GRILLED STEAKS WITH CILANTRO SAUCE

Steps:
- Place herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a food processor; pulse until herbs are chopped. Gradually add oil, vinegar, lemon juice and pepper flakes, processing just until blended., Sprinkle steaks with remaining salt and pepper. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Cut steaks into 1/4-in. slices; serve with sauce.

SIRLOIN STEAK WITH TOMATO AND CILANTRO SAUCE
Steps:
- Rub cumin and chili powder onto both sides of steak, then sprinkle with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add steak to skillet and sauté until cooked to desired doneness, about 4 minutes per side for medium-rare. Transfer steak to plate. Add remaining 1 tablespoon oil to skillet. Add garlic and stir 1 minute. Add tomatoes and cilantro. Cook until tomatoes begin to soften, about 4 minutes. Season sauce with salt and pepper.
- Cut steak crosswise into thin slices. Arrange slices on platter. Mix any steak juices into sauce. Spoon sauce over steak.

Steps:
- In a large saucepan, combine water, bouillon, 1/4 teaspoon pepper, red pepper flakes, garlic salt, and chili powder, and bring to a boil.
- Reduce heat, and simmer for 15-20 minutes.
- Meanwhile, in a large skillet saute red pepper, and onion in 2 tablespoons butter until tender. Remove and keep warm.
- Fry the bacon until fully cooked.
- Sprinkle salt and remaining pepper over the beef.
- In the same skillet that was used for onion, and red pepper, cook the beef in remaining butter over medium-high heat until no longer pink.
- Spoon mixture onto roll bottoms, and top with onion mixture, cheese, and bacon.
- Replace with roll tops.
- Serve with sauce in step 1.

I'm not sure where I came across this sauce but I've used it on steak, chicken and seafood and everyone loves it.

SIRLOIN STEAK WITH SPICY CILANTRO SAUCE (YES YOU CAN DIET)

- To prepare Sauce: 1. Place onion in a medium bowl, cover with ice water and let soak for 10 to 20 minutes and drain. 2. Combine the onion, tomato, cilantro, jalapeño, vinegar, garlic, and 1/4 tsp salt in a medium bowl. 3. Preheat oven to 325°F. To prepare steak: 1. Mix paprika, cumin, oregano, 1/2 tsp salt and pepper in a small bowl. Rub the spice mixture evenly over both sides of steaks. 2. Heat a layer of the cooking spray on a ovenproof skillet, such as cast iron, over medium-high. Add the steaks and cook just until browned, 1 to 2 minutes per side. 3. Transfer the pan to the oven and roast the steaks 5 to 7 minutes for medium-rare, depending on thickness. 4. Transfer to a clean cutting board. Tent with foil and let rest for 5 minutes. 5. Meanwhile, mash avocados with the remaining 1/4 tsp salt in a small bowl. 6. Carve the steak into thin slices. Serve with the avocado and sauce.

- To roast your own poblano peppers: place on an aluminum foil-lined sheet pan 4 inches below a broiler. Turn regularly until blistered and blackened all over, 5 to 10 minutes. Place in a bowl, cover with a kitchen towel, and let cool for 10 minutes. Rub the blackened skin off and remove stems and seeds. Rinse chiles to remove skin and seeds, if necessary.
- Sauce: In a large skillet, heat 1 tablespoon oil over medium heat. Add onion and red peppers; season with salt. Cook, stirring often, until golden-brown, about 10 minutes. Add garlic; cook until fragrant, about 1 minute. Add tomato, poblano peppers, and 1/2 cup water. Reduce heat; simmer until thickened, about 10 minutes. Remove from heat; add lime juice and season to taste with salt.

- Place steak in a zip-top plastic bag or in a shallow casserole dish.
- Combine wine, 1 tablespoon of the olive oil and garlic; spoon over steak.
- Close bag, turning to coat steak or turn steak over in dish.
- Cover and refrigerate at least 2 hours or up to 24 hours.
- Prepare charcoal or gas grill.
- Drain steak, reserving marinade.
- Sprinkle dried thyme, salt and pepper over steak.
- Grill on a covered grill over medium-hot coals 6 minutes.
- Turn; continue grilling 5 minutes for medium-rare doneness.
- Transfer steak to carving board; tent with foil and let stand 5 minutes.
- Meanwhile, heat remaining 1 tablespoon oil in a small saucepan over medium heat.
- Add flour; cook 1 minute or until bubbly, stirring frequently.
- Add broth; simmer until sauce thickens, stirring occasionally.
- Add reserved marinade and olives; simmer 2 minutes.

- Spoon olive sauce over steak and top with thyme or parsley.

- In small bowl, combine 3 tablespoons soy sauce, olive oil and hot chili oil; whisk until blended.
- In second small bowl, combine garlic powder and 3/4 teaspoon pepper.
- Place beef steak in large shallow dish.

- Place on grid near edge of grill to heat until hot. Carve steak crosswise into thin slices; arrange on heated platter.
- Spoon sauce over beef; garnish with lime slices and cilantro sprigs.
- Serve immediately.
- Tip: To broil, place steak on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 16 to 21 minutes, turning once.
