This comforting soup is an updated version of the recipe called for in the Cabbage Soup Diet, a fad weight-loss plan from the 90's. Even if you aren't looking to eat it for a week straight like the plan dictates, a batch of this low-fat, low-calorie soup made with 8 different veggies is always good to have on hand.

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 large yellow or white onion, chopped
1 bunch celery, grated (see Cook's Note)
3 carrots, grated
2 green peppers, stemmed, seeded and grated
2 cloves garlic, grated
Half a head green cabbage, shredded
2 tablespoons low-sodium soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
4 cups low-sodium chicken broth

Steps:

  • Heat the oil in a large, heavy-bottomed pot over medium-high heat, until shimmering. Add the mushrooms and cook, stirring, until soft and brown, about 5 minutes. Add the onions and cook stirring, until soft and golden, about 8 minutes. Add the celery, carrots, peppers and garlic and cook, stirring, until the vegetables begin to brown and become fragrant, about 5 minutes. Stir in the soy sauce, garlic and onion powder, 2 teaspoons salt and 1 teaspoon pepper.
  • Add the cabbage to the pot and stir until it begins to wilt, about 2 minutes. Pour in the crushed tomatoes, chicken broth and 1 cup water. Stir to combine. Bring to a boil then reduce to a simmer and cook until the cabbage is tender, 30 to 45 minutes. Season with salt and pepper.

2 pounds ground meat (or your favorite blend of veal, pork and beef)
1 cup uncooked rice
1 tablespoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground cumin
1/2 medium onion, minced
2 tablespoons minced garlic (about 3 cloves)
2 tablespoons olive oil
1 cup coarsely minced onion
1 cup thinly sliced carrots
1 cup tomato paste
1/2 cup brown sugar
1/2 cup ketchup
One 28-ounce can whole peeled tomatoes with juice
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 medium cabbage
1 bay leaf
1/2 cup fresh lemon juice
1/2 cup golden raisins
Sour cream and fresh dill, for garnish

Steps:

  • For the meatballs: In a large bowl, combine the ground meat, rice, salt, pepper, cumin and onions. Form into 1-inch balls and set aside while you make the soup.
  • For the soup: In a 6-quart pot, sweat the garlic in the olive oil until white in color. Add the onions and sweat until translucent. Then add 1 1/2 cups water, the carrots, tomato paste, brown sugar, ketchup and whole tomatoes with juice. Season with salt and pepper and simmer at a lively bubble for 10 minutes. Crush the whole tomatoes with a potato masher or fork. Continue to simmer until the carrots are tender, about 10 more minutes.
  • Working in batches, transfer the soup to a blender and blend until smooth but not pureed. Return the soup to the pot. Remove the cabbage ribs and cut the leaves crosswise into 1/4-inch ribbons. Add the cabbage to the soup and stir to incorporate. Add the bay leaf and simmer over medium-high heat for 10 minutes more (the cabbage should be reduced in size). Add water to thin the soup to the desired consistency. Add the meatballs and simmer for 25 minutes. Add the lemon juice and raisins 10 minutes before serving.
  • Ladle the soup into bowls and garnish with sour cream and dill.

