ASIAN SUGAR SNAP PEAS
I found this recipe on the Safeway website. It was listed as an appetizer recipe, but I think it could easily be served as a side dish, too.

Steps:
- Toss hot, cooked sugar snap peas with soy sauce and sesame oil. (If using steam-in-bag peas, be sure to drain off any water that may be in the cooking bag, so it doesn't dilute your sauce mixture).
- Add Pepper Relish (or jelly / chili garlic paste substitution) to taste. We find that 2 teaspoons is a good starting amount but we often add more - you may want more or less depending on how spicy your batch of Pepper Relish turned out, and on how spicy you like your food.
- Once you're done adding Pepper Relish (tasting and possibly adding a bit more), and adjusting the other flavors, add a pinch of salt, only if needed.
- Garnish with black sesame seeds, if desired. They don't add much flavor, but they look really pretty.
- When serving, be sure to scoop all the way to the bottom of the serving bowl to get some of the flavorful sauce along with each serving of peas.

SNAP PEA CHILI
Tried making a soup, turned into a chili. Gotta love delicious mistakes! I recommend serving it in an Italian bread bowl (search this site) with a dollop of sour cream and some mild Cheddar cheese.

SWEET CHILI-GLAZED SALMON, SUGAR SNAPS AND RICE
Here it is: a recipe that requires absolutely no chopping and makes an entire, really tasty, well-balanced meal in just four incredibly quick steps. We're not overselling this, either. All you do is start the rice on the sheet pan, add the salmon brushed with a glaze you whisk together, and later add the sugar snaps.

Steps:
- Preheat the oven to 425 degrees F. Coat a sheet pan with cooking spray.
- Combine the rice, 2 1/2 cups water and 1/4 teaspoon of the salt on the sheet pan. Bake for 20 minutes.
- Meanwhile, whisk the sugar, lime juice, fish sauce, chili-garlic sauce and cornstarch in a small bowl to make the glaze. Combine the sugar snaps with the oil and 1/4 teaspoon of the salt in a separate bowl.
- Season the salmon with the remaining 1/4 teaspoon salt. After the rice has cooked for 20 minutes, place the salmon, skin side down, on the sheet pan (directly on top of the rice) and brush it with about one-third of the chili glaze. Roast for 5 minutes, again brush the salmon with about one-third of the glaze and add the sugar snaps to the pan. Roast another 5 minutes and brush with the remaining glaze. Roast until the salmon is just translucent in the center and the sugar snaps are crisp-tender, about 5 minutes more.

- Toss the snap peas, hot sauce, chili flakes and salt in a bowl. Be sure to get every sugar snap pea nicely coated with the sauce and ingredients.
- Spread the sugar snap peas over dehydrator sheets and dry them at 135°F for 6-8 hours, or until they are completely dried through. It helps to stir them up a bit after a few hours to dry more quickly. They should finish very dry and brittle.
- Store them in an airtight container in a cool, dark place, or if you’re like me, enjoy them right away.
