Four 6- to 7-ounce salmon fillets, skin-on
1/2 cup low-fat mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons finely chopped chives, plus additional for garnish
Kosher salt and freshly ground white pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a large baking sheet with a nonstick silicone liner, and lay the salmon, skin side down, on top. Set aside.
  • Combine the mayonnaise, mustard, honey and chives in a medium bowl and stir to thoroughly combine. Reserve half of the sauce. Spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet. Sprinkle with salt and pepper.
  • Roast just until the fish is opaque in the center, 7 minutes. Increase the oven to broil. Broil the fish for 6 to 7 minutes, but keep your eye on it to avoid overcooking. Garnish with chives and serve with the reserved sauce.

8 ounces creme fraiche
3 tablespoons Dijon mustard

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
  • Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. 1 orange, juiced
1 lemon, juiced

1 green bell pepper, sliced

1 clove garlic, finely chopped

2 tablespoons olive oil
2 pounds boneless bluefish, skin intact, cut into even-sized pieces
olive oil, for brushing
1 lime, cut into wedges, for serving

  • In a bowl, whisk the lime juice, mustard, garlic, salt, pepper, and oil. Place the fish on a deep platter and pour the marinade over it. Turn the fish to coat it all over. Refrigerate for 20 minutes. Prepare a charcoal or gas grill. Brush the rack with oil. When the coals are gray or the gas grill is hot, set the fish on the grill skin side down. 2 bay leaves
1 tablespoon shredded carrot

3 tablespoons Dijon mustard
1 dash salt

  • Place water, lemon, onions, carrots, bay leaves, peppercorns in a deept skillet and bring to a boil over high heat.
  • Add fish in a single layer.

  • Save the cooking liquid for the sauce.
  • Place fish on a warm platter.
  • To make the mustard sauce, melt butter in a small saucepan.
  • Add flour, a little at a time, stirring well.
  • Stir in liquid from fish.
  • Add mustard, salt and sugar. Stir well.
  • Remove from heat, add 1 tablespoon of the cream or milk. Sauce should be smooth and creamy. If sauce is too thick, add more cream or milk.

Steps:

  • Dry fish completely and set aside. Preheat a skillet over medium-high heat. Add avocado oil.
  • When skillet is hot, sprinkle the fish with salt and add the fish to the pan. It should sizzle when it goes in the pan. If it doesn't sizzle, your pan isn't hot enough. Be sure the sides of the fish don't touch. Do not move the fish until it releases from the pan. When it releases, turn the fish. When second side is done. remove fish from the pan, place on a plate and keep warm.
  • Add shallots to the pan and cook until edges start to brown.
  • Stir in white wine vinegar. Using a spatula, scrape up any brown bits left in the pan. When vinegar is almost completely evaporated, pour in the heavy whipping cream.
  • Heat the sauce, stirring frequently, until it reaches the desired thickness. Next, stir in the mustard and tarragon. Taste the sauce and add salt to taste. To serve, spoon the sauce over the fish.

Steps:

  • Preheat the oven to 425°F and line a small baking sheet with foil.

  • Move salmon to a platter and tent with foil and let rest for 5-10 minutes.
  • In a small skillet set over medium heat, add the butter to the pan and when melted, sauté the shallot until translucent. Add the vinegar, white winer and cream. Simmer until reduced and thickened, about 10-12 minutes. Stir in the salt and pepper.
  • Remove from heat and whisk in the mustard.
  • To serve, Plate the salmon and spoon sauce over each serving.

  • Bring the mustard sauce to the boil, remove from the heat and place the fish fillets next to each other in the sauce and poach for 3-5 minutes. Heat the mashed potatoes, season to taste again and arrange on a warm plate in the middle. Remove the fish fillets from the sauce with a skimmer and place them on top of the mashed potatoes.
  • Mix the mustard sauce with a hand blender and pour into the dish. Serve decorated with dill and capers.

  • Meanwhile in a separate saucepan heat some water, add the sliced carrots and salt and pepper. Cook for 2-3 minutes. Add the leeks and continue to cook for another couple of minutes until the vegetables are tender. Drain well.
  • Gently remove the fish from the water and drain on kitchen paper. Divide the vegetables between four warmed plates, place a fillet of hake on top and spoon over the dressing.