3 tablespoons good olive oil
1 1/2 cups chopped yellow onions (2 onions)
2 (28-ounce) cans crushed tomatoes and their juice
1/4 cup red wine vinegar
1/2 cup light brown sugar, lightly packed
1/2 cup raisins
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 large head Savoy or green cabbage, including outer leaves
2 1/2 pounds ground chuck
3 extra-large eggs, lightly beaten
1/2 cup finely chopped yellow onions
1/2 cup plain dried breadcrumbs
1/2 cup uncooked white rice
1 teaspoon minced fresh thyme leaves
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the sauce, heat the olive oil in a large saucepan, add the onions, and cook over medium-low heat for 8 minutes, until the onions are translucent. Add the tomatoes, vinegar, brown sugar, raisins, salt, and pepper. Bring to a boil, then lower the heat and simmer uncovered for 30 minutes, stirring occasionally. Set aside.
  • Meanwhile, bring a large pot of water to a boil.
  • Remove the entire core of the cabbage with a paring knife. Immerse the head of cabbage in the boiling water for a few minutes, peeling off each leaf with tongs as soon as it s flexible. Set the leaves aside. Depending on the size of each leaf, you will need at least 14 leaves.
  • For the filling, in a large bowl, combine the ground chuck, eggs, onion, breadcrumbs, rice, thyme, salt, and pepper. Add 1 cup of the sauce to the meat mixture and mix lightly with a fork.
  • Preheat the oven to 350 degrees F.
  • To assemble, place 1 cup of the sauce in the bottom of a large Dutch oven. Remove the hard triangular rib from the base of each cabbage leaf with a small paring knife. Place 1/3 to 1/2 cup of filling in an oval shape near the rib edge of each leaf and roll up toward the outer edge, tucking the sides in as you roll. Place half the cabbage rolls, seam sides down, over the sauce. Add more sauce and more cabbage rolls alternately until you ve placed all the cabbage rolls in the pot. Pour the remaining sauce over the cabbage rolls. Cover the dish tightly with the lid and bake for 1 hour or until the meat is cooked and the rice is tender. Serve hot.

1 cup raw white rice
1 quart plus 2 cups chicken stock, divided
1 1/2 pounds ground meatloaf mix (a combination of beef, pork and veal)
1/2 teaspoon allspice, eyeball it in your palm
1 1/2 teaspoons coriander, half a palm full
2 teaspoons smoked paprika, eyeball it in your palm
Salt
Pepper
1 bay leaf
1 onion, chopped
2 cloves garlic, minced
1 carrot, thinly sliced with a vegetable peeler into strips then finely chopped
1/2-3/4 head Savoy cabbage, thinly sliced
1 (28-ounce) can diced tomatoes
1 cup tomato sauce
3 tablespoons dill, finely chopped
Handful of flat-leaf parsley, chopped

Steps:

  • Heat a sauce pot over medium-high heat with 2 turns of the pan of extra-virgin olive oil, about 2 tablespoons. Add the rice and toss to coat in oil. Add 2 cups of chicken stock, bring up to a simmer, cover and cook for 16 to 18 minutes or until the rice is tender.
  • Heat a deep pot over medium high heat. Add the remaining extra-virgin olive oil, once hot add meat and begin to brown, 2 to 3 minutes. Season the meat with allspice, coriander, smoked paprika, salt and pepper. Add bay leaf, onions, garlic and carrots. Cook veggies 2 to 3 minutes to begin to soften them, then add cabbage and wilt it down a bit. Add tomatoes, tomato sauce, and remaining stock and cover the pot. Raise the heat to high and bring the soup to a simmer. Simmer for about 10 minutes. Once the rice is cooked, add to the soup and continue to simmer for 2 to 3 minutes. Stir in parsley and dill, adjust salt and pepper to your taste, and serve.

1 1/2 lbs 90% lean ground beef or 1 1/2 lbs very lean stew meat
1 onion, finely chopped
28 ounces tomato juice or 28 ounces crushed tomatoes
2 beef bouillon cubes
2/3 cup barley (using barley instead of rice helps cut down on carbs) or 2/3 cup rice, rinsed & uncooked (using barley instead of rice helps cut down on carbs)
2 teaspoons Splenda sugar substitute
2 -3 teaspoons sweet paprika
6 -12 garlic cloves, minced (1-2 tablespoons)
1 teaspoon pepper
1/4 teaspoon Tabasco sauce (2 shakes)

3 (14 1/2 ounce) cans beef broth

Steps:

  • In a pot, warm the oil over medium heat, and saute beef and onions until onions are soft and beef is browned (8 minutes).
  • Drain off the fat, and add the tomatoes, bouillon, barley, splenda, paprika, garlic, pepper, and tabasco; mix well.
  • Put the cabbage in the crock pot, and top with meat mixture (Do NOT stir); top with beef broth.
  • Cover and cook on LOW for 9 hours.
  • Stir soup well; continue to cook covered on LOW for another hour.

