STUFFED MUSHROOM APPETIZERS
I have been making these for about 25 years now! Just as good now as they were back then! VERY addicting! A classic stuffed mushroom!

Steps:
- Wash and dry mushrooms.
- Remove stems and chop fine to measure 1/3 cup.
- In small frying pan, saute chopped mushroom stems, onion and green pepper in 3 Tbl. butter til soft.
- Remove from heat and stir in rest of ingredients except whole mushroom caps.
- Stuff mushroom caps with filling.
- Melt 1 Tbl. butter.
- Pour butter into shallow baking dish.
- Place mushrooms in baking dish.
- Bake 15 minutes in 350º oven.
- Raise oven temp to broil.
- Broil, 3-4" from heat.
- Broil 1-2 minutes.
- Serve hot.
- *You don't have to broil these if you prefer not to.

Steps:
- Beat eggs and milk together until fluffy.
- Mix in pepper.
- Dip mushrooms into egg mixture.
- Then roll in bread crumbs.
- Heat butter in a large skillet over medium heat until hot.
- Fry mushrooms stirring occasionally until they are tender and batter is brown.

MUSHROOM APPETIZERS
A great appetizer, tasty. A nice blend of flavors You may make the mushroom fill ahead and freeze it. I usually split it into 4 bags so I can make only a dozen at a time. Thaw from frozen and continue to make the bread nappies.

Steps:
- Melt butter in a large fry pan and add the onions and mushrooms, Saute until soft.
- Add Mozzarella, parmesan, parsley, egg,salt& pepper, cook for 1 minute and remove from heat.
- Roll each crustless slice of bread to flatten it, butter each piece and cut each slice into 4 square pieces.
- Press bread pieces, the buttered side down, into a tiny muffin tins.
- Fill with mushroom mixture (about 1 1/2 tsp to each tartlet).
- Cut the 3 cheese slices into 16 pieces so you will have 48 pieces and put a piece on top of each tartlet.
- Bake in 350f oven for 20 to 25 minutes.
MUSHROOM PIROSHKIE(PIEROGI) APPETIZERS T-R-L
Russian version of Pierogi apps. Quick, easy, and "freezable"! The size of the piecrust pkg is a guess. I'd use something like Jiffy piecrust mix. Also, if you have a potsticker former, you can use it to cut and fold these.

Steps:
- Preheat oven to 400ºF.
- In medium skillet, saute onions in butter just until tender.
- Add mushrooms; saute 3 minutes.
- Stir in salt, pepper, and egg yolk; cool.
- In medium bowl, combine pie crust mix and sour cream; mix until ball forms.
- Divide in half; roll half lightly on floured board to 1/8-inch thickness.
- Cut into rounds with 3-inch cookie cutter.
- Spoon about 1 tsp filling onto half of circle.
- Moisten edges of pastry with water; fold half circle over and press edges with fork.
- Repeat with remaining pastry and filling.
- Place on ungreased cookie sheets.
- Bake for 15-18 minutes or until light golden brown.
- Serve hot.
- TO MAKE AHEAD:.
- Piroshkies can be frozen on cookie sheet before baking, then place in plastic bags.
- Bake at 400 degrees F for 15-18 minutes.
