SLOW COOKER SAUSAGE LENTIL RICE SOUP

A flavorful hearty soup with chunks of sausage, lentils, rice, fire roasted tomatoes and seasonings. Give it a shot for dinner this week!

1 pound ground sausage (you can use pork or turkey sausage)
1 cup diced onions
2 garlic cloves, minced
8 cups beef broth
1 cup diced or grated carrots
½ cup diced celery
½ tsp dried oregano
1 tsp dried basil
1 cup uncooked lentils
½ cup uncooked long grain white rice
1 (14 oz) can fire roasted diced tomatoes
1 (8 oz) can tomato sauce

Steps:

  • Heat a pan over medium high heat. Add in the sausage and onions and brown the sausage for about 5 minutes. Drain off any excess grease using a colander. Add the sausage into the slow cooker. Stir in the garlic, broth, carrots, celery, oregano, basil, lentils, rice, diced tomatoes and tomato sauce.
  • Cover the slow cooker and cook on low for 4-6 hours, or until lentils and rice are tender.
  • Stir the soup and salt and pepper to taste. Ladle into bowls and serve.

2 kielbasa sausages, chopped
2 carrots, diced
2 stalks celery, chopped
1 onion, chopped
1 (14.5 ounce) can crushed tomatoes
2 cups dried lentils
2 cups water
2 cups wine
¼ cup olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme
1 bay leaf
salt and ground black pepper to taste
½ cup fresh spinach leaves

Steps:

  • Combine sausages, carrots, celery, onion, tomatoes, lentils, water, wine, oil, garlic, oregano, basil, thyme, bay leaf, salt, and pepper in the bottom of a slow cooker.
  • Cover and cook on Low until lentils are tender and sausage is no longer pink, 6 to 8 hours.
  • When ready to serve, stir in spinach and cook until it wilts, 7 to 10 minutes. Remove bay leaf.

2 teaspoons olive oil
1 cup chopped onion
2 garlic cloves, minced
1 carrot, diced
2 ounces sweet sausage, chopped
8 cups chicken stock or 8 cups beef stock
1 bay leaf
1/2 cup lentils
1/2 cup brown rice
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh parsley
1/2 cup crouton (garnish) (optional)

Steps:

  • Heat the oil in a soup pot over low heat.
  • Saute the onions and garlic in the oil for 5 minutes.
  • Stir in the carrot and sausage.
  • Continue to cook till the onions are soft and golden.
  • add the broth and bay leaf to the pot. Bring to a boil, then reduce to a simmer.
  • Add the lentils and rice and cook, covered, for about 45 minutes, or until lentils are soft.
  • Add the salt, pepper and parsley. Cook for 5 minutes longer. Remove bay leaf.
  • Serve garnished with croutons.

1 lb extra lean ground beef
1 lb spicy bulk sausage (casings removed)
1/2 large onion, chopped
2 cups carrots, chopped
2 cups celery, chopped
1 bell pepper, chopped (red or green)
salt and pepper
1 teaspoon dried oregano
2 -3 garlic cloves, minced
14 1/2 ounces stewed tomatoes and green chilies
14 1/2 ounces green beans
1/4 teaspoon chili powder
1 cup instant rice, uncooked

Steps:

  • Combine the beef, sausage, and onions together, and roll into balls.
  • Spray Crockpot with pam and place meatballs inside.
  • Mix together the remaining ingredients (but NOT the rice!) and pour over the meatballs.
  • Cover, cook on low 6-8 hours.
  • 20 minute Before serving, stir in the rice and replace the lid.
  • Enjoy!

8 ounces long grain white rice
1 bay leaf
8 ounces brown lentils
1/2 teaspoon salt
2 -3 tablespoons canola oil
1/2 teaspoon cumin seed
1 1/2 medium onions, diced or 8 ounces onions
5 garlic cloves, minced or 1 ounce garlic
1 (5 ounce) bell peppers, diced
6 teaspoons fresh ginger, minced or 1 ounce fresh ginger
1 1/2 medium carrots, diced or 8 ounces carrots
1/2 teaspoon red chili pepper flakes
1 (12 ounce) package chicken sausage or 4 links chicken sausage
1 tablespoon tomato paste
1 fresh lime, juice of
1 cup fresh cilantro, chopped

Steps:

  • In a medium stock pot, make the rice to package directions. Set aside.
  • Boil lentils in another saucepan with 4 inches salted water and a bay leaf for 25-30 4. minutes, or until lentils are tender but still firm and not mushy. Drain and reserve half the cooking liquid.
  • In a deep skillet, heat oil on medium heat, and saute the cumin seeds, onions, garlic, ginger, bell peppers and carrots for 5-7 minutes, stirring often. Now add red chili flakes and salt to taste. Saute for 5 more minutes and then add sliced sausage.
  • After 4-5 minutes, or when sausage is slightly browned at the edges, add drained lentils to skillet. Stir. Add 1/4 cup of the lentil cooking liquid.
  • Swirl in 1 tablespoon of tomato paste and add another 1/4 cup of lentil cooking liquid if needed. Stir to dissolve the paste well.
  • Let the mixture simmer 5 more minutes and then turn off heat. Add juice of 1 lime and chopped fresh cilantro. Serve over plain rice.

1 1/2 cups lentils, picked over and rinsed
1 cup brown rice
1 (2 lb) can tomatoes, drained,reserving juice,and chopped
3 carrots, halved lengthwise and cut crosswise into ¼ inch pieces
1 onion, chopped
1 stalk celery, chopped
3 cloves garlic, minced
1/2 teaspoon crumbled dried basil
