PB&J OATMEAL BREAKFAST COOKIES
A mash-up of granola bars and peanut butter cookies -- what's not to love? These feel-good breakfast treats are packed with great ingredients like oats, peanuts, pepitas and dried strawberries.

- Position the racks in the upper and lower third of the oven. Preheat the oven to 375 degrees F. Line two large baking sheets with parchment paper.
- Combine the oats, peanuts, strawberries, pepitas, flour, baking soda and salt in a medium bowl and mix well. In a stand mixer fitted with the paddle attachment, beat the peanut butter with the sugar until smooth. Beat in the eggs one at a time. Beat in the vanilla.
- With the machine on low speed, gradually add the dry ingredients and mix until incorporated. Turn the machine off and add the strawberry preserves all at once. Mix on low speed just until the preserves are swirled into the dough, about 5 seconds; do not over mix.
- Scoop the dough onto the prepared baking sheets with a 3-tablespoon cookie scoop, making 20 cookies and leaving 2 inches between each. Press down on the cookies with a fork to flatten them slightly.
- Bake until the cookies are slightly risen and very lightly browned on the edges, 13 to 15 minutes; rotate the baking sheets halfway through baking. Let cool before serving.

- Preheat oven to 350°F.
- Spray a 13x9-inch pan with nonstick cooking spray.
- Place oats, flour, walnuts, cinnamon, baking powder and salt in a bowl and whisk to blend.
- Melt butter in a large microwave-safe bowl then whisk in peanut butter and brown sugar until well-blended.
- Whisk in egg and vanilla then stir in dry ingredients using a large spatula.
- Spread half the batter evenly over the bottom of the pan then spread the fruit spread evenly over the oat base.
- Top with an even layer of remaining oat batter.
- Bake for 25 minutes or until just beginning to turn golden.
- A toothpick inserted will come out with a few moist crumbs clinging, and the sides will begin to separate from the pan.
- Cool completely on a rack before cutting into 24 pieces.
- Store at room temperature for up to four days.

- To a large mixing bowl, add peanut butter, maple syrup, protein powder, rolled oats, flaxseed meal, chia seeds, and dried fruit of choice. Mix until well combined. If too dry/crumbly, add more peanut butter or maple syrup. If too sticky or wet, add a little bit more oats or flaxseed meal.
- Chill in the refrigerator for 5 minutes. Then scoop out 1 1/2 Tbsp amounts (I like using this scoop) and roll into balls. The "dough" should yield about 13-14 balls (amount as original recipe is written // adjust if altering batch size).

- In a large bowl combine peanut butter and maple syrup until smooth. Note; if peanut butter is really thick, you may find that warming up the mixture helps. Or add a tablespoon of oil.
- Add rolled oats, dried berries, chia seeds and hemp hearts. Use sturdy spatula or spoon to combine. You may need to work the mixture together with your hands to fully combine at the end.
- Place bowl in freezer for about 10 minutes (or fridge for 20 minutes). The cold mixture will make forming the energy balls a lot easier.
- Using a 1/2 round tablespoon (I like to use my small cookie scoop), scoop mixture into rounded balls and roll between palms to shape. You should get roughly 20 rounded tablespoon size balls.

- CRUMBLE: Position a rack in the center of the oven and preheat the oven to 350ºF. Line a 13x9 baking sheet with parchment paper; set aside for now. Combine the peanut butter and the salted butter in a microwave-safe bowl and zap in the microwave in 30-second increments until the mixture melts and mixes. Mix the oats, flour, sugar, coconut (optional,) baking powder, and ground cinnamon together in a large bowl. Pour in the melted butter mixture and stir to combine until you form a sand-like crumb. Press two-thirds of the prepared crumb mixture into the prepared pan. You want to make sure the crust is tightly packed in.
- BAKE: Top with the remaining crumb mixture on top. Bake for 40-45 minutes. Remove from the oven and place on a wire rack for one hour. I usually stick mine in the refrigerator for a few hours after that to cool them down completely before cutting into pieces. If you cut them right away, they’ll still be delicious, just not as neat!
