This Frito Corn Salad recipe is filled with corn, peppers, onion, and crushed Fritos. The perfect side dish for BBQs and potlucks that screams splurge and game time! Use Chili Cheese Fritos for some extra spice.

Ingredients

2 (15 ounce) cans whole kernel corn, drained
2 cups grated cheddar cheese
1 cup mayonnaise
1 cup green pepper, chopped
1/2 cup red onion, diced finely
1 (10 1/2 ounce) bag coarsely crushed regular Fritos corn chips or Fritos chili cheese corn chips
Fritos Scoops for serving

Steps:

Mix first 5 ingredients and chill. Stir in corn chips just before serving. You may not want to add all of the corn chips. Add a little at a time. Some people prefer to just serve the Fritos on the side or crumbled on top. You can eat this with a spoon or as a dip with Fritos Scoops for serving.

MEXICAN CORN DIP

You can use fresh or frozen corn for this Mexican corn dip. If using fresh corn, allow time to roast it on the grill to take away it's raw bite. This dip can be served hot and cheesy or cold and crisp, with roasted green chiles, mayonnaise, cotija cheese, and chile powder will seriously have you considering the double chip dip.

Ingredients

3 cups corn kernels (, (1 pound) fresh or frozen)
1 4 ounce can roasted chiles
3 tablespoons mayonnaise
3 tablespoons sour cream
1 teaspoon chile powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
2 tablespoons cilantro (, chopped )
1/2 cup crumbled cotija cheese
1 cup shredded Mexican blend cheese (, if making this a hot dip)

Steps:

Heat the frozen corn in the microwave for 3 minutes or until warmed. If using corn on the cob, grill the corn in its husks for 4-5 minutes or until tender and fragrant. Cut the corn from the cob and discard the cobs.
Add the corn to a large mixing bowl. In a small bowl, mix the chiles, mayonnaise, sour cream, chile powder, garlic powder, kosher salt. Fold in 1 1/2 tablespoons of the cilantro and half of the cojija cheese. Fold the mayonnaise mixture into the corn. Garnish with the rest of the cotija cheese and cilantro. Sprinkle with a few dashes of chile powder and serve with Kettle Brand potato chips.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

Preheat the oven to 375 degrees F.
Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
Top with the cilantro and serve warm with the corn chips on the side.
