TURKEY BLACK BEAN CHILI
A chef made this at a cooking class in the upstairs room at the supermarket in town. When I looked over the recipe, I thought "I'm not going to like this". When I watched the prep & the end result, I thought "I'm not going to like this". She served it over a combination of white & brown rice with a side salad. Was I ever wrong. I liked it very much & I will be making it for my DH very soon!

Steps:
- Heat oil in a dutch oven over medium high heat; add turkey, onion& garlic and cook, stirring to break up the lumps, for about 5- 7 minutes or until turkey is no longer pink.
- Add seasonings, stir& cook for another 2 minutes.
- Drain off any excess fat.
- Add chilies, tomatoes & beans and combine thoroughly.
- Heat to boiling, stirring often.
- Reduce heat to low & simmer, stirring occasionally, for 30 minutes.
- Stir in lime juice & remove from heat.
- Serve topped with green onions & cheddar cheese.

- Heat olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion, green and red bell peppers, and jalapeno peppers. Cook and stir until the onion is softened and translucent, about 8 minutes. Add the garlic, cumin, chili powder, sugar, salt, black pepper, and thyme. Continue to cook until fragrant, about 8 more minutes, stirring occasionally.
- Stir in the beef broth, pinto beans, red beans, diced tomatoes, tomato sauce, and tomato paste. Bring to a boil, then reduce heat to low. Simmer until thickened, about 45 minutes, stirring occasionally. For a thinner chili, cover the pot when simmering.

This is the chili for those who don't normally eat chili. I originally found this recipe in a Cooking Light magazine. I make it all the time as it has only a few ingredients, is quick and easy and tastes great. The prunes add a nice touch, but if you don't have any, you can substitute raisins. Serve with rice or whatever you like.

- In a 4 quart pot over medium heat, heat 1 teaspoon olive oil. Add onion and cook 3 minutes. Add garlic and cook 2 minutes more or until onions are soft. Transfer cooked onion/garlic mixture to a plate and set aside. Return pot to stove.

- Heat olive oil in heavy large pot over medium-high heat. Add ground turkey and ground beef and saute until brown, about 3 minutes. Add cubed beef and garlic and saute 5 minutes. - Process 1/3 of beans, the tomatoes and their juices, chipotle, and adobo sauce in a food processor.
- Heat the oil in a 5 to 6 qt dutch oven over medium-high heat until it's shimmering. Add turkey and 1/2 tsp salt and cook, breaking up meat as it cooks. Remove the meat and set aside. Add 1/2 of the onion and 1/4 tsp salt, and cook until the onions start to brown and soften, about 3 minutes. Add the chili powder and cumin and cook for 20 seconds. Reduce heat to medium. - Cook beans, oregano, onion, garlic and 1 Tbs. chili powder in six cups water for 2 hours. Salt to taste after 1 hour.
- Toward end of bean cooking time, brown meat and garlic powder. Drain. Return to pan. Sprinkle with flour. (If flour sticks to pan, use a little water from beans to scrape sides.) Brown till combined.
- Set aside.
- Add tomato sauce, diced tomatoes (don't drain), chili powder, basil, and oregano to crock pot and stir till blended.
- Add meat/flour mixture to crock pot.
- Add beans to crock pot. (Reserve water).
- Combine.
- Heat on "high" for one hour, then reduce to low and cook for at least one hour more. Add water from beans to chili if mixture becomes too thick.
