STRAWBERRIES AND CREAM PANCAKES
Depending on how you slice your strawberries you can have a more syrupy dressing or a chunky sauce!

Steps:
- Combine the strawberries, sugar, lemon juice, balsamic vinegar, and salt in a large saucepan over medium heat. Mixing frequently, cook until the strawberries breakdown and resemble a thickened sauce (about 5-8 minutes.) Remove from heat, stir in vanilla, and set aside.
- Combine the 1 cup cream and lemon juice together. Set aside to combine.
- In a medium mixing bowl, add the flour ,salt, baking soda, and baking powder. Whisk to combine.
- Once the cream and lemon juice have time to react, whisk in the egg, melted butter, and vanilla until combined.
- Pour the wet mixture into the dry mixture. Stir in the 1/4 cup strawberry sauce and mix until just combined. I usually give the batter a quick taste to see if it needs more seasoning.
- Heat a large frying pan over medium-low heat. Add in some butter or coconut oil (I prefer the coconut oil) and allow it to melt. Once the pan is nice and hot, add 1/4 cup portions of batter to the pan. Cook until the underneath side is nice and golden. Flip, and do the same for the remaining side. Cook until no batter remains.
- Stack the pancakes and pour some strawberry sauce over top. Finish off with the whipped cream!

- Combine all strawberry butter ingredients in medium bowl. Using potato masher, mash until well combined. Cover; refrigerate until serving.
- Combine flour, baking powder, baking soda and salt in medium bowl. Set aside.
- Beat cream cheese and egg in large bowl until well combined. Stir in buttermilk, melted butter and sugar until combined. Add flour mixture, stirring just until combined. Add sprinkles; stir just until combined. Do not over mix. Batter will be thick and lumpy.
- Heat lightly greased griddle to 350°F or until drops of water sizzle on surface.
- Pour batter into squeeze bottle. Squeeze batter into heart shapes onto griddle, using about 1/4 cup batter per pancake. Cook 2-3 minutes or until bubbles form on surface. Turn; continue cooking 1-2 minutes or until light brown.
- Serve warm with strawberry butter and powdered sugar.

- Make the syrup: Add 3/4 cup water, the brown sugar and salt to a medium saucepan over medium heat. Bring the mixture to a simmer and stir until the sugar dissolves. Let simmer for 25 to 30 minutes, stirring occasionally. Let cool before serving.
- Make the pancakes: Preheat the oven to 200 degrees F. Whisk the flour, granulated sugar, salt, baking powder and baking soda in a large bowl. Add the buttermilk, eggs and cooled melted butter to a second bowl and whisk to combine.
- Make a well in the center of the dry ingredients and add the wet mixture. Stir with a rubber spatula until just combined. Do not over mix or you'll end up with tough and chewy pancakes!
- Heat a large electric griddle or nonstick frying pan over medium heat. Add a few drops of vegetable oil and a pat of butter. Once the butter melts, wipe the skillet with a paper towel. Ladle about 1/4 cup batter onto the griddle for each pancake. Place a small handful of sliced strawberries on top of the pancakes. Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown, about 2 more minutes. Repeat with the remaining batter; put the finished pancakes on a sheet tray and keep warm in the oven as you finish.
- Arrange the pancakes on individual plates and serve with the syrup.

- Place the strawberries in a medium sized pan with lemon juice and sugar. Cook over medium low heat until strawberries cook down and thicken, about 20 minutes. Mash them with the back of a spoon or potato masher for a smoother sauce. Set aside and keep warm.
- Combine flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs and milk. Add the cream cheese in, breaking into pieces. Using a hand mixer, gently blend in the cream cheese. You will have some small chunks of cheese that don't get blended, that is good.

- Mix all of the dry ingredients together in a large bowl
- Now add the milk, butter, vanilla extract and slightly beaten eggs to the dry mixture
- Once all mixed heat a little bit of butter in your frying pan if it is not non-stick and start pouring in the batter to make a neat medium sized circle. Fry 1 minute on each side, or until the pancake is golden brown. Repeat this process until all of the mix is used up.
- Add the strawberries to the pancakes while on your plate and scoop the mascarpone
- cheese on top!
- If you like to over indulge, add on some golden syrup as well!! SUGAR OVERLOAD!!!
