ENDIVE, APPLE AND WALNUT SALAD



Endive, Apple and Walnut Salad image

This classic French combination makes a great autumn and winter salad. Walnuts and apples are always a good mix, and their flavors contrast nicely with the bitter endive. Gruyère cheese has a nutty flavor and adds a bit of protein, as well.

1 pound (about 6) Belgian endives
1 tart apple
1 tablespoon freshly squeezed lemon juice
Scant 1/2 cup broken walnut pieces
1 1/2 ounces Gruyère cheese, cut in thin slivers about 1/3 heaped cup
2 tablespoons chopped fresh parsley, or a mix of chopped fresh parsley and chives
1 tablespoon chopped fresh tarragon
1 tablespoon sherry vinegar or champagne vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
Salt
freshly ground pepper to taste
3 tablespoons walnut oil
4 tablespoons extra virgin olive oil

Steps:

  • Remove any damaged outer leaves of the endives and rinse with cold water. Dry with paper towels, then separate the leaves, or slice crosswise, about 1/2 inch thick. Place in a wide salad bowl. Add the walnuts, gruyère, parsley and tarragon.
  • Quarter the apple and cut away the core, then slice very thin (you should have at least 16 slices). Place in a bowl of water acidulated with 1 tablespoon lemon juice.
  • Whisk together the vinegars, lemon juice, mustard, salt, and pepper. Whisk in the oils. Taste and adjust seasonings.
  • Drain the apple slices, dry on paper towels, then add to the salad bowl. Toss with the dressing and serve.

This salad came to The Times from Kathryn Anible, a personal chef in New York, whose solution to adding color to your winter table lies in this fresh, crunchy salad. "I just like it because the endive is not frequently used in salads, and it tends to be a little bitter," she said. "The apple sweetens it up a little bit and makes it more approachable. It has a nice crunchy, fresh texture."

1 tablespoon orange juice
1 teaspoon honey

1/4 cup pecans
2 heads of endive, chopped
1 cup arugula
1 apple, sliced thin
1/4 cup dried cherries or cranberries
1/4 cup goat cheese, crumbled (optional)

Steps:

  • To make dressing: In a small bowl, whisk together the oil, vinegar, juice and honey. Season with salt.
  • In a small sauté pan, toast the pecans over medium heat. Allow to cool.
  • Mix together the endive, arugula, apple and cherries (or cranberries) in a medium-size bowl. Toss with enough dressing to coat. Top with the pecans and goat cheese (optional).

3 red endive or chicory
3 white endive or chicory
100 g shelled walnuts
1 tablepsoon runny honey
½ a clove of garlic
1 quality anchovy
150 g fat-free natural yoghurt
extra virgin olive oil
½ a lemon
a few fresh sprigs of tarragon
fresh sprigs of chevril
fresh sprigs of flat-leaf parsley
1 green apple

Steps:

  • Snap the chicory or endive leaves apart, wash well, then spin dry.
  • Toast the walnuts in a pan on a medium heat until turning golden, then add the honey to the pan and give it a shake so they get evenly coated.
  • Remove from the heat and set aside to cool.
  • For the dressing, peel the garlic and chop as finely as you can along with the anchovy.
  • Put in a bowl with a good pinch of sea salt and black pepper, the yoghurt, a generous drizzle of oil and the lemon juice.
  • Taste to check the seasoning, then pick and finely chop the herbs and add them too.
  • Cut the apple into matchsticks, and toss through the dressing with the endive and cooled walnuts.

