VENEZUELAN EMPANADAS
Steps:
- Make the filling: Place the beef, bay leaves, 1 tablespoon salt and water to cover in a saucepan and bring to a boil over medium heat. Reduce to a simmer, cover and cook until the meat is almost falling apart, about 1 hour 30 minutes. Transfer the meat to a bowl and shred with a fork; cool. Reserve the broth.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion, bell pepper, garlic and shallot; cook until the onion is translucent, about 3 minutes. Stir in the scallion, paprika, sazon completa, oregano, cumin and 1/4 teaspoon pepper. Add the beef and 1 cup of the reserved broth and cook over medium heat until thick, about 10 minutes. Season with salt.
- Make the dough: Mix 3 1/2 cups hot water, the sugar, vegetable oil, butter and salt in a medium bowl until the butter melts. Stir in the cornmeal and flour until a soft dough forms, then knead on a clean surface until the dough comes together. Shape into 12 balls, using about 1/2 cup dough for each.
- One at a time, sprinkle each dough ball with water, place between two pieces of lightly oiled heavy-duty plastic wrap (a cut resealable bag works well) and roll into a 7-inch circle. Remove the top sheet of plastic and place 2 to 3 tablespoons filling in the center of the dough. Use the bottom piece of
- plastic to fold the dough in half over the filling and press to seal. Trim into a half-moon shape with a knife or press down with the round edge of a bowl. Remove the plastic and place the empanada on a parchment-lined baking sheet.
- Preheat the oven to 300 degrees F. Heat 1 inch of vegetable oil in a large skillet until a deep-fry thermometer registers 365 degrees F. Fry the empanadas in batches until golden, about 4 minutes per side. Transfer to a paper-towel-lined baking sheet; keep warm in the oven.
- Make the sauce: Combine the cilantro, olive oil, avocado, bell pepper, scallion, vinegar and garlic in a blender. Add 1 teaspoon salt and 2 teaspoons pepper and puree until smooth. Thin out the sauce with up to 1/4 cup water and serve with the empanadas.

- For the dough: Crumble the yeast and mix with the milk and sugar. Combine the flour and salt in a bowl, make a well in the center, add the egg yolks, butter and yeast mixture and knead with the dough hook attachment until smooth. Shape into a ball, cover and chill overnight.
- The following day, preheat the oven to 200°C (approximately 400°F).
- For the filling: Rinse the meat, pat dry and cut into very thin strips. Drain the olives and cut into thin rings. Blanch the tomatoes, peel, quarter, core and chop finely.
- Peel the shallot and garlic, chop finely and sweat in a hot pan with 2 tablespoons oil until translucent. Add the meat and sauté until golden brown. Add the olives, chile and tomatoes. Pour in the broth, season with salt and pepper and simmer for about 5 minutes over medium heat.
- Season with salt and pepper and remove from the heat. Mix in some breadcrumbs if too wet.
- Meanwhile, roll out the cold dough on a floured work surface until 3 mm (approximately 1/8 inch) thick. Cut out discs (about 12-15 cm in diameter) (approximately 5-6 inches) with a cookie cutter. Divide the filling between the center of each disc, brush the edges with egg white, fold into crescents and seal the edges. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes. Serve with salad, if desired.

Steps:
- Sift together the flour, salt, and turmeric.
- Work in the butter and shortening until it has a cornmeal-like consistency.
- Add the egg and the beer, and work until incorporated.
- Cover with a wet towel, and rest for 15 minutes.
- Meanwhile, saute the onion, tomatoes, and hearts of palm in butter for 2 to 3 minutes, until soft.
- Deglaze with the sherry.
- Add the tomato paste and cook for 1 minute.
- Add shrimp and cook for 2 minutes.
- Season with salt and pepper. Let cool to room temperature.
- Preheat oil to 350°F.
- Roll dough into 1-inch balls and flatten into rounds approximately 3-inches in diameter.
- Spoon 1 tablespoon of stuffing onto each round, fold the dough in half, brush edges with egg yolk, and pinch to seal.
- Fry the empanadas for 4 minutes.

SHRIMP EMPANADAS

- For the salsa criolla: In a pan on medium-high heat, add the butter, the cubanelle pepper, tomatoes and onion. Cook the veggies for about 5 minutes. Add the Sazón, adobo, chicken base, oregano, coriander leaves, cooking wine, garlic and 4 cups water; bring to a boil. In a separate bowl, combine the flour with 1 cup of water and stir. Add the flour mixture to the pan little by little until the desired thickness of sauce is reached.
- For the empanadas: Chop the shrimp into medium pieces. In a pan over medium-high heat, add the butter, shrimp and 4 ounces salsa criolla. Stir. Cook until the shrimp is pink and fully cooked, about 7 minutes. Remove from the heat and allow the mixture to cool.
- To the middle of a round of dough, add about a tablespoon of the shrimp mixture, 1 to 2 teaspoons grated cheese, and add several pieces of colored julienne bell peppers. Close and fold the round dough in half like a crescent. Press the edges together to seal and remove any air pockets. Using your thumb and index finger, pinch and twist along the edge of the dough to create a braided sealed edge. Repeat with the remaining ingredients. Place the empanadas on a plate lined with wax paper and freeze until the next day. (This will help unify the temperature of the empanada and help seal it before frying.)
- In a fryer or deep pan, add enough vegetable oil to for the empanadas to float. Heat the oil to 350 degrees F.
- Add the empanadas to the hot oil and fry until golden brown, about 3 minutes on each side. Remove the empanadas to a rack or paper towel to allow excess oil to drain. Empanadas can be served on a cutting board or plate. Cut in half and enjoy!

Steps:
- DOUGH Cut butter into salt and flour.
- Stir in rest of the ingredients and knead to combine or just process everything until it forms a ball.
- Let rest covered 1 hour Make balls the size of a walnut, from 2/3 of the dough and line small muffin tins with the dough.
- Place 2 tsp. of the cold filling into the lined tins.
- Make small balls with the rest of the dough.
- Flatten them to make lids for the mini pies.
- Brush tops with egg yolk Bake in preheated 350 F oven for 30 to 35 minutes or until golden brown.
- SHRIMP FILLING Clean and devein shrimp, saving heads and shells.
- Make a broth with the shells and heads and 2 cups water.
- Cook 1 hour, uncovered over low heat. Strain broth and cook it down to 1/2 cup.
- Cook onions and garlic in olive oil until they start changing color.
- Add bell pepper and cook 2 minutes, Add tomatoes, broth and seasonings and simmer almost to a paste. Add shrimp and cook just until they become opaque. Stir in cornstarch diluted in 2 Tbsp water.
- Stir until thick.
- Add parsley.
- Let cool before using
