Steps:
- Preheat oven to 350° F. Grease baking sheets.
- Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg, and vanilla extract; mix well. Add flour mixture; mix well. Stir in nuts and raisins. Drop ¼ cup dough onto prepared baking sheet; spread into 3-inch circle or oval. Repeat with remaining dough.
- Bake for 14 to 16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Decorate with icings, morsels, candies, raisins and/or nuts.
LIBBY'S GREAT PUMPKIN COOKIE
Steps:
- Preheat oven to 350℉ (180℃). Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter, add sugars, beat until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients andamp; pumpkin, mixing well after each. Stir in morsels. For each cookie, drop ¼ cup dough onto lightly greased cookie sheet; spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem. Bake at 350℉ (180℃) for 20 to 25 minutes. Cool and decorate as desired.

Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. 2) Drop by teaspoon full on a lightly greased cookie sheet and bake for approximately 15 minutes, or until cookies are firm and lightly browned. Remove from pan and cool.

Steps:
- Preheat oven to 425 degrees.
- Combine sugar, salt, cinnamon, ginger, and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin, sugar, and spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
- Bake for 15 minutes. Reduce temperature to 350 degrees and bake for 45-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Do not freeze.
