2 tablespoons olive oil
2 (10 to 12-ounce) New York strip steaks, about 3/4-inch thick
Kosher salt and freshly ground pepper
8 ounces cremini mushrooms, sliced
1 shallot, finely chopped
2 teaspoons chopped fresh thyme leaves
1 cup dry red wine
3 tablespoons butter

Steps:

  • Add the oil to a large cast-iron skillet over medium-high heat. Heat until the oil is very hot.
  • Season the steaks with salt and pepper. Add the steaks to the skillet and sear the steaks on each side for 4 minutes for medium. Remove the steaks to a plate and loosely cover with foil.
  • Lower the heat to medium and add the mushrooms, shallot, and thyme to the pan and saute until the mushrooms begin to brown and soften, about 5 minutes. You may need to add a bit more oil to the pan. Add the red wine and scrap the bottom of the pan to get the browned bits.
  • Let the liquid reduce by half, 7 to 8 minutes. Remove from the heat and swirl in 3 tablespoons butter to finish the sauce. Serve the steak with mushroom red wine sauce drizzled over the top.

1 pound Yukon Gold or red-skinned potatoes, cut into 1-inch chunks
Kosher salt
1 1/4 pounds skirt steak, cut into 4 pieces
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 large shallot, sliced
1 10-ounce package baby spinach (about 8 cups)
1 tablespoon unsalted butter
8 ounces cremini mushrooms, quartered
1/3 cup dry white wine

Steps:

  • Preheat the broiler. Put the potatoes in a medium saucepan and cover with water by 1 inch; season with salt. Bring to a boil and cook until the potatoes just start softening, about 5 minutes; drain and set aside. Season the steak with salt and pepper and set aside.
  • Meanwhile, heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Add half of the shallot and cook, stirring, until slightly softened, about 2 minutes. Add the spinach and season with ½ teaspoon salt and a few of grinds of pepper. Cook, stirring, until the spinach is wilted and the liquid evaporates, about 3 minutes. Remove to a bowl; set aside.
  • Wipe out the skillet; add 1 tablespoon olive oil and heat over medium-high heat. Add the steak and cook until browned, about 4 minutes per side. Transfer to a plate and let rest.
  • Pour out any drippings from the skillet. Melt the butter in the skillet. Add the mushrooms and cook, stirring occasionally, until wilted, about 3 minutes. Stir in the remaining shallot, the potatoes, wine, ½ teaspoon salt and a few grinds of pepper. Drizzle with the remaining 1 tablespoon olive oil. Broil until browned, 8 minutes.
  • Stir the spinach into the potato mixture. Slice the steak against the grain and serve with the vegetables.

4 tablespoons (1/2 stick) unsalted butter
1/2 teaspoon crushed red pepper
1 medium shallot, thinly sliced
24 ounces cremini mushrooms, halved
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh thyme
2 cloves garlic, grated on a rasp grater
1/2 cup dry red wine

Steps:

  • Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. Add the mushrooms and season with salt and pepper. Cover and cook for 10 minutes, then take off the cover and cook until the mushrooms are golden brown, another 10 minutes. Add the thyme and garlic and cook until fragrant, then deglaze with the wine and cook until the alcohol scent dissipates, another 2 to 3 minutes. Add the remaining 2 tablespoons butter and cook until melted; season again. Serve over steak, pork chops or chicken.

2 red onions, sliced
1 (8 ounce) package button mushrooms, sliced

6 New York strip steaks

1 cup red Zinfandel wine
1 cup beef broth
2 tablespoons Dijon mustard
1 cup heavy whipping cream

