  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

4 turkey wings, split into drumettes and wingettes (about 3 pounds 3 ounces)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 tablespoon sweet paprika
2 teaspoons cayenne pepper
2 teaspoons dried oregano
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, cut into pieces
1 small green bell pepper, finely diced
1 small onion, finely diced
1 medium celery stalk, finely diced
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour
3 cups homemade turkey stock (see Cook's Note)
2 tablespoons Worcestershire sauce
2 teaspoons hot sauce, such as Cholula
2 bay leaves
1/4 cup heavy cream
1/4 cup parsley leaves, chopped

Steps:

  • Preheat the oven to 425 degrees F. Place a wire rack in a rimmed baking sheet.
  • For the wings: Pat the turkey wings completely dry and place them onto a work surface or cutting board. Combine the garlic powder, onion powder, smoked paprika, sweet paprika, cayenne pepper, oregano, thyme, 1 tablespoon salt and 2 teaspoons black pepper in a medium bowl; generously rub all over the turkey wings, making sure to pick up whatever falls onto the board and sprinkle back onto the turkey (it may look like too much seasoning, but it will flavor the turkey and the gravy so don't skimp!).
  • Transfer the wings to the prepared baking sheet. Add 2 cups water to the bottom of the baking sheet and tightly wrap foil over the wings and baking sheet. Bake until the wings are cooked through and just slightly tender but unable to pull away with a fork, about 1 hour.
  • Meanwhile, make the gravy: Melt the butter in a 12-inch cast-iron skillet over medium-high heat. Add the green pepper, onion, celery, garlic 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring occasionally, until the vegetables have softened, 5 to 6 minutes. Sprinkle the vegetables with the flour and stir to combine. Slowly pour in the stock, stirring constantly until no lumps remain from the flour. Stir in the Worcestershire sauce, hot sauce, bay leaves, 1/2 teaspoon salt and a few grinds of black pepper and bring to a simmer. Reduce the heat to low.
  • Unwrap the wings and carefully nestle them into the gravy using tongs. Tightly cover the skillet with foil and simmer until the wings are completely tender and the meat can easily be pulled away with a fork, about 25 minutes. Pour the heavy cream into the gravy around the turkey and gently mix with a spoon as much as you can. Let simmer until heated through, 2 to 3 minutes. Garnish with parsley. Remove the bay leaves before serving.

8 ounces turkey breast, thinly sliced into 4 slices
1 egg
1/2 cup breadcrumbs
2 tablespoons chopped fresh parsley
1 tablespoon all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
8 slices turkey bacon
2 beefsteak or heirloom tomatoes, sliced
1 ripe avocado, pitted, peeled and thinly sliced
4 cups garden lettuce leaves
1 tablespoon olive oil
2 turkey wings, chopped into 1-inch pieces
2 cloves garlic, chopped
2 shallots, thinly sliced
1 sprig fresh thyme, leaves finely chopped
1 bay leaf
4 tablespoons sherry vinegar
1 cup chicken stock
3 tablespoons hazelnut oil
2 tablespoons chopped fresh parsley
Salt and freshly ground pepper

Steps:

  • Pound the turkey slices between 2 sheets of waxed paper until thin. Beat the egg lightly with 1 tablespoon water. Combine the breadcrumbs with the parsley, flour and salt. Dip the turkey in the egg, and then coat with breadcrumbs. Chill for 1 hour.
  • Saute the turkey scaloppini in the olive oil until golden brown and cooked through, about 3 minutes on each side. Arrange on 4 individual plates.
  • In a large skillet over medium-high heat, cook the turkey bacon until crisp, 3 to 4 minutes. Remove the turkey bacon from the skillet and place 2 pieces on top of each turkey scaloppini. Alternate the tomato, avocado and garden greens on top of the turkey bacon and scaloppini. Drizzle the salad with Turkey Wing Vinaigrette.
  • In a large skillet over medium heat, add the olive oil and turkey wings. Cook the wings until caramelized, stirring occasionally, about 12 minutes. Add the garlic, shallots, thyme and bay leaf. Cook until the shallots are translucent about 5 minutes. Deglaze with 3 tablespoons vinegar and cook down until almost evaporated. Add the chicken stock and reduce to 1/4 cup, about 20 minutes.
  • Strain the liquid through a fine sieve into a small mixing bowl. Whisk in the hazelnut oil and remaining 1 tablespoon vinegar. Add the parsley and season with salt and pepper. Set aside, keeping warm.

12 slices microwave ready sliced bacon (recommended: Ready Crisp bacon)
3 hearts romaine lettuce
2 cups pea shoots, radish spouts or bean spouts
3 plum tomatoes, sliced
1/2 medium red onion, chopped
Salt and pepper
1 1/2 pounds rotisserie turkey breast or thick sliced deli roast turkey breast
2 ripe Hass avocados
1 lemon, zested and juiced
1 clove garlic
1 teaspoon salt
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
2 teaspoons hot sauce (recommended: Tabasco sauce), eyeball it

Steps:

  • Crisp the bacon in microwave according to package directions. Remove from microwave and chop. Of course, any bacon or turkey bacon which you have on hand may be substituted. These pre-rendered bacon products simply allow you to keep more heat out of the kitchen by giving you the option of a low-maintenance microwave preparation.
  • Chop romaine lettuce and arrange on large platter. Arrange a bed of pea shoots or sprouts on top of the lettuce then arrange the tomatoes and chopped red onion on top of that. Season the salad vegetables with salt and pepper, to your taste. Scatter chopped bacon onto salad.
  • Remove the rotisserie turkey from the bone with a sharp carving knife. Slice the rotisserie breast meat on an angle into strips. For thick cut turkey from the deli, julienne the meat into 1/2-inch strips. Arrange the sliced turkey down the center of the salad platter.
  • Cut all around the ripe avocados down to the pit. Twist and separate the halved fruit. Remove the pit with a spoon, then scoop the flesh with a spoon into your food processor bowl. Add the zest and juice of 1 lemon to the food processor. Chop garlic on your board and mash with 1 teaspoon salt to paste the garlic. Add garlic paste and the red wine vinegar to the food processor. Place lid on the food processor and turn it on. While the blade is spinning, stream in extra-virgin olive oil and add hot sauce. Stop processor, taste dressing and adjust seasonings. Pour dressing back and forth over the platter evenly when you are ready to serve this simple and so-cool salad meal.