3 smoked sausage links, sliced
1 medium onion, diced
½ cup diced red bell pepper

6 cups beef broth

1 head cabbage, cored and cut into wedges
3 carrots, peeled and diced
1 (15 ounce) can Italian-style tomato sauce

⅓ cup apple cider vinegar

1 teaspoon red pepper flakes, or to taste

Steps:

  • Heat a Dutch oven or stockpot over medium-high heat. Cook and stir beef and sausage in the hot pot until browned, 5 to 7 minutes. Drain excess grease, reserving 2 tablespoons.
  • Add onion and bell peppers to the same pot with meat drippings. Saute over medium-high heat for 3 to 4 minutes. Add garlic and cook until all vegetables are slightly softened and fragrant, being careful not to burn, about 1 minute more. Pour in beef broth, diced tomatoes, cabbage, and carrots.

  • Place cabbage head in freezer and freeze overnight. Remove from freezer, thaw and peel away leaves.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the beef, egg, onion, rice, salt and pepper. Mix together well. Take a small handful and form into a small roll or ball. Place into the center of a cabbage leaf. Fold the sides of the leaf over and roll the ball up into the leaf. Place seam side down in baking dish. Continue until all of the filling is used up.

⅓ cup uncooked white rice
8 cabbage leaves
1 pound lean ground beef
¼ cup chopped onion

Steps:

  • In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for 2 to 4 minutes or until softened; drain.
  • In a medium mixing bowl, combine the ground beef, 1 cup cooked rice, onion, egg, salt and pepper, along with 2 tablespoons of tomato soup. Mix thoroughly.

1 medium head cabbage, chopped
1 cup chopped celery
1 cup chopped onion
8 cups water
1 teaspoon beef bouillon granules

I was watching Rachael Ray the other day and wanted to save this recipe. It sounds delish! Update: I have since made this stoup since posting and I really love it. The flavor of the coriander and paprika are delicious. One thing I did that Rachael suggested on the show is to actually add the rice to each bowl when you serve it. That way it won't soak up all the broth, particularly when you have leftovers. That is, if you have leftovers!

4 tablespoons extra virgin olive oil, divided
1 cup raw white rice
1 quart chicken stock (plus 2 cups)
1 1/2 lbs ground meatloaf mixture (a combination of beef, pork and veal)
1/2 teaspoon allspice
1 1/2 teaspoons coriander
2 teaspoons smoked paprika (or sweet if you can't find the smoked)
salt, to taste
pepper, to taste
1 bay leaf
1 onion, chopped
2 garlic cloves, minced
1 carrot, thinly sliced with a vegetable peeler into strips, then finely chopped
1/2-3/4 head savoy cabbage, thinly sliced
1 (28 ounce) can tomatoes, diced
1 cup tomato sauce
1/4 cup flat leaf parsley, chopped
3 tablespoons dill, finely chopped

Steps:

  • Heat a sauce pot over medium-heat 2 T olive oil.
  • Add the rice and toss to coat in oil.
  • Add 2 cups chicken stock, bring up to simmer.
  • Cover and cook for 16-18 minutes or until the rice is tender.
  • Heat a deep pot over medium high heat.
  • Add the remaining olive oil, once hot add meat and begin to brown, 2-3 minutes.
  • Season the meat with allspice, coriander, smoked paprika, salt and pepper.
  • Add bay leaf, onions, garlic and carrots.
  • Cook veggies 2-3 minutes to begin to soften them, then add cabbage and wilt it down a bit.
  • Add tomatoes, tomato sauce and remaining stock and cover the pot.
  • Raise the heat to high and bring the soup to a simmer.
  • Simmer for about 10 minutes.
  • Once the rice is cooked, add to the soup and continue to simmer for 2 to 3 minutes.
  • Stir in parsley and dill, adjust salt and pepper to your taste and serve.