1/4 cup freshly squeezed orange juice
1/4 cup good olive oil
1 teaspoon white wine vinegar
Kosher salt and freshly ground black pepper
2 heads Belgian endive
1/2 cup walnut halves, toasted
1/4 pound French Roquefort cheese, 1/2-inch-diced
1 sweet red apple, unpeeled, cored and medium-diced
4 ounces baby arugula

Steps:

  • In a small bowl, whisk together the orange zest, orange juice, olive oil, vinegar, 1 teaspoon salt, and 1/3 teaspoon pepper. Set aside.
  • Cut the heads of endive in half lengthwise, remove the triangle of core at the base of each half so the leaves separate, and cut the leaves in half again lengthwise. Place in a large bowl. Drizzle the leaves with the vinaigrette and add the walnuts, Roquefort, and apple. Add the arugula and toss. Zest the orange into the salad with a strip zester. Peel the orange and remove the white pith around the orange with a small sharp knife. Cut the orange sections between the membranes and toss them on the salad. Discard the membranes. Sprinkle with salt and serve.

3-4 heads of endive (aka chicory, witlof, or witloof)
1 apple (I use Jonagold which are crisp with a sweet and sour taste)
1 tablespoon mayonnaise
2 tablespoons of natural yoghurt (I use low fat)
4 Eggs
1 tablespoon of lemon juice
a handful of pine nuts

Steps:

  • Hardboil your eggs then allow them to cool.
  • Chop the end off your endive, then remove the triangular hard bitter core.
  • Now chop the rest of the heads into small pieces and place in a large bowl.
  • Peel and chop your apple into thin julienne sticks then add to your endive in the large bowl.
  • In a separate bowl mix the mayonnaise, yoghurt, lemon juice and salt and pepper (taste to check that you have the right amount of lemon and seasoning to suit your taste).
  • Add the mayonnaise and yoghurt dressing to the endive and apple and mix well (if you are being posh you can now put the endive mixture in your pretty serving dish :) )
  • Peel and chop your eggs into quarters
  • Arrange your eggs and pine nuts on top of your endive salad.
  • Place in refrigerator and chill until you are ready to eat.

3 canned anchovy fillets, rinsed
1/2 teaspoon Dijon mustard
1 tablespoon plus 3/4 teaspoon lemon juice
Freshly ground pepper
2 tablespoons extra-virgin olive oil
3 stalks celery
1 Granny Smith apple
2 heads Belgian endive, leaves separated
Salt

Steps:

  • Chop anchovies and place in a bowl with mustard. Add 1 tablespoon of the lemon juice and pepper to taste, and mix well. Slowly whisk in the olive oil. The dressing can be made a day ahead of time.
  • Peel the celery to remove the strings. Cut each stalk into thirds and julienne. Set aside. Quarter and core the apple, but do not peel. Thinly slice each quarter and place in a serving bowl. Sprinkle remaining 3/4 teaspoon lemon juice over apples and toss to coat.
  • Julienne endive leaves. Add celery and endive to the apples and toss with dressing. Season to taste with salt and pepper. Serve immediately.

Let the dressing stand at room temperature for 30 minutes to let the flavors develop. In another bowl toss the apples, cored and cut into 1/2-inch pieces, with 2 tablespoons of the dressing. In a large bowl toss together the endive slices and the watercress with the remaining dressing and divide the watercress mixture among the 6 salad plates. Top the watercress with the apples and the almonds and garnish the plates with the reserved endive tips.

  • Season chicken on both sides with salt and pepper. Place in a small skillet and pour in cider. Cover and cook over medium heat until chicken is cooked through, about 20 minutes. Remove chicken to a shallow bowl. Increase heat to high and bring cider to a boil. Cook until thick, syrupy and reduced to about 1 Tbsp., about 6 minutes (watch carefully, as it can burn quickly). Pour over chicken. Allow to cool completely.
  • Combine vinegar, lemon juice, mustard, 1/2 tsp. salt and 1/8 tsp. pepper in a large salad bowl. Whisk until salt has dissolved, then slowly drizzle in both oils while whisking. Whisk until blended and thickened.
  • Just before serving, cut chicken into 1-inch cubes. Add to bowl with dressing along with any juices that have accumulated in bowl. Add endive, romaine, apple and almonds. Toss well. Season with salt and pepper.
