The combination of pork and pineapple works so well. Try it here with a touch of chipotle for a Mexican feel, served in tortillas, for a casual get-together

1kg boneless pork belly , skin scored
2 tbsp chipotle paste
1 tbsp tomato purée
2 tbsp soft brown sugar
300g pineapple , cut into chunks
4 large tortillas , warmed, to serve
2 x 250g pouches Mexican rice , to serve
curtido or tomatillo salsa, to serve (refer to the method for our recipes)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Rub the pork generously with salt. Whisk the chipotle with the tomato purée and sugar, then rub 2 tbsp of this over the underside of the pork. Whisk the rest with 300ml water to make a marinade. Lay the pork in a roasting tin and pour in the marinade - don't pour it over the skin. Cover with foil and roast for 3 hrs or until tender. About 30 mins before it's ready, scatter the pineapple round it, baste in the juices, re-cover and put back in the oven for the remaining 30 mins.
  • Set the grill to high. Move the pork to another tin or baking tray, skin-up, and grill for 10 mins or until the skin blisters and crisps - keep a close eye, it can burn quickly. When the crackling is crisp, take out and rest for 20 mins, cut into eight slices and return to the tin with the pineapple and marinade and coat well.
  • Serve with warmed tortillas and our curtido or our tomatillo salsa.

6 to 8 tomatillos, husked and washed
1 large red onion, coarsely chopped
6 cloves garlic, smashed
2 serrano chiles, seeded and coarsely chopped
Canola oil, for tossing and browning
Salt and freshly ground black pepper
2 limes, juiced (about 1/4 cup)
1/2 cup chopped cilantro
4 pounds pork shoulder, cut into 2-inch pieces
4 cups chicken stock, or enough to cover
Honey, for sweetening
2 tablespoons canola oil
1 small Spanish onion, finely diced
1 cup long-grain rice
Salt and freshly ground black pepper
1/4 cup finely chopped fresh cilantro
2 cups thinly sliced flat leaf spinach
2 ripe avocados, peeled and pitted
1/2 small red onion, thinly sliced
Juice of 1 large lime
1 jalapeno, finely diced
1/4 cup roughly chopped fresh cilantro
Salt and freshly ground black pepper
1/2 pound dried white beans, picked over
1 small onion, halved
2 cloves garlic, smashed
1/2 cup chopped green onions
1/4 cup rice vinegar
1/2 cup canola oil
Salt and freshly ground black pepper
6 to 8 large flour tortillas
Cotija cheese, grated
Queso fresco, crumbled
Jalapeno hot sauce
Fresh cilantro leaves, for garnish

Steps:

  • For the green chile pork: Preheat the oven to 400 degrees F. Toss the tomatillos, onion, garlic and chiles with a few tablespoons of oil and season with salt and pepper. Roast until slightly charred and soft, about 40 minutes. Transfer the mixture to a food processor, add the lime juice and cilantro and process until smooth. Season with salt and pepper.
  • Reduce the heat of the oven to 350 degrees F. Heat a few tablespoons of oil in a large Dutch oven over high heat until the oil begins to shimmer. Season the pork with salt and pepper and cook the meat in batches until golden brown on all sides, transferring to a plate as done. Remove any excess oil, then return the pork to the Dutch oven, add the tomatillo sauce and pork to the Dutch oven and toss to coat.
  • Add enough chicken stock to cover the pork, and cook until fork tender, about 1 1/2 hours.
  • Allow the pork to cool slightly, then shred with two forks. Heat some of the cooking liquid in a large saute pan, add the shredded pork and cook for a few minutes. Taste, and add honey if desired.
  • For the green rice: Heat the oil in a medium saucepan over high heat. Add the onion and cook until soft. Stir in the rice. Add 2 cups of water, season with salt and pepper and bring to a boil. Reduce heat to low, cover and cook until tender, about 18 minutes. Remove from the heat, stir in the cilantro and spinach, cover and let sit for 5 minutes.
  • For the guacamole: Combine the avocados, onion, lime juice, jalapeno and cilantro in a bowl. Use a fork to mash to a chunky mix. Season with salt and pepper.
  • For the white beans with onion vinaigrette: Combine the beans, onion and garlic in a large saucepan, cover with water and cook until just tender, about 1 hour. Drain and discard the onion and garlic.
  • Combine the green onions, vinegar, a splash of water and salt and pepper to taste in a blender and blend until smooth. With the motor running, slowly add the oil to create an emulsified vinaigrette.
  • Combine the beans and green onion vinaigrette in bowl.
  • To assemble: Spoon some green rice on each tortilla, add some white beans with green onion vinaigrette, some green chile pork and top with guacamole. Garnish with Cotija cheese, queso fresco, hot sauce and cilantro. Fold the edges of each tortilla into the center and roll them up tightly.