We change the flavor of our chutney in this sandwich with the seasons, but peach chutney is one of our favorites. Use fresh, ripe local peaches. The chutney will keep refrigerated for several weeks and is also great served as a condiment with sharp cheeses. If ripe peaches are not available, an apple or cranberry chutney works in this sandwich as well.

1 1/2 pounds peeled chopped peaches
1 1/2 cups light brown sugar
1 cup cider vinegar
2 3/4 ounces dried pineapple, diced
2/3 cup diced yellow onion
2/3 cup diced yellow bell pepper
1 1/2 teaspoons fresh minced garlic
1/2 teaspoon ground cinnamon (preferably extra-fancy Vietnamese)
1/2 teaspoon dried red pepper flakes
1/2 teaspoon salt
1/4 cup diced crystallized ginger
1 jalapeno pepper, seeded and diced
1 large (about 14-inch) round crepe or flour tortilla
2 ounces grated mozzarella
2 1/2 ounces thinly sliced roast turkey breast
2 slices good thick-cut bacon, cooked and crumbled
1 large handful mixed greens
2 tablespoons Horseradish Aioli, recipe follows
2 cups mayonnaise
1/4 cup prepared horseradish

Steps:

  • For the peach chutney: Combine the peaches, brown sugar, vinegar, pineapples, onions, bell peppers, garlic, cinnamon, red pepper flakes, salt, crystallized ginger and jalapenos in a large saucepan and cook over medium-high heat, stirring frequently, until thickened and "jammy," about 45 minutes.
  • For the turkey club: Fold the crepe in half to form a half-moon shape and place on a hot griddle or large skillet over medium heat. Spread 3 tablespoons chutney evenly over the surface and sprinkle with the mozzarella (save the remaining chutney for another use). Top with the turkey and bacon and allow to rest on the hot griddle until the cheese is melty and the ingredients warmed. Top with the greens and drizzle with the aioli. Pull up one corner of the crepe and fold over to cover half of the sandwich, then roll over one more time in the same direction to enclose all the ingredients and form a cone-shaped sandwich. Press down lightly and allow to rest for another minute or so on the griddle until lightly crisped and warm. Flip and crisp the reverse side. Serve warm.
  • Stir together the mayonnaise and horseradish in a bowl.

1 roasted turkey breast (2 to 2 1/2 pounds cooked breast meat)
2 tablespoons EVOO
3 to 4 ounces center cut smoky bacon or applewood bacon, chopped
4 cloves garlic, finely chopped
2 jalapeno or Fresno chiles, chopped (seed the chiles for a milder filling)
2 medium or 1 large onion, finely chopped
1 tablespoon ground cumin, scant palmful
Freshly ground black pepper
1/4 cup fresh cilantro or parsley leaves, finely chopped
2 tomatoes, seeded and chopped
1 lime, juiced
About 1 cup leftover gravy, or turkey or chicken stock
Salt
16 corn tortillas or twelve 6-inch flour tortillas
4 tablespoons butter
3 tablespoons flour
2 1/2 cups milk
3 cups shredded Monterey Jack cheese or combo of Monterey and Pepper Jack
3 cups shredded Monterey Jack cheese or combo of Monterey and Pepper Jack
One 4-ounce tin diced green chiles, well drained
Chopped or shredded iceberg or Romaine heart lettuce
Diced avocado with lime juice
Seeded diced tomatoes
Chopped red onion or scallions
Creme fraiche or Mexican crema or sour cream, for dolloping

Steps:

  • Coarsely chop the turkey meat and pulse process in a food processor into a fine chop.
  • Heat a large, deep skillet over medium to medium-high heat with the EVOO, a couple turns of the pan. Add the bacon and render until crispy. Add the garlic, chiles and onions. Season with cumin and some pepper. Saute until tender, about 10 minutes. Add the turkey, cilantro, tomatoes and lime juice. Then add the gravy or stock to moisten. Warm through and season with salt. Remove from the heat.
  • Char the tortillas and blister in a hot dry skillet or over an open flame on a gas burner, 30 to 40 seconds per side.
  • In a sauce pot over medium heat, melt the butter. Then whisk in the flour and cook for 1 minute. Whisk in the milk, and season with salt and pepper. Cook the mixture until it thickens and coats the back of a spoon. Stir in two-thirds of the cheese to melt, then stir in the green chiles.
  • Fill the tortillas with the turkey and bacon mixture and arrange in a large baking dish. Pour the sauce evenly over the enchiladas. Then top with the remaining cheese. Cool and store for a make-ahead meal.
  • To bake the enchiladas, bring to room temperature and preheat the oven to 400 degrees F. Bake the enchiladas until brown and bubbly, about 40 minutes if from the fridge, or 20 to 25 minutes if still warm from the initial preparation.
  • Serve and top the enchiladas with lettuce, avocado, lime, tomatoes, onions and creme fraiche.
