BACON APPLES
I cooked apples that I stuffed with brown sugar and cinnamon over a campfire as a dessert for my family when we went camping. In the morning we had bacon with our breakfasts and the kids marinated the bacon in the leftover apples! The bacon was good but we ate the apples after and they where surprisingly good!

UPSIDE-DOWN APPLE BACON PANCAKE
I frequently cook Sunday brunch for my husband and myself, and I am always experimenting with new recipes. Apples picked from our tree were the inspiration behind these sweet and savory pancakes, which my husband quickly declared a keeper. -Sue Gronholz, Beaver Dam, Wisconsin

BACON APPLE CRISP
Everything's better with bacon - and that includes apple crisp! The combination of smoky, salty bacon and tart, sweet apples works surprisingly well. This works out to be mainly sweet but with some lovely savory/salty undertones. I've tried this only with regular bacon, but I'm planning to experiment with hickory smoked. Prep time does not include cooking the bacon or peeling, coring and slicing the apples.

Steps:
- Preheat the oven to 350°F.
- In a large mixing bowl, toss the sliced apples with the sugar, 1 1/2 tablespoon flour, salt cinnamon, and nutmeg, and set aside for the sugar to soften the apples and macerate, creating a light syrup. In a smaller mixing bowl, toss the oats, 1 1/2 cups flour, brown sugar, and baking powder together, then use your fingers to mix in the melted butter, gently making small clumps where you can.
- Layer the sugared apples and their juice in a 9 X 13 baking dish and sprinkle evenly with the oatmeal mixture, but don't pack it tightly. Bake uncovered for 50-60 minutes until the apples are soft and tender and the sauce has thickened and is bubbly. If the crisp seems to be browning too much, cover with foil for the remaining cooking time.
- Let the apple crisp cool for 20-30 minutes before serving for the caramel sauce to thicken. Divide in bowls and top with vanilla ice cream or whip cream, and serve.

- Make the topping: In a medium-sized bowl, whisk together your flour, oats, brown sugar, salt, and cinnamon. Add in your chilled cubed butter and using a pastry cutter or two forks, cut the butter into the dry ingredients until you get small pea-sized bits. Your topping should be crumbly, but if you press it together it holds its shape. Put in the fridge until ready to use.
- Make the apple filling: Peel and slice your apples into chunks. You don't have to slice them super thin as you would for an apple pie, but try to have them all be close in size so they cook evenly. Place sliced apples in a large bowl and toss with the brown sugar, cinnamon, vanilla, and salt.
- In your cast iron skillet, melt 2 tbsp of butter over medium heat. Once it's completely melted and coating the bottom of the pan, remove it from the heat and dump the apples in. Spread evenly and then sprinkle the crumb topping all over.
