creamy and spreadable. Add the extra 1 tsp milk if you need to.
  • Place one of the cakes towards the back of the board or plate, and fix it with a little of the buttercream to stop it slipping about. Spread with ¼ of the buttercream.
  • Sandwich the second cake on top. With a small, serrated knife, cut away a scallop-shaped crater from the top cake. Cut about half way down into the sponge and removing about a quarter of the top of the cake. Keep the piece you remove. Position two diggers on the top of the cake to see if your crater is about the right size and shape, then set them aside again.
  • Using a palette knife, paddle the rest of the buttercream evenly over the top of the cake and down its sides. Make sure that the edge of the excavated area is defined.
  • Snap the ends from enough of the KitKat fingers to follow the edge of the excavated area, then press them into the buttercream. Now fix the rest of the whole fingers around the side of the cake.
  • Crumble the cake that you removed in step 6, to make soil. Part-fill the excavated hole with the soil, adding a few Smarties, if you like. Position the diggers on top and put some soil and Smarties into their buckets.
  • Fill a lorry or dump truck with more crumbs and Smarties, and let some of the soil and spill over the edge of the cake and the broken KitKats.
  • Use the marker to write your message on the card and draw some diagonal black lines. Cut the straight part of the straw into two equal pieces, then fix these to the back of the card with tape to make a sign. Position the sign at the back of the cake. If the sponges are used fresh or within a day of baking (wrap well once cooled), the finished cake will keep in a cool place (not the fridge) for 2 days.
