SOUR CHERRY SALSA

Yield Makes about 2 cups

Number Of Ingredients 7

2 1/4 cups fresh or frozen pitted sour cherries (3/4 lb)
1 tablespoon sugar
3 tablespoons finely chopped red onion (1/2 small)
1 large fresh jalapeño chile, finely chopped, including seeds (1 1/2 tablespoons)
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
1/2 teaspoon salt

Steps:

  • If using fresh cherries, coarsely chop, then stir together with sugar in a small bowl until sugar is dissolved, about 5 minutes. If using frozen cherries, thaw in a small bowl, reserving any juices in bowl, then coarsely chop and stir together with sugar in same bowl. Stir in onion, jalapeño, lime juice, cilantro, and salt and let stand at room temperature 30 minutes for flavors to develop.

3/4 lb sour cherry, chopped fresh (or frozen either way about 2.25 cups)
1 tablespoon sugar
3 tablespoons red onions, finely chopped
1 jalapeno chile, finely chopped fresh (including seeds)
2 tablespoons lime juice
1/4 cup cilantro, fresh chopped
1/2 teaspoon salt

Steps:

  • If using frozen, thaw and reserve juice for some other use.
  • Mix cherries and sugar until dissolved.
  • Stir in onion, jalapeno, lime, cilantro and salt.
  • Let stand at room temp for 30 minutes to allow flavors to develop.

1 quart (4 cups) fresh sour cherries, pitted and halved, with juice (or substitute 1 quart frozen pitted sour cherries, whole and unthawed)
2 nectarines, unpeeled, cut into 1/2-inch cubes
1/4 cup sugar
1/4 cup freshly squeezed lime juice
1/2 medium red onion, finely diced (about 1/2 cup)
2 fresh jalapeño peppers, seeded and minced
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt

Steps:

  • Combine all ingredients in nonreactive bowl and stir well. Cover and refrigerate for at least an hour to allow flavors to meld. Serve with grilled chicken, pork, and other meats or with corn chips. Keeps for several days refrigerated.

1 cup cherries, dark,sweet
2 tablespoons basil, chopped,fresh
1 tablespoon green pepper, finely chopped
1 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1/4 teaspoon lemon, rind of, grated
1/8 teaspoon salt
1/8 teaspoon hot sauce (tabasco)

Steps:

  • Pit and chop the fresh or frozen dark sweet cherries and combine with all other ingredients.
  • Refrigerate at least one hour.
  • Serve as a condiment with chicken, turkey or pork.

6 cups chopped pitted sour cherries (Tart)
1 1/2 cups finely chopped red onions
2 1/2 cups packed light brown sugar
1 tablespoon dry mustard
1 teaspoon pickling salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground cloves
1 cup cider vinegar

Steps:

  • Prepare jars, lids and bands.
  • In a large pot, combine cherries, onion, brown sugar, mustard, salt, pepper, cloves and vinegar. Bring to a boil over medium heat, stirring often.
  • Reduce heat and boil gently, stirring occasionally, for about 40 minutes or until onions are translucent and mixture is slightly thickened.
  • Ladle into prepared jars leaving a 1/2" headspace. Check for air bubbles. Adjust headspace if needed. Process jars in a boiling water bath for 10 minutes. Adjust time according to your altitude.
  • NOTE: If using frozen sweetened sour cherries, measure when frozen, let thaw and drain off half the juice. Reduce brown sugar by 2 tablespoons.
