- Heat a small skillet over medium high heat. Add a drizzle of EVOO and the bacon. Crisp the bacon then transfer to a paper towel-lined plate. Add dried chickpeas and reduce heat to medium. Cook until toasted and lightly browned, 10 to 12 minutes. Season chickpeas with salt and crushed pepper flakes and cool.
- Place greens in a salad bowl. Whisk together the mustard, vinegar and about 1/3 cup extra-virgin olive oil. Add bacon and chickpeas to the salad and toss to coat evenly.

- Whisk together the mustard and vinegar in a large bowl. Drizzle in the olive oil, whisking until the dressing is emulsified. Season with 1/4 teaspoon salt.
- Using a knife or mandoline, thinly slice the apple into half-moons. Add the apples to the dressing and toss to coat. Add the arugula, smoked almonds and 1/4 teaspoon salt; toss to coat. Dollop the ricotta over the top and serve immediately.
HOME SMOKED SALMON WITH GREEN SALAD AND APPLE VINAIGRETTE

- To make the salmon: In a medium bowl or container, combine the hot water, brown sugar, white sugar, salt and lemon zest. Add the salmon, skin side up, to the brine, pressing it down to submerge. Cover with plastic wrap, and refrigerate overnight.
- Remove the salmon from the brine, and discard the liquid. Rinse the fillet under cold running water briefly to remove the excess salt. Place the salmon, skin side down, onto a rack. Let it stand until the top is dry to the touch, for about 1 hour. Do not pat dry.
- To prepare your wok smoker: Lay 2 layers of foil in the bottom of a wok if you want to protect the pan from getting charred. Add 2 handfuls of wood chips to the wok and place it over high heat. Add the 1/2 cup water.
- Position the bamboo steamer over top of the chips, and set the salmon fillets inside.
- Cover the wok with a lid or aluminum foil, and let the salmon smoke for about 20 to 30 minutes, or until its flesh is firm to the touch, and its edges are brown, crustier and caramelized.
- Remove the salmon from the steamer and transfer to a plate. Drizzle the smoked salmon with olive oil for garnish, and serve it alongside the salad.
- To make the vinaigrette: Pour the apple juice into a small pot, then boil it on high to reduce the liquid by half.
- Into a bowl, add the mustard and grind over some black pepper.
- Add a nice pinch of coarse salt, then add a dash of the apple cider vinegar. Whisk in your reduced apple juice along with the canola oil. Taste for seasonings and adjust if necessary.
- To make the salad: Toss the frisee, radishes, beets, green beans, arugula, and celery leaves into a bowl with just enough vinaigrette to barely moisten the leaves.
- Partially crush your crunchy croutons by placing them into a bowl, then crunching them with the bottom of a second bowl. Then add them to the vegetables.
- Grate a little lemon zest over the salad with a grind of black pepper. Give everything a final toss and plate.
SMOKY BEAN SALAD WITH MOLASSES DRESSING

- Add enough cold water to cover by 2 inches.
- Let stand at least 4 hours.

- Combine vinegar and mustard seeds in medium bowl.

- Place in a heavy large saucepan.
- Add enough water to cover beans by 3 inches.
- Bring to boil.

- Whisk sun dried tomatoes, molasses,and chilis into vinegar mixture.
- Gradually whisk in oil.
- Combine beans, onion, and parsley in bowl.
- Add enough dressing to coat salad.
- Season to taste with salt and pepper.

SMOKY BEANS AND GREENS ON TOAST
Beans and greens are great on almost every carb: in tortillas as tacos, over rice, on flatbread. They're also good without any carb at all, served in a bowl as a side. But whenever skillet-fried toast is an option, I take it. This is dinner food for me, but it also makes a good brunch with a fried egg on each plate.

- Heat a large, heavy (preferably cast-iron) skillet over medium. Brush the bread on both sides with the olive oil. Lay the bread in the skillet and cook, pressing occasionally with a spatula, until crisp and golden brown, about 90 seconds per side. (If your slices are large, you may have to do this in two batches.) Set the bread aside.
- Heat a Dutch oven or other heavy pot over medium-high heat. Add the bacon and cook, stirring frequently, until it has browned a little and rendered at least a tablespoon of fat, about 4 minutes. Add the onion and cook, stirring, until it has softened and turned golden, about 4 minutes. Add the garlic, paprika, thyme (if using), red pepper flakes, and, if you're using canned beans, 1 teaspoon kosher salt and cook, stirring, for a minute or two.
- Add the slightly wet kale in batches, using tongs to stir the leaves into the onion mixture; wait for one handful of kale to wilt and shrink before adding the next. When the last of the greens has been added, add the beans and broth. Raise the heat and let the beans and greens simmer for a minute or two, just to warm the beans and bring the flavors together. Taste and add more kosher salt if necessary.
- Serve the greens and beans over the toast in wide, shallow bowls, dusted with a little more smoked paprika.

SMOKY BEAN AND APPLE SALAD
*** Gluten-free and Vegan! *** I got this recipe from a local grocery store, after sampling the finished product. It was delicious, so I came home and made some for myself. I am happy to say that this is one of my new favourite recipes - and it's so easy, too. You can use canned Pinto beans if you want to cut out a few steps, or didn't plan ahead enough to soak beans overnight, and it still turns out great! I also caution spice wimps (like myself!) to start out with a little bit less chipotle pepper, and then add more to taste. Finally, a note to my fellow gluten-free friends: be sure to read the label on the can of chipotle peppers in adobo. The popular "Embasa" brand is NOT gluten-free. the "Empacadora San Marcos" brand *IS* gluten-free. As always, be sure to read the label. :)
