1/2 cup butter, cubed
4 cups uncooked long grain rice
8 cups water
2 tablespoons chicken bouillon granules
10 green onions, thinly sliced
2/3 cup reduced-sodium soy sauce
1 cup slivered almonds, toasted

Steps:

  • In a Dutch oven, melt butter. Add rice; cook and stir for 3-5 minutes or until lightly browned. Add water and bouillon; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Remove from the heat; stir in the onions and soy sauce. Cover and let stand for 5 minutes. Stir in almonds.

This wild rice pilaf recipe creates a side dish that's full of delicious flavor. You can make this easy rice pilaf ahead of time, as it reheats well.

2 cups wild rice blend (such as Lundgren's)
Regular strength chicken or vegetable broth (enough to use instead of water, for cooking rice according to package instructions)
1/4 cup salted butter (sliced)
1 large onion (chopped)
1 cup thinly sliced baby carrots
2 cups freshly shaved brussels sprouts
4 garlic cloves (minced)
1 tsp dry Italian seasoning
1/4 tsp freshly ground black pepper

Steps:

  • Cook rice according to package instructions, using the broth instead of water. When cook time is up, do not open lid; turn heat off and keep lid tightly covered for 10 minutes to allow continued steaming. If rice is still a bit too firm, mix in just enough extra broth to moisten all rice, cover, and simmer another 10 minutes.
  • While rice is cooking, add butter to a large/deep skillet over medium high heat. Once butter is melted and starting to bubble, add onion and carrots. Stir to combine. Cover and cook 5 minutes, stirring occasionally. Add brussels sprouts, garlic, Italian seasoning, and black pepper, stirring another 2 minutes until softened.
  • Check rice for doneness. Fluff with fork and add to skillet with vegetable mixture, stirring to incorporate. Taste and season with kosher salt and freshly ground black pepper as needed.

This Rice Pilaf is simple, fluffy, and flavorful, and a good side dish for Chicken, Beef, Pork, and more.

Number Of Ingredients 5

2 cups long grain white rice ((I think jasmine and basmati are best))
2 tbsp butter ((or olive oil*))
1/2 cup chopped shallots
1/4 + 1/4 tsp salt
3 cups chicken stock

Steps:

  • Place the rice in a strainer, and rinse well for 2 minutes.
  • Add the butter, shallots, and 1/4 tsp salt to a nonstick pan (use one that has a lid), and cook for 5 minutes, until slightly softened.
  • Add the rinsed rice and toast for 3-5 minutes, stirring often, until the grains turns chalky and opaque.
  • Add the chicken stock and remaining 1/4 tsp salt, and increase the heat to high. Once the liquid reaches a boil, reduce the heat to a simmer (low heat), and cover the pan with the lid**.
  • Cook for 18-20 minutes, until the liquid has been absorbed.
  • Stir and fluff the rice, as the bottom tends to get drier than the top, replace the lid, and let the pilaf sit for 10 more minutes. Serve and enjoy!

2 teaspoons extra-virgin olive oil
2 medium sweet onions (or yellow onions, chopped (about 3 cups))
2 cloves garlic (minced)
2 large red bell peppers (chopped (about 3 1/2 cups))
3/4 cup uncooked wild rice blend
1 cup frozen whole kernel corn ( or corn cut from the cob)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
1/2 cup toasted pine nuts (or chopped toasted pecans)
1/2 cup chopped fresh basil

Steps:

  • Lightly coat a 3- to 4 1/2-quart slow cooker with nonstick spray. Heat the oil in a large skillet over medium heat. Add onions and garlic. Cook just until the onions begin to soften, about 5 minutes.
  • To the slow cooker, add the onion mixture, bell peppers, uncooked rice, corn, salt, and pepper. Pour 1 1/2 cups very hot water over the top. Stir to combine, cover, and cook 3 1/2 to 4 hours on low or 2 to 3 hours on high.
  • When ready to serve, stir in the lemon juice, toasted pine nuts, and basil. Taste and add additional salt as desired. Enjoy warm.

This Chicken Rice Pilaf is a very simple dish. It makes for a dinner that is quite comforting yet very versatile. It's a staple in my house because it uses simple, every day ingredients that we always have in our fridge or pantry.

Number Of Ingredients 15

2 tablespoon butter
2 tablespoon olive oil
1 large onion (chopped)
2 teaspoon salt
2 teaspoon pepper
2 medium carrots (chopped)
2 stalks celery (chopped)
1 ½ pounds chicken breast (skinless and boneless, diced)
2 cups rice (long grain, I used Basmati)
5 cups chicken broth (low sodium)
2 bay leaves
1 cup half and half
½ cup peas (frozen)
2 tablespoon parsley (fresh, chopped)
¼ cup parmesan cheese (grated)

Steps:

  • Add the butter and olive oil to a large skillet or Dutch oven, and heat over medium heat. Once the butter has melted, add the onion and cook for about 3 minutes until the onion softens and has become translucent.
  • Add the carrots and celery, season with half the salt and pepper, stir then cook for 3 more minutes, until the celery and carrots soften a bit.
  • Add the chopped chicken, season with remaining salt and pepper and cook for about 5 minutes until the chicken is no longer pink.
  • Add the rice, chicken broth and stir. Add the bay leaves and half and half; stir. Bring to a boil, turn down the heat to a simmer and cover the skillet or pot. Cook for 20 minutes, stirring occasionally, until the rice is cooked.
  • Stir in the peas and cook for 2 more minutes or until the peas are cooked. Garnish with parsley and more pepper.
  • Serve warm sprinkled with Parmesan cheese if preferred.

Quick, easy, and tasty! Hope you and your family enjoy as much as we do! (Toasting almonds is not included in prep time.)

2 tablespoons butter
1 cup long grain rice (uncooked)
2 cups low sodium chicken broth (can use 2 cups water and 1 1/2 tsp. chicken bouillon instead)
2 -3 green onions, thinly sliced
2 -3 tablespoons low sodium soy sauce
1/4 cup slivered almonds, toasted

Steps:

  • Melt butter in a pot. Add rice; cook and stir several minutes until lightly browned. Pour in broth (or water and bouillon). Bring to a boil. Reduce heat; cover and simmer for 15 to 20 minutes until liquid has been absorbed and rice is tender. Remove pan from heat; stir in green onions and soy sauce. Cover and let sit 5 minutes. Stir in almonds and serve.
