20-Minute Instant Pot Salmon and Rice Bowl image

This fresh, healthful and flavorful meal comes together perfectly in 20 minutes. The rice is seasoned with a bit of vinegar and sugar to mimic sushi rice and the salmon is steamed, so it stays moist and delicate. Make sure you let the pot rest for the full 8 minutes so the the rice has time to absorb all the liquid it needs.

2 cups long-grain rice, rinsed
5 tablespoons rice vinegar
1 teaspoon sugar
Kosher salt
1 1/2 pounds salmon, skin removed, flesh cut into 2-inch chunks
1 medium carrot, peeled
1 bunch scallions
3 Persian cucumbers
1 bunch radishes or 1 small daikon, peeled
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
3 cups raw greens such as arugula, baby spinach, radish sprouts or shredded Napa cabbage
Toasted white or black sesame seeds or furikake, for topping

Steps:

  • Combine the rice, 2 cups water, 2 tablespoons vinegar, sugar and 1 teaspoon salt in a 6-quart Instant Pot®. Place the salmon on top and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 3 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 8 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Meanwhile, thinly slice the carrot, scallions, cucumbers and radishes or daikon and place in a large bowl. Toss with the remaining 3 tablespoons rice vinegar, soy sauce and sesame oil. Right before serving, toss with the greens. Divide the salmon and rice between four bowls, top with salad and sprinkle with the sesame seeds or furikake.

Searing salmon in a tangy lime and ginger caramel that's spiked with Asian fish sauce is one of my favorite ways to cook the fish. Usually I make this in a skillet, starting it on the stovetop and finishing it in the oven. But it cooks beautifully and very quickly in the pressure cooker, turning wonderfully tender. If you like your salmon slightly rare in the center, seek out thick center-cut fillets. They are less likely to overcook than are thinner pieces. 1 tablespoon coconut oil, melted, or 1 tablespoon extra-virgin olive oil
1/3 cup packed light brown sugar
3 tablespoons Asian fish sauce
1 1/2 tablespoons soy sauce
1 teaspoon grated peeled fresh ginger
Finely grated zest of 1 lime
Juice of 1/2 lime
1/2 teaspoon freshly ground black pepper
4 skinless salmon fillets, preferably center-cut pieces, 6 to 8 ounces each
Sliced scallions (white and green parts), for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Using the sauté function, whisk together the oil, brown sugar, fish sauce, soy sauce, ginger, lime zest and juice, and black pepper in the pressure cooker. Bring to a simmer and then turn off the heat.
  • Place the fish in the pressure cooker, skin-side up (if there is skin still attached, that is). Spoon the sauce over the fish, cover, and cook on low pressure for 1 minute. Let the pressure release naturally for 5 minutes; then release the remaining pressure manually. Check the fish for doneness by cutting into one of the fillets. If you prefer your salmon more well-done, cook it for another minute using the sauté function.
  • Carefully lift the salmon fillets onto a serving platter, flipping them over so the browned caramelized side is facing up. Reduce the sauce on the sauté function until it is thick and syrupy, about 3 minutes. Spoon the sauce over the salmon and garnish it with the scallions and cilantro.

1 pound salmon fillets
⅓ cup brown sugar, divided
2 teaspoons lemon pepper, divided
1 teaspoon garlic powder, divided
⅓ cup low sodium soy sauce
1 tablespoon olive oil
1 (1 inch) piece fresh ginger root, minced
⅓ cup orange juice

Steps:

  • Rub salmon with about 1 tablespoon brown sugar. Lightly sprinkle with lemon pepper and garlic powder; rub seasoning into fish.
  • Into a small saucepan set over medium heat, pour soy sauce and olive oil. Stir in ginger and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar has dissolved. Remove from heat, stir in orange juice.
  • Place fish and marinade into a resealable plastic bag, seal, and refrigerate overnight, or for at least 3 hours.
  • Preheat broiler. Place fish in a foil-lined baking pan. Reserve marinade.
  • Broil fish skin-side up, 2 minutes. Remove from oven, pull skin off with tongs. Baste with marinade, return to oven, and broil 2 minutes more. Turn fish, and broil until fish flakes easily, about 4 minutes. Remove from oven, and let sit 5 minutes before serving.

1 tablespoon sesame oil
2 cloves garlic, minced
⅔ cup light soy sauce
3 tablespoons rice wine
3 tablespoons rice vinegar
1 ½ teaspoons ground ginger
½ teaspoon wasabi paste
2 (5 ounce) salmon fillets

Steps:

  • Heat sesame oil in a skillet over medium heat; stir in garlic. Cook and stir until fragrant, about 1 minute. Transfer to a large glass or ceramic bowl.
  • Add soy sauce, rice wine, rice vinegar, ginger, and wasabi paste to the garlic-sesame oil mixture; whisk to combine. Add salmon fillets and turn to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 20 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Remove fillets from the marinade, shake off excess, and place on the prepared baking sheet. Discard the remaining marinade.

SALMON WITH SESAME, SOY & GINGER NOODLES

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

4 tbsp dark, light, low-salt (or a mixture) soy sauce
4 tbsp rice wine or mirin
1 stem ginger, finely chopped, plus 2 tbsp syrup from the jar
1 garlic clove, crushed
2 salmon fillets
140g any noodle
2 tbsp sesame seed
2 spring onions, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.