This sounds like a wonderful tropical version of classic chicken burrito. I found this at Real MOM Kitchen posted by Laura. This recipe makes a lot and has freezing tips for OMC. As we are currently in the middle of playing spring PAC have not gotten a chance to make so the times are estimates.

6 chicken breasts
1 (20 ounce) can crushed pineapple, drained
2 (15 ounce) cans black beans, rinsed and drained
2 cups salsa (needs to be medium heat or it will be too balance out well)
3 cups cooked rice
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper
10 -12 burrito-size flour tortillas
2 (10 ounce) cans green enchilada sauce
2 cups Mexican blend cheese, shredded

Steps:

  • Place the chicken in the crock pot and top with the pineapple, beans, and salsa. Cook on low for 6-8 hours.
  • Remove the chicken and shred. Mix the chicken back into the pineapple/bean mixture.
  • Mix the cumin, garlic, onion, salt and pepper into the rice and add to the chicken bean mixture.
  • Pre-heat oven to 375°F.
  • Use half the mixture to fill 5-6 of the burrito size tortillas. Allow the other half of the mixture to cool for freezing.
  • Place the 5-6 made up burritos in a 9x13 pan. Pour 1 can of the green enchilada sauce over the burritos.
  • Top with 1 cup of the shredded cheese and place in middle rack of oven and bake until the cheese is nicely melted.
  • Enjoy!
  • TIP: Place the remaining cooled filling mixture in a gallon sized freezer bag and freeze for another meal. Then place remaining Tortillas and shredded cheese in separate freezer bags for freezing.
  • To use thaw all three bags. Then follow steps 4-7.

1 cup chicken broth
1 (18 ounce) bottle honey barbeque sauce
1 onion, chopped
1 cup chopped fresh pineapple

Steps:

  • Place pork shoulder and chicken broth in a slow cooker.
  • Cook on Low for 5 to 7 hours. Drain all the liquid from the slow cooker and shred pork with fork. Mix barbeque sauce, onion, and pineapple into shredded pork. Continue cooking 1 to 1 1/2 hours more.

Not too heavy, these "Hawaiian"-like burritos are a real family pleaser. They are full of chicken, corn, black beans, and yes, pineapple. There is just a touch of cheese over the top. The chicken cooks easily in the crock pot which makes assembly and just heating through super easy. This recipe makes a double-batch, so some can be frozen for a later time. I usually get about 16 - 18 burritos, for you this may vary according to your stuffing and rolling capabilities.

6 chicken breasts (fresh or frozen)
1 (20 ounce) can crushed pineapple, drained
2 (15 ounce) cans black beans, rinsed and drained
2 cups salsa, medium (needs to be medium or it will be too bland)
3 cups cooked rice
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
16 flour tortillas, burrito-sized (I use 8-inch)
2 (10 ounce) cans green enchilada sauce
2 cups cheddar cheese, shredded (okay to sub monterey jack, or even a Mexican blend)

Steps:

  • Place the chicken in the crock pot and top with the pineapple, beans and salsa. Cook on low for 6 to 8 hours.
  • Remove the chicken and shred. Mix the chicken back into the crock pot mixture.
  • Mix in the cooked rice, cumin, garlic salt and onion salt.
  • Use half of the mixture to fill 8 of the burrito tortillas. Allow the other half to cool.
  • Place the 8-ish burritos in a 9x13 pan. Pour 1 can of the green enchilada sauce over the burritos.
  • Top with 1 cup of the shredded cheese and place under the broiler on the middle rack until the cheese is nice and melted.
  • Enjoy!
  • *With the remaining cooled filling mixture, place it in a gallon sized freezer bag and freeze for another meal. You can also place the remaining tortillas and shredded cheese in separate freezer bags to freeze along with the mixture for a future meal if you would like.
  • **To use the frozen meal, thaw the filling, tortillas and cheese and reheat the filling mixture. Then follow steps 4-6 to complete.
  • Note: The Prep Time (20 minutes) is about 5 dumping stuff into the crock pot, then about 15 rolling up the burritos. The Cooking Time is roughly 6.5 crock pot hours and 10-15 broiler minutes.
