This crisp and tangy salad from our Test Kitchen hits the spot on warm afternoons and evenings. Sprinkling the cucumbers with salt and letting them sit draws out excess water so they stay nice and crisp.

- Place cucumber slices in a colander over a plate; sprinkle with salt and toss. Let stand for 15 minutes, stirring once. Rinse and drain well., In a large bowl, combine the vinegar, dill, sugar and pepper. Add cucumbers and toss to coat. Cover and refrigerate for at least 15 minutes before serving.

- Add vinaigrette to cucumber mixture; toss well. Garnish with dill. Discard garlic clove before serving.
CUCUMBER-DILL SALAD WITH FETA CHEESE
I was surprised to see that, although quite a number of cucumber-dill recipes are available, nobody seems to have hit on the combination with feta cheese. Light and summery. Good for picknicks as well -- in that case bring the cheese separately and add just before serving. Good-quality olive oil is essential.

- Half the cucumbers length-wise. Remove the seeds. Slice into thin ribbons. Put in strainer with some salt and allow to drain for about 10 mins (the salt will draw out some of the moisture from the cucumber). Slice the white part of the scallions thinly. Cut the green part into very thin slivers.
- Prepare a dressing from the oil, vinegar, salt and pepper to taste. Mix the cucumber, scallions, dill, and dressing. Crumble the feta cheese over the salad and add pepper to taste.
CUCUMBER DILL SALAD WITH RADISH AND FETA
It's best to eat this within 1 hour of making it. It is very refreshing. If you want to take to a picnic, keep the items separate and toss together just before serving.

- Cut ends off cucumbers, cut in half lengthwise, then cut into half-moon slices about 1/4 inch thick.
- Wash radishes and trim ends, then cut in half lengthwise and cut into half-moon slices just slightly thinner than cucumbers. Put cucumbers and radishes into salad bowl.
- Put 1/2 cup crumbled feta into a bowl or measuring cup. Add chopped fresh thyme (or crushed dried thyme) and red wine vinegar and mash slightly with a fork. (I like to leave it a little chunky.) Stir in olive oil and buttermilk (or use regular milk or water if you prefer.)
- Stir the dressing into the salad. Season to taste with salt and fresh ground black pepper (I didn’t use much salt.)
