FOIL-BAKED FLOUNDER
Flounder fillets are cooked in a foil packet with a butter sauce. Sealing the fish in the packet while cooking results in an extra flaky and tender dinner.

Steps:
- Preheat oven to 350 degrees F. Place the flounder fillets on a sheet of aluminum foil. Top the fillets with the sliced onion and minced garlic. Combine the lemon juice, melted butter, Worcestershire sauce, salt, and pepper until smooth. Evenly drizzle the sauce over the fish. Dot the fish with small bits of butter and sprinkle with the fresh parsley. Pull up the sides of the aluminum foil and wrap over the fish and seal the edges. Place the foil packet on a baking sheet with rimmed sides and place in the oven. Bake at 350 degrees F for 15-20 minutes or until the fish flakes easily (open one corner of the packet to test). Remove the fish from the oven and serve hot.

Steps:
- Preheat the oven to 425 degrees F.
- Season the fish fillets with the salt and pepper. Place 1 fish fillet at the center of each piece of foil. Evenly distribute the zucchini, carrot, bell pepper, and shallots among the 4 packets. Sprinkle each fillet with 2 tablespoons of the wine and 1/2 tablespoons of the oil. Top each fillet with 3 lemon slices. Seal the packets securely, leaving a little room to allow the fish to steam. Transfer the packets to a baking sheet and bake for 15 minutes.
- Stir the parsley into the cooked rice. Divide the rice evenly onto 4 serving plates. Remove the fish packets from the oven and carefully open them. Remove the lemon slices. Serve the fish topped with the vegetables and juices over the rice and garnish with fresh chives.

- Pre-heat oven to 400F degrees.
- Cut fish into four equal pieces. Set aside
- In a small glass bowl whisk the olive oil, minced garlic, oregano, salt and pepper. Set aside
- Cut 8 pieces of aluminum foil that is big enough to accomodate the fish and vegetable.
- Place one piece of foil on the counter/ work surface. On the first layer add 5-6 asparagus spears. On top of the asparagus place 6 zucchini rounds. Place the fish on top of the zucchini. Top the fish with 2-3 cherry tomatoes, whole or halved.
- Season each fish and vegetable packet with garlic oregano oil.
- Top the fish with a second piece of foil. Fold both bottom and top foil pieces together tightly.
- Place the fish packets on a sheet pan and bake for 18-20 minutes.
- Carefully open fish packets away from your face, as it will release lots of hot steam.
- Completely remove the top foil. You can either serve the fish in foil packets or slide the fish and vegetables onto a plate. Add a lemon slice and fresh cilantro to each packet

- Preheat oven to 425 degrees.
- For each serving, grease a shallow 2-cup baking dish or gratin dish with /2 tsp of the butter or margarine.
- In a small saucepan over medium-low heat, melt the remaining butter or margarine; stir in the bread crumbs and set aside.
- Slice the potatoes and onion as thinly as possible and arrange them in alternating layers in the prepared dishes. Pour the cider or apple juice over the vegetables and sprinkle with salt and pepper. Bake for 20 minutes.
- Reduce the oven temprature to 350 degrees.
- Spoon the liquid in the baking dishes over the vegetables to baste them, then arrange the fish over the vegetables, folding the tips of any long, thin fillets under if necessary to fit them into the baking dish. Sprinke the buttered crumbs over the fish and bake for 10 to 15 minutes, or until the fish is opaque and firm to the touch and the crumb topping is golden brown.

BROILED FLOUNDER (SO EASY!)
This is one of the easiest ways to prepare fish. We ate lots of flounder growning up. I say that tongue-in-cheek. We actually did eat lots of fish, but for some reason when she was really little my baby sister declared the only fish she liked was flounder. So whenever we had fish, no matter what kind it was, if somewhat asked what kind of fish it was we always answered, "Flounder (wink,wink)."