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium-high heat; cook and stir red onions and mushrooms until tender, about 10 minutes. Transfer onion-mushroom mixture to a bowl.
  • Coat hot skillet with 1 tablespoon vegetable oil over medium-high heat. Pat each steak dry with paper towels and season with salt and black pepper. Place steaks into hot skillet and cook until outsides are browned and insides are cooked to desired doneness, about 5 minutes per side for medium. Remove steaks from skillet.
  • Pour red Zinfandel wine into skillet; scrape up and dissolve any bits of browned food in the skillet. Whisk beef broth and Dijon mustard into wine mixture and bring to a boil. Cook mixture, stirring often, until slightly reduced, about 5 minutes. Slowly whisk cream into sauce and let stand to thicken, about 5 more minutes. 2 tablespoons chopped dried mushrooms (cepes, porcini, (or morels)
1/4 cup hot water
2 trimmed thick skirt steaks (about 7 oz. each, 1 inch thick)
1 tablespoon vegetable oil
2 tablespoons minced shallots
3 fresh medium mushrooms, thinly sliced (1/2 cup)
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/4 cup dry red wine
2 tablespoons heavy cream

Steps:

  • Soak dried mushrooms in hot water 15 minutes. Drain mushrooms, reserving liquid. Rinse mushrooms thoroughly. Strain soaking liquid through coffee filter or paper towel.
  • Meanwhile, let steaks warm at room temperature 10-15 minutes.
  • Heat oil in heavy skillet over medium heat. Add steaks and saute, turning once, about 8 minutes for medium-rare. Remove to serving platter and cover loosely.
  • Pour off all but thin layer of fat from skillet. Heat over medium heat. Add shallots and cook, stirring constantly, just until wilted, about 30 seconds.   • Season steaks with salt and black pepper. On a grill pan coated with cooking spray, cook steaks over medium-high heat, turning once, until pink inside, 3 to 4 minutes per side. 1 teaspoon thyme

Steps:

  • In a shallow dish large enough to hold the steaks in a single layer, combine the wine, soy sauce, vinegar, thyme, pepper and half of the garlic. Place the steaks in the marinade and turn them over to thoroughly coat. Set them aside to marinate while you prepare the remaining ingredients.
  • Preheat the broiler or prepare the grill. If broiling, line a broiler pan with foil.
  • In a medium skillet, melt the butter over medium-high heat. Add the remaining garlic, the scallions and mushrooms and saute until the scallions are limp and the mushrooms are beginning to release their liquid, two to three minutes. Stir in the flour and cook, stirring, until it is no longer visible, about 30 seconds.

2 tablespoons extra virgin olive oil
1 1/2 cups diced mixed mushrooms (shiitake, cremini and oyster)
1/2 onion, finely diced
1 celery rib, finely diced
2 cloves garlic, minced
1 tablespoon mixed herbs (rosemary, thyme and parsley)
1 bunch arugula, cleaned
2 tablespoons pine nuts
1 cup brioche bread, ½ inch cubed (or any egg bread)
1 egg
1/4 cup white wine
coarse salt
cracked black pepper, to taste
1 lb skirt steak
1 1/2 tablespoons olive oil
1 -2 stalk fennel, chopped
1 carrot, chopped
2 sprigs thyme
1 bay leaf
1 tablespoon whole black peppercorn
1 head of garlic, halved
1/4 cup red wine
3/4 cup beef broth
coarse salt
cracked black pepper, to taste
1/4 cup beef broth
1 tablespoon red wine
1 teaspoon grainy mustard
2 tablespoons butter

Steps:

