My 17 year old has always loved this recipe, so it's been a mainstay in my family for many years. A great summer potluck dish.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a Dutch oven. Cook over medium high heat until evenly brown. Drain, crumble, and set aside. Place the ground beef and onion in the Dutch oven. Cook until beef is evenly brown and onion is tender.
- Return bacon to the Dutch oven. Mix in the drained pork and beans, pork and beans with liquid, kidney beans, and lima beans. Stir in the barbeque sauce, brown sugar, vinegar, and liquid smoke. Season with salt and pepper.
- Cover Dutch oven, and bake 1 hour in the preheated oven.

This recipe for Traditional Newfoundland Baked Beans have been made by many people throughout Newfoundland and Labrador for generations. They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Steps:
- Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.
BEST BAKED BEANS
These beans are truly the most fantastic baked beans we have ever had. I can't even begin to describe them. I even had them for lunch as a main dish. We used leftover smoked pulled pork, but you can substitute 1/2 pound crumbled cooked sausage if you don't have any on hand.

- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x11-inch baking dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels.

- Preheat your oven to 325F.
- Chop the bacon and cook till brown in a large skillet.
- Remove bacon from the pan and drain off all grease except for about 1 tablespoon.
- Add onions and peppers to the pan with the bacon grease and cook those till translucent.
- In a large bowl stir together the beans, veggies, bbq sauce, brown sugar, mustard, pepper and worcheshire.
- Pour the beans into a 9x13 baking dish (or keep it in your pan if it is oven safe).
- Top with the cooked bacon
- Bake uncovered for 1 to 1 ½ hours, you want them to bake and thicken up nicely.

- Add dry beans to a large container and fill with cold water. Soak overnight. The following day, add beans and their soaking water to a large pot and bring up to a simmer. Cook until tender, between 1 and 2 hours. Drain the beans while reserving the liquid.
- Preheat your oven to 325 degrees F.
- Pour your beans into a large casserole dish and spread evenly, layer bacon and onion on top.
- In a small saucepan add the molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce, and brown sugar. Slowly bring the sauce up to a boil, simmer for a minute or two. Pull sauce off the heat and pour over the beans. Pour in reserved cooking water from the beans until beans are just covered. Tightly cover the casserole dish with aluminum foil.
- Bake in preheated oven for 3 to 4 hours. Remove the aluminum foil halfway through cooking time and add in a small amount of extra liquid if the beans start to get dry. Remove from the oven once beans are tender, cool, and serve.

- Cook bacon till crisp.
- Remove bacon, reserving about 3 Tbsp drippings in skillet. Drain and crumble bacon; set aside. Cook chopped onion in reserved drippings till tender.
- Stir in two cans pork and beans in tomato sauce, brown sugar, catsup, Worcestershire sauce, and prepared mustard.
- Turn into a 1 1/2 quart casserole. Bake, uncovered, in a 350 degree oven for 1 1/2 to 1 3/4 hours, or cook in the microwave oven on HI for 10 to 12 minutes.
- Stir 1/2 way through cooking time, Top with bacon.

Baked beans in Maine is an every Saturday night tradition. We have them along with potato salad or cole slaw, and hotdogs of some kind. We always have cornbread or biscuits, too. It is the best supper of the week for us. I have had this every week since I was a little girl--many, many years. I love them as much today as I did when I was little. This recipe uses four kinds of beans, but it can be made with just one kind if you choose and will be as good as if you used four. Until last year, I always did the proper thing and baked them in my brown bean pot in the oven (I have five pots--all sizes). This past year I tried the crockpot and it worked fine. I always make a double batch. You can freeze them. My husband likes beans and toast for breakfast on Sunday morning. It's all tradition, I guess. NOTE: If you are a vegetarian--omit the salt port and put a big chunk of butter in the pot.

- Pick over the beans and wash in cold water; rinse.
- Cover with cold water and let soak over night.
- Drain.
- In the morning, put in a pan and cover with water and parboil till the skins crack and roll up when you blow on them (30-35 minutes or so).
- Place onion in the bottom of the bean pot and add the beans saving some of the bean juice to mix with the rest of the ingredients.
- Mix the minced onion, sugar, molasses, salt, dry mustard, and some of the hot bean juice to make about 1 1/2 cups.
- Pour this over the beans and gently mix.
- If you need more juice, add more of the juice from the pan.
- Scrape and slit the salt pork and put on top of the beans.
- Put the cover on the beanpot and bake at 300 degrees for about 7 hours.
- Add water if necessary to keep the beans covered.
