This is my daughter's favorite egg dish. It has less fat, salt, and calories, but all the taste of the original version. Instructions are easy enough for my beginning cook to make on her own with minimal supervision.

12 eggs
1 quart fat free half-and-half
freshly ground black pepper to taste
6 slices whole grain bread
2 cups chopped fresh spinach
2 cups ham cubes
½ cup thinly sliced green onions
1 (8 ounce) package shredded fat-free sharp Cheddar cheese
6 slices whole grain bread, cut into cubes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Prepare a 13x9-inch baking dish with cooking spray. Put an oven rack in the middle tier of the oven.
  • Beat eggs, half-and-half, and black pepper together in a bowl until smooth.
  • Arrange 6 bread slices into the bottom of the prepared baking dish. Spread about half the ham and half the spinach over the bread. Sprinkle half the green onions and half the Cheddar cheese over the ham and spinach. Spread the bread cubes over the layers and pour 1 cup of the egg mixture over everything. Repeat layering of ham, spinach, green onions, and Cheddar cheese and pour remaining egg mixture over the top.
  • Cover dish with plastic wrap. Put some soup cans atop the plastic wrap to help keep ingredients immersed in liquid; refrigerate at least 15 minutes.
  • Bake in preheated oven until the liquid sets in the middle of the dish, about 50 minutes. An instant-read thermometer inserted into the center should read 155 degrees F (68 degrees C). Let the casserole stand for 8 to 10 minutes before serving.

1 loaf (1 pound) herb or cheese bakery bread, cubed
1 pound bulk pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 cup shredded cheddar cheese
6 large eggs
1 teaspoon ground mustard
2 cups 2% milk

Steps:

  • Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. With a slotted spoon, place sausage mixture over bread. Sprinkle with cheese., In a large bowl, whisk together eggs, mustard and milk; pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats., Bake, uncovered, until a knife inserted in center comes out clean, 30-35 minutes. Let stand 5 minutes before cutting. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 pound sliced fresh mushrooms
1 tablespoon vegetable oil
1 quart half-and-half
12 eggs
1 teaspoon salt and several grinds of pepper
12 slices fluffy white bread
1 pound cubed fully cooked ham
12 ounces extra-sharp cheddar cheese, grated
½ cup thinly sliced scallions

Steps:

  • Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
  • Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.
  • Line bottom with 6 slices of bread. Scatter half of the ham, and half of the mushrooms over the bread, then sprinkle with half of the scallions and cheese. Pour 1 cup of egg mixture over the top. Repeat layers with remaining bread, ham, mushrooms, cheese and scallions. Slowly pour remaining egg mixture evenly over top. Cover with plastic wrap, then weight down casserole with 3 16-ounce cans for at least 15 minutes to submerge ingredients. (Can be refrigerated overnight, but return to room temperature before baking.)
  • Adjust oven rack to middle position. Bake in preheated 325-degree oven until custard is just set, about 50 minutes. Turn on broiler and broil until strata is spotty brown and puffy (watch carefully), about 5 minutes longer. Let stand for 8 to 10 minutes, then serve immediately.

These easy-to-make individual stratas are sure to become a family favourite. Wake up to a delicious aroma by making them the night before and popping them into the oven in the morning. They are perfect for making together on the weekend.

2 slices whole-grain bread
1 1/2 cups ( 375 mL ) chopped cooked broccoli
½ cup ( 125 mL ) shredded light old Cheddar or Swiss cheese
¼ cup ( 60 mL ) chopped lean ham
2 tbsp ( 30 mL ) chopped fresh parsley
¾ cup ( 175 mL ) skim milk
3 eggs
1 tsp ( 5 mL ) Dijon mustard
Pinch fresh ground black pepper

Steps:

  • Using a serrated knife, cut bread into 1 cm (½ inch) cubes and place in large bowl. Add broccoli, cheese, ham and parsley and mix. Divide among four 250 mL (1 cup) ovenproof ramekins, or bowls, and place on a small baking sheet.
  • In another bowl, whisk together milk, eggs, mustard and pepper until well combined. Gently pour over top of each bread mixture; press down gently with a fork so the bread absorbs the egg mixture. Let stand for 15 minutes or alternatively, cover and refrigerate for up to 12 hours.
  • Bake in preheated 190°C (375°F) oven for about 35 minutes or until puffed and edges are golden, and a knife inserted in centre comes out clean. Use a digital food thermometer to check that eggs have reached an internal temperature of 74°C (165°F).

4 thick slices hearty whole-wheat/wholemeal or multigrain artisan bread {about 4 1/2 oz/130 g}
2 large eggs, lightly beaten
1 cup/240 ml whole milk
8 oz/225 g grated Fontina cheese {about 1 cup}
Sea salt
Freshly ground black pepper
6 to 8 asparagus stalks
4 thin slices mortadella or prosciutto {optional}
1 tbsp finely snipped chives

Steps:

  • Preheat the oven to 350°F/180°C/gas 4. Butter a small 4-cup/960-ml ovenproof baking dish.
  • Remove the crusts from the bread and cut into slices; you should have about 3 cups. Lay the slices across the baking dish, slightly overlapping and allowing some edges to hang over the sides.
  • Whisk together the eggs and milk in a large bowl. Stir in half of the cheese and season with salt and pepper. Pour three-fourths of the egg mixture over the bread cubes.
  • Peel the bottom half of the asparagus and break off the stem ends where it snaps naturally. Discard any woody stems.
  • Layer the mortadella over the bread and top with asparagus spears. Pour the remaining egg mixture over the top and finish with the remaining cheese. At this point, you can bake the strata immediately, or cover with plastic wrap/cling film and refrigerate overnight for a surprise breakfast in bed.
  • Bake the strata until just set, 30 to 35 minutes. Let cool slightly, sprinkle the top with chopped chives, and serve in the baking dish.

4 cups cubed day-old French bread
1 cup pre-cooked, crumbled or chopped breakfast sausage
1 cup shredded cheese (such as cheddar or Swiss)
4 large Eggland's Best eggs
1 cup milk (2% or whole)
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Prepare the pan: Lightly grease an 8-inch square pan. Build the layers: Add half the bread cubes to the pan. Sprinkle half the sausage and half the cheese on top. Repeat with another layer of bread, sausage and cheese. Make the filling: In a large bowl, whisk the eggs until beaten. Whisk in the milk, mustard, salt and black pepper until well-blended. Pour the mixture in the pan over the bread. Gently press down on the bread with the back of a fork or a spatula to help the bread absorb the liquid. Refrigerate the strata: Lightly cover the strata, and refrigerate for at least 4 hours or overnight. Remove the strata from the refrigerator about 30 minutes before baking. (Putting the strata right in the oven can be risky- the sudden change of temperature can cause some pans to crack or break). Preheat the oven to 325 degrees F. Bake the strata: Bake for 50 to 65 minutes, or until the center appears set and a knife inserted into the center comes out clean. Cool 10 to 15 minutes before cutting and serving.

Steps:

  • Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
  • In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
  • Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
  • Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!
