PORK MEAT AND SAUSAGE TOMATO SAUCE
This, my friends, is pork meat and sausage tomato sauce, slowly cooked: Italian pasta at its best! Trust me when I say you will fall in love with this sauce.

Steps:
- Finely chop the carrot and the onion and let them 'sweat' with abundant extra-virgin olive oil;
- Seal the pork meat and sausage (just keep the meat, not the skin!) in the pan, with lid on, for 5-10 minutes;
- Add the white wine in the pan and let everything evaporate;
- Now it's time to add the tomato passata and the bay leaves. Add chilli as well, if you like things spicy :-) ;
- Let everything simmer at low heat for at least 1.5 hour. This will taste fantastically;
- After that, remove the pork meat and set it aside on a plate;
- Put the pasta to cook and when 'al dente', mix it up with the tomato sauce. Now your pork meat and sausage tomato sauce mixed with pasta is ready to eat;
- Crack more black pepper on top, add some grated cheese and...
- ENJOY!

GARLIC PORK SAUSAGE

- In a large bowl, combine the pork, garlic, sage, salt and crushed red pepper. Run the meat mixture through the meat grinder outfitted with the die with the largest holes. Repeat so that all of the meat goes through the grinder twice.
- Place half of the meat mixture in the bowl of a standing mixer equipped with the paddle attachment. Add half of the water and half of the Parmesan and beat on medium-high for 3 to 4 minutes. Repeat this process with the remaining meat, water and cheese.
- Make, cook and eat a test patty to make sure the sausage is delicious.
- Attach the sausage-stuffing attachment to the meat grinder, keeping the grinder blade and die in place also.
- Keeping the sausage casing very wet, slide a manageable length onto the sausage stuffer. Place a generous amount of the prepared sausage mixture into the grinder pan. Give the casings a slight bit of resistance by holding onto the sausage stuffer with your three last fingers and letting the casing slip through your thumb and forefinger. Turn the machine on a medium-low speed and fill the casings, being careful to avoid any air bubbles. To get the feel for stuffing the sausages, you might have to do a couple tries. The first couple might be too loose or too tight; that's ok--think of them as the first pancake (the one that never comes out right that you have to throw away).
- Twist the casings to create sausages that are even in size. Tie each with butcher's twine to keep them nicely sealed. Prick the sausages with a pin or skewer all over to allow steam to escape while cooking (you don't want to have a blowout).
- Preheat a grill or saute pan. Cook the sausages until cooked through, 7 to 8 minutes on each side. Serve immediately or at room temperature.
PORK AND SAUSAGE CASSEROLE
I hadn't added a recipe here in quite a while, so I dug this one out of the ol' recipe file. Sure, it's high in fat, but it's REALLY TASTY! It's especially good when served with potatoes (baked or mashed, though my preference is garlic mashed potatoes) and a green salad.

- Heat the oil in a large skillet.
- Cook the pork chops over high heat till browned on both sides, then set aside.
- Add the sausages, onion, and garlic to the skillet and cook over medium heat till the sausages are browned and the onion's softened (you'll want to turn the sausages two or three times while cooking).
- Return the pork chops to the skillet. Stir in the wine, tomatoes, bay leaf, and parsley, then cover the skillet and cook for about a half an hour.
- Remove the sausages, cut them into thick slices, then return them to the pan and cook until they're heated through.

WEAK IN THE KNEES SAUSAGE SAUTE

- In a large deep saute pan over medium-high heat, add the almonds. Toast, tossing frequently, until lightly browned, approximately 1 to 2 minutes. Remove the almonds from the pan and set aside.
- In the same pan, add the sausage. Cook, while breaking it up with a wooden spoon, until browned through, about 5 to 6 minutes. Remove the sausage to a paper towel lined plate to drain. Add 2 tablespoons of butter to the pan and let the butter brown for 1 minute. Add the garlic and onion and cook until softened, about 1 to 2 minutes, then add the squash. Cook until the squash begins to color, about 5 to 6 minutes. Stir in the chicken stock and continue cooking until the squash is tender, about 10 to 12 minutes. Add the spinach, cranberries, parsley, salt and pepper and toss to combine. Return the sausage and the almonds to the pan. Toss well and heat through. Transfer the mixture to a serving bowl and serve.
PORK AND SAUSAGE SAUTé
Steps:
- Place pork in medium bowl. Add paprika; toss to coat. Cover; chill overnight.
- Place bread cubes in large bowl. Add 1 cup boiling water. Using potato masher, crush mixture until bread has consistency of mashed potatoes, adding more water if mixture is dry. Stir in salt and pepper. Divide into 6 equal portions.
- Sauté bacon in large skillet over medium heat until golden, about 6 minutes. Add pork, sausage and garlic. Sauté until pork is cooked through, about 15 minutes. Season with salt and pepper.
- Heat oil in another large skillet over medium-high heat. Working in batches, add bread portions to oil, flattening to 4-inch rounds with wet spoon. Cook until brown, about 5 minutes per side. Place fried bread on plate. Top with meat.
PORK SAUSAGES WITH CARAMELIZED ONION SAUCE
For such a simple recipe with so few ingredients, the flavor is incredibly deep. The onions come out creamy and are the perfect companion to broiled or grilled sausages. This is excellent served with mashed potatoes.

- Warm oil in a large skillet over medium heat. Stir in onions, and cook until soft, about 10 minutes. Stir in salt and sugar. Reduce heat to medium low, cover, and cook 20 minutes. Stir in flour, then add broth. Stir well. Cover, leaving the lid slightly ajar, and cook 30 minutes.
- Meanwhile, prepare oven broiler.
- Place sausages on a broiling pan; place under the broiler, and cook, turning occasionally, until the skin is dark brown and the sausages are cooked through, about 20 minutes. Pour onion sauce over sausages.
