EASY TURKEY CASSEROLE
This casserole was brought to me after a new baby many years ago by a lady at our church. When I asked for the recipe, I couldn't believe how simple it was. We use this for a quick dinner anytime or to use up leftover turkey after Thanksgiving. Can also be made with chicken.

Steps:
- In large pot, cook noodles according to package directions; drain.
- Add all other ingredients, except for potato chips, and mix.
- Add small amount of additional milk if needed until creamy.
- Pour into buttered 2 quart casserole and sprinkle with potato chips on top.
- Bake for 350 for 25-30 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Place potatoes into a large pot and cover with lightly salted water; bring to a boil over medium heat. Cook until barely tender, 4 to 5 minutes. Drain and place in the prepared baking dish with turkey on top.
- Heat oil in a 10-inch skillet over medium heat. Add onion slices; cook, stirring, until barely tender, 4 to 5 minutes. Separate into rings and place evenly on top of turkey.
- Melt butter in the same skillet over medium heat. Stir in flour and allow to bubble. Cook, stirring, about 3 minutes. Stir in turkey stock and return to a boil. Stir constantly for 3 to 4 minutes, then remove from heat. Stir in Parmigiano-Reggiano cheese until melted, then stir in sour cream and pepper. Adjust seasoning if desired. Pour skillet contents into the baking dish, gently shaking the dish to settle the contents. Sprinkle bread crumbs evenly over top.
- Bake in the center rack of the preheated oven until bubbly, about 30 minutes.
- Garnish with parsley and serve warm.

EASY TURKEY POTATO-TOPPED CASSEROLE
This is a basic simple recipe that requires no baking, just simmer ingredients, mix, then put under broiler for 2 minutes, but if you just feel better about baking it...then go ahead and bake it for 8-10 minutes, but it really is not necessary to bake it. It's a great way to use up any leftover turkey (or chicken also!). All ingredients may be adjusted to taste, double the recipe to bake in a 13 x 9-inch pan.

- Drain and mash the potatoes with 1/2 cup half and half or milk, 3 tbsp butter and salt and pepper (can add in a few tablespoons grated Parmesan cheese or 1/3 cup grated cheddar cheese if desired to the mashed potatoes to kick them up a notch!).
- Meanwhile, in a heavy bottom saucepan, melt remaining butter over medium heat.
- Cook the onion and garlic in 1/4 cup butter until softened (about 5 minutes).
- Add in flour; cook, stirring 1 minute.
- Gradually whisk in 2 cups half and half cream, salt and pepper, mustard, lemon juice and thyme; cook, whisking often (about 10 minutes) or until thickened.
- Add cubed cooked turkey and veggies; cook 5 minutes, or until veggies are tender.
- Pour into a greased 8-inch square baking dish.
- Spread potatoes over top; sprinkle with Parmesan cheese.
- Broil for 2 minutes, or until golden brown.

TURKEY POTATO CASSEROLE
This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place turkey in an even layer on the bottom of a 9x13 inch baking dish. Top with a layer of onion and a layer of green beans so that the turkey is no longer visible. Pour the condensed soup over the onion layer, then sprinkle with shredded cheese. Stir together the cubed cheese and mashed potatoes; spoon over the top of the casserole, and spread to cover.
- Bake for 30 to 40 minutes in the preheated oven, until heated through.

POTATO-TOPPED BEEF CASSEROLE
This is similar to Shepherd's pie! No need to serve up mashed potatoes on the side, as they are baked right on top of the casserole! Prep time includes cooking the potatoes and browning the ground beef. You will LOVE this! Throw in some canned mushrooms also into the beef mixture if desired!

Steps:
- Set oven to 350 degrees; Butter a 2-1/2 quart baking dish.
- In a heavy skillet, brown the ground beef in 2 tbsp butter, then add in onion, garlic, red and green bell pepper; saute until soft, spoon off excess fat.
- Add in Parmesan cheese, salt, black pepper, sherry, parsley; saute another 5 minutes.
- Spread the mixture into the prepared casserole dish.
- To the cooked potatoes, add the remaining butter and milk, beat or mix until smooth; season with salt to taste and black pepper if desired.
- Spread the potatoes over meat mixture evenly, making sure corners are covered well (use a spoon to push potato mixture tightly around sides and corners).
- Sprinkle top with grated cheddar cheese (or you can use Parmesan cheese in place of cheddar) bake, uncovered for approximately 25-30 minutes, or until potatoes and cheese are lightly browned.

- Add Potatoes, cook till golden brown the lower heat and cover.