  • STUFFING: Heat the olive oil in a medium sauté pan over high heat.
  • Add the onion, celery, garlic and mushrooms.
  • Sauté vegetables until soft and liquid from the mushrooms has evaporated, about 6 minutes.
  • Add the mixed herbs, arugula, pine nuts and brioche cubes.
  • Cook for an additional 3 minutes.
  • Add the white wine and continue to cook until the liquid has evaporated.
  • Remove from heat and cool completely.
  • Fold in the egg.
  • BRAISE: Preheat oven to 375 degrees F.
  • Lay out the skirt steak, vertically, and season with salt and pepper.
  • Add the cooled stuffing to the bottom third of the steak and roll up, width-wise.
  • Secure with butcher’s twine.
  • Heat a medium sauté pan over high heat and add the olive oil.
  • Brown the stuffed skirt steak on all sides.
  • Transfer steak to an 8 x 8-inch roasting pan.
  • Add the fennel, carrot, thyme, bay leaf, black peppercorns and garlic to the sauté pan and cook for 2 minutes.
  • Deglaze with the red wine and beef broth.
  • Scrape the brown bits off the bottom of the pan with a wooden spoon and transfer entire contents of the pan to the roasting pan.
  • Cover with aluminum foil and place in preheated oven.
  • Braise until meat is tender, about 1½ hours.
  • Remove skirt steak from roasting pan and place on cutting board.
  • Cover with aluminum foil and let rest for 10 minutes.
  • SAUCE: Strain the pan juices from the roasting pan into a small saucepan.
  • Discard the solids.
  • Add the beef broth and red wine to the saucepan.
  • Bring to a boil.
  • Whisk in the grainy mustard and butter.

  • Pat steak dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook steaks, turning over once, 5 to 7 minutes total for medium-rare. Transfer to a platter.

  • Make aioli:
  • Whisk all ingredients in small bowl to blend. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Make steak:
  • Whisk first 6 ingredients to blend in 13x9x2-inch glass baking dish. Add steaks to marinade; turn to coat. Cover and refrigerate at least 8 hours.
  • Make salad:
  • Combine onions, lemon juice and coarse salt in medium bowl. Let stand 1 hour, tossing occasionally.
  • Prepare barbecue (medium-high heat). Remove steaks from marinade. Sprinkle with salt and pepper. Grill about 3 minutes per side for medium-rare. Transfer steaks to work surface.
  • Melt butter in heavy large skillet over medium-high heat. Add shallot and mushrooms; sauté until well browned, about 7 minutes. Add vinegar to skillet and bring to boil, scraping up browned bits. Remove from heat; mix in oil. Season mushroom mixture to taste with salt and pepper.

2 sprigs fresh thyme
1 bay leaf
1/2 teaspoon sugar
1/4 teaspoon Worcestershire sauce
1 tablespoon butter, cut into 1/4 inch chunks

Steps:

  • Bring steaks up to room temperature before beginning. Sprinkle steaks on both sides with salt and pepper.
  • Heat oil in a large skillet over medium-high heat until shimmering and wisps of smoke are beginning to rise. Lay steaks in skillet. Cook 3-4 minutes on each side. Remove to a warm plate and tent with foil.
  • Drain fat from skillet, leaving any browned bits in the pan. Turn off the heat and let the pan cool for about 60 seconds. Turn the heat to medium, and add the wine, thyme, bay leaf, sugar and Worcestershire sauce. Bring to a boil, scraping the browned bits up ftom the bottom of the pan with a wooden spoon. Reduce by 50%, about 3 minutes.
  • Turn off the heat, remove the bay leaf and thyme, and add the butter slowly. Whisk gently until all the butter is incorporated. Add salt and pepper if needed.
  • Slice steak thinly, across the grain. Serve with sauce.

1 beef flank steak
2 tablespoons butter
8 ounces mushrooms, sliced
1 shallot, diced
1 clove garlic, minced
1 tablespoon chopped fresh rosemary leaves
2 packets Swanson® Flavor Boost™ Concentrated Beef Broth
¼ cup water

Steps:

  • Heat 1 tablespoon oil in a 10-inch skillet over medium heat. Add the beef and cook until well browned on both sides until desired doneness, about 10 minutes for medium-rare. Remove the beef from the skillet.
  • Heat 1 tablespoon butter and the remaining oil in the skillet. Add the mushrooms and cook for 5 minutes or until tender, stirring occasionally. Add the shallot, garlic and rosemary and cook and stir for 30 seconds. Stir in the concentrated broth, water and remaining butter and cook until the butter is melted.
  • Cut the beef diagonally against the grain into thin slices. Serve the mushroom mixture with the beef.
