SPICY BUTTERSCOTCH WINGS

- Preheat oven to 400°. Using a sharp knife, cut through the 2 wing joints; discard wing tips. Combine next 7 ingredients; add wings and toss to coat., Line a 15x10-in. pan with foil; grease with cooking spray. Bake wings in prepared pan 10 minutes; reduce heat to 350° and bake until juices run clear, 12-15 minutes. Remove from oven; keep warm., Meanwhile, in a small skillet, spread sugar; cook, without stirring, over medium heat until it begins to melt. Gently drag melted sugar to center of pan so it melts evenly. Cook, without stirring, until melted sugar turns amber. Carefully stir in warm milk and butter. Simmer, stirring frequently, until thickened, 5-7 minutes. Keep warm., In a large skillet over medium heat, melt butter; add bread crumbs, 1 green onion, garlic, salt and pepper. Cook and stir until bread crumbs are golden brown, about 2 minutes. Set aside., To serve, toss wings in butterscotch sauce. Sprinkle with crumb topping, remaining green onion and sliced peppers, if desired. Serve hot.

FANTASTIC HOT 'N' SPICY WINGS
This is the BEST recipe for hot wings and I have tried many others over the years ---I make these quite often for my parties and everyone loves them --- you may double all ingredients if desired, if you are doubling the ingredients, I suggest to just start with 2 tablespoons hot sauce such as Louisiana hot sauce then add more to reach the desired heat --- I have even prepared these on the grill instead of the broiler and then finished cooking them in the oven with the sauce, another idea is you may cook the wings hours in advance or even a day ahead cool slightly and just leave them in the fridge overnight, then the following day just coat them in the hot sauce and then bake them in the oven, you may even prepare the hot sauce a day ahead in fact it tastes even better if prepared in advance just refrigerate overnight, preparing the wings and the sauce in advance is a great time saver if you are making them for a crowd,

- Set oven to broil.
- Prepare the wings on a shallow cookie sheet that is lined with foil, and spray with a non-stick cooking spray, or prepare a broiler pan.
- Arrange the wings evenly in a single layer.
- Place under the broiler until lightly browned (watch closely to not burn the wings) set wings aside.
- In a saucepan combine all sauce ingredients, and bring to a boil; reduce heat and simmer for 15-20 minutes (adjust the hot pepper sauce to suit taste).
- Up to this point, all above can all be prepared a day in advance and refrigerated.
- Set oven to 375 degrees F.
- Using long tongs, dip each wing in the hot sauce, and place evenly on a greased baking sheet.
- Bake for 35-40 minutes (basting with remaining sauce during cooking).
- To crisp up the wings, place under broiler for a couple of minutes.
SWEET AND SPICY STICKY WINGS RECIPE BY TASTY

- Dry brine the wings: Set a wire rack inside a rimmed baking sheet.
- In a small bowl, combine the salt, sugar, and gochugaru.
- Add the wings to a large bowl and sprinkle with the dry brine, tossing to coat evenly. Arrange the wings right side up on the wire rack and refrigerate, uncovered, for at least 4 hours, or overnight.
- Confit the wings: Preheat the oven to 300°F (150°C).
- Transfer the brined wings to an 8 x 11-inch baking dish. Scatter the ginger, garlic, and scallions around the wings. Pour the olive oil into the baking dish, adding more oil if needed to ensure the wings are fully submerged.
- Cover the baking dish with aluminum foil and place on a rimmed baking sheet. Bake for 2½-3 hours, until the meat starts to pull away from the bones, but is still intact and tender.
- Line a baking sheet with foil. Remove the wings from the oven and let cool slightly. Lift out of the oil and drain well, then set on the prepared baking sheet. Transfer to the refrigerator and chill for at least 1 hour. If desired, reserve the leftover oil to confit more wings. The oil will keep in an airtight container in the freezer for up to 2 month.
- Meanwhile, make the sauce: In a medium pan over medium heat, combine the rice vinegar, soy sauce, honey, garlic, ginger, and gochujang. Cook, stirring often, until the sauce is bubbling and thickened, 3-4 minutes. Remove the pan from the heat and set aside.
- Fry the wings: Heat the canola oil in a large Dutch oven over high heat until it reaches 350°F (180°C).
- Make the batter: Add 1 cup of cornstarch to a large bowl and set aside. Add the remaining cup of cornstarch to a separate large bowl, along with the flour, salt, and water and whisk until smooth with no lumps.
- Coat a chicken wing in the cornstarch, shaking off excess, then gently dredge the wing in the batter, letting any excess drip off.
- Working in 2 batches, add the wings to the hot oil and fry for 4-5 minutes, until golden brown and crispy. Transfer to a paper towel-lined baking sheet to drain.
- Transfer the wings to a large bowl and pour the sauce over. Toss to coat well.
- Transfer the wings to a serving platter and pour more sauce over, then garnish with toasted sesame seeds, cilantro, and scallions.

SPICY BUFFALO WINGS
This hot wings recipe can easily be made even hotter by adding an additional teaspoon each of curry powder and cayenne or chili pepper.

- Preheat an outdoor grill for high heat.
- Lightly oil the grill grate. Grill the chicken 8 to 12 minutes on each side, or until juices run clear. (You can deep fry or bake the chicken instead if you want to, but it is best when grilled.) Remove chicken to a large roasting pan.
