HUSH PUPPIES
The story of the hush puppy comes from back in the antebellum days in the south. When the planters had a fish fry, the food was cooked outdoors. The dogs would gather around and hope for a scrap of food (some things never change!). The hush puppy was originally just a piece of fried dough that was thrown to the dogs to keep them happy. The secret of a good hush puppy is the temperature of the oil. It has to be hot enough to cook, but not so hot that the outside is hard and inside is mush. If your oil is smoking, it is way too hot! Peanut oil works great, but isn't required. These are fabulous with fried fish or shrimp. **Cooking is time is for 2 batches

Steps:
- Mix together the cornmeal, flour, baking soda, baking powder and salt. Add the grated onion and sliced green onions.
- Take the egg yolk and buttermilk and blend into the batter. Whip the egg whites into stiff peaks. Fold the egg whites into the batter until it reaches a good consistency. (The amount of egg white depends on the size of your eggs).
- Drop by teaspoonful into hot oil (in a deep fryer or in a dutch oven -- the oil needs to be deep enough to cover the hush puppies). Cook until golden brown.

Steps:
- In a medium bowl, mix the cornmeal, flour, baking powder, pepper, salt, sugar, baking soda and cayenne. In another bowl, gently mix the buttermilk, scallions and eggs.
- Whisk the wet and dry ingredients together until just combined, then rest the batter for 10 minutes.
- In a 6-quart stockpot, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 to 360 degrees F. Drop small scoops or rounded tablespoons of the batter into the oil in batches of eight. As soon as the hush puppies start to float, use tongs to rotate and cook until both sides are crisp and light golden brown, 60 to 90 seconds. It helps to put a pasta strainer on top of the hush puppies at this point to keep them submerged. Use a slotted spoon to remove the hush puppies, and transfer to a clean brown paper bag to remove excess grease. Repeat for the remaining batter, about 24 hush puppies total.
- Serve the hush puppies steaming hot.

Steps:
- Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
- When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

Editor's Note: These Baked Hush Puppies are perfect for just about any event on your social calendar! You can serve up these Baked Hush Puppies as a tasty side dish for a cookout or a tailgate party. Are you making soup for dinner tonight? Then this side dish will be the perfect accompaniment to a bowl of chicken or tomato soup. This easy quick bread recipe can be whipped up and ready to bake within minutes, and the ingredients list includes items you likely already have on hand at home. You'll love that you can make any meal a little more Southern when you include this recipe, too. For those of you who aren't familiar with them, hush puppies are crunchy little cornmeal fritters. We always have them at fish fries, and they're a real hit with kids (and everyone else). This is a healthier version of one of our Granny Paul's specialties. We bake them in mini muffin pans to have on hand for a snack. They travel well, too, so they're a great lunch box option.
