HEALTHIER SWEDISH MEATBALLS
This recipe is a healthier take on a classic Swedish meatballs dish without sacrificing the elegance or taste. No one will ever know from tasting this dish that it is a lighter, healthier version.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a pan over medium-high heat. Saute onion in the hot oil until transparent, 5 to 7 minutes. Remove from heat and let cool.
- Combine ground sirloin, ground pork, bread crumbs, onion, egg, milk, garlic powder, salt, pepper, and 2 dashes Worcestershire sauce in a bowl. Form into 1-inch meatballs. Place onto a baking sheet.
- Bake in the preheated oven until no longer pink in the centers, about 20 minutes.
- Pour 4 cups beef broth, soy sauce, rosemary, and remaining Worcestershire sauce into a large skillet. Bring to a simmer.
- Pour remaining beef broth into a measuring cup and whisk in cornstarch. Pour mixture into the sauce and stir until thickened. Add meatballs to the sauce and stir in Greek yogurt. Top with parsley and serve.

- Preheat oven to 375 degrees F and line 2 large baking sheets with unbleached parchment paper and spray with cooking spray. Or I love using silicone baking mats, no oil necessary. In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
- Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
- Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
- Serve hot as an appetizer or main dish.

SIMPLE LOW FAT MEATBALLS.
I got this recipe from a Women's Health magazine. They suggest you add Cajun seasoning to these since they are supposed to be an appetizer. Also, their nutritional information is that these have 20 calories each, .5 fat grams, and 3 grams of protein. Not a significant source of sodium, carbs, or fiber.

- Preheat oven to 375°F.
- Dice tenderloin into one inch cubes.
- In a blender, add all ingredients and pulse about 16 times until well mixed and evenly ground.
- Roll into 32 meatballs.
- Place on baking pan and spritz with Olive oil.
- Bake for about 10 minutes or until juices run clear and they are no longer pink.
- **Note: I am saying this makes 32 servings for nutritional ease of understanding. However, I would say if people eat about four each, then you would really get 8 servings.

- In a large bowl, stir together the grated Parmesan cheese, almond flour, Italian seasoning, sea salt, and black pepper.
- Whisk in the milk, grated onion, egg, garlic, and fresh parsley. Let the mixture sit for a couple of minutes.
- Mix in the ground beef using your hands, until just incorporated. (Don't over-mix to avoid tough meatballs.)
- Form the mixture into 1 in (2.5 cm) balls and place on the lined baking sheet. (A small cookie scoop this size works well for this. If using your hands, use a gentle touch and don't pack the meatballs too tightly.)
- Bake for 10-12 minutes, until the meatballs are barely done. (If you want them more golden, you can place them under the broiler for a couple of minutes.)
- Top each meatball with marinara sauce. Return to the oven and bake for 3-5 minutes, until the sauce is hot and meatballs are cooked through. Garnish with additional fresh parsley.

We love these juicy, Italian ground turkey meatballs in homemade tomato sauce. Serve them over your favorite pasta, pizza or sandwich!

- In a medium size pot, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer on low 5-10 minutes.
- Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using wet hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ping ball (1/8th cup each).
- If you wish, you can brown the meatballs in a skillet, or brown them in the broiler on a sheet pan until the tops are golden, 7 to 8 minutes. OR you can gently plop them right into the sauce.
- Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and onion and serve over pasta or whole wheat Italian bread.

- Add the beef and pork to a medium bowl and break up into smaller chunks, aiming for an even mix.
