8 large shrimp, peeled and deveined, or more to taste
Skewers (if wooden, soak in water the night before)
2 ears corn, husks removed
1 zucchini, sliced
3 tablespoons olive oil
½ cup cherry tomatoes, halved
¼ cup red onion, diced
¼ cup crumbled feta cheese
Basil leaves for garnish

Steps:

  • Place the shrimp on skewers. Brush Marie's Roasted Tomato with Parmesan and Basil Vinaigrette over each piece of shrimp until evenly coated. Let marinate for 30 minutes.
  • Brush the ears of corn and zucchini slices with olive oil, then place on the grill for 6 to 10 minutes, until grill marks appear. Place the shrimp skewers on the grill and cook 2 to 3 minutes on each side.
  • After removing the corn and zucchini from the grill, slice the corn kernels off of each cob and cut the zucchini slices into smaller bite-sized pieces.
  • In a medium-sized bowl, mix the corn, zucchini, tomatoes, red onion, shrimp, and feta together. Garnish with basil. Drizzle a generous amount of Marie's Roasted Tomato with Parmesan and Basil Vinaigrette over the salad and toss together. Serve and enjoy!

1 cup shredded carrot
1 cup yellow bell pepper, diced
1 cup red onion, diced
1 cup asparagus, diced
1 lb shrimp
olive oil, to coat
chili powder, to taste
1 teaspoon fresh oregano, to taste
salt, to taste
pepper, to taste
lime juice, to taste
1 large handful mixed greens
3 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon honey
½ teaspoon chili powder

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Add cut vegetables to a baking sheet lined with parchment paper.
  • Drizzle in olive oil and sprinkle with seasonings to your preference. Bake for 10 minutes.
  • Move veggies to the side to make space in the center of the baking sheet and add shrimp in a single layer.
  • Drizzle with olive oil and sprinkle with seasonings and lime juice to your preference. Bake for 5-8 minutes, until shrimp is fully cooked. Be careful not to overcook.

1 1/2 lbs. large shrimp, peeled, deveined and butterflied
2/3-cup smoked tomato vinaigrette
6 cups baby spinach
12 large plum tomatoes
sherry vinegar, to taste
kosher salt, to taste
freshly ground black pepper, to taste
1/2 head roasted garlic
1/2-cup olive oil

Steps:

  • SALAD: Place shrimp in stovetop smoker. Season with salt and pepper. Smoke on medium heat for 15 minutes, using maple wood chips, and set aside. Reserve 1/4-cup and toss remainder with baby spinach in a large bowl. Arrange spinach on salad plates, top with shrimp and drizzle shrimp with remaining vinaigrette before serving.
  • VINAIGRETTE: Cut tomatoes in half and place cut side up on smoker rack. Sprinkle exposed sides with sherry vinegar, salt and pepper. Smoke for 12-15 minutes on medium low. Remove smoker from heat and let rest with lid closed for another three minutes. Remove tomatoes from smoker and slip off skins with your hands, holding tomatoes over a food processor work bowl to catch juices. Discard skins. Squeeze roasted garlic cloves from their skins into food processor work bowl and process mixture for about 30 seconds to combine and puree. With processor running, add oil slowly in a thin stream until vinaigrette is emulsified. Season vinaigrette with additional salt and pepper, taste and add a few additional drops of sherry vinegar if needed to give vinaigrette a mild tanginess.

1 pound carrots, quartered lengthwise and halved crosswise
1 pound turnips, peeled and cut into 1/2-inch wedges
6 tablespoons extra-virgin olive oil

4 cups baby arugula
1/4 cup walnuts
2 tablespoons grated parmesan cheese
1 small clove garlic
1/4 teaspoon red pepper flakes
Grated zest of 1/2 lemon, plus wedges for serving
1 pound large shrimp, peeled and deveined

Steps:

  • Place a baking sheet on the middle oven rack and preheat to 475 degrees F. Toss the parsnips, carrots and turnips with 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper. Spread the vegetables on the hot baking sheet and roast until tender and browned around the edges, about 30 minutes.

2 cups butternut squash chunks
3 cups Brussels sprouts (halved)
1 15 oz. can cannellini beans (rinsed and drained)
1/4 cup fresh pomegranate arils or dried pomegranate seeds
3 Tablespoons dried mulberries
4 cups thinly sliced Lacinato (dinosaur kale)
Olive or avocado oil (or spray)
Dressing
3 Tablespoons champagne vinegar*
1 Tablespoon prepared horseradish
1 clove garlic (minced)
2 teaspoons minced scallions
1 pinch crushed red pepper flakes
1 teaspoon sea salt
⅓ cup extra virgin olive oil

Steps:

  • Roast veggies: Heat oven to 400°F. Place cauliflower, butternut squash and brussels sprouts on a large baking sheet, spray with a little avocado oil spray or drizzle with oil, sprinkle with salt and pepper and toss to combine. Roast for 30-40 minutes or until veggies are until well caramelized and softened with a few golden brown spots. Stir once mid-way through the cooking process and watch closely so the veggies don't burn.
  • Prep dressing: While veggies are cooking, make the dressing: Combine all ingredients except the olive oil and whisk to combine. Slowly drizzle in the olive oil while whisking, set aside. Taste and add more olive oil, if needed.
  • Prep salad: Remove vegetables from oven and allow to cool to room temperature, then combine in a large bowl with the beans, kale and pomegranate seeds. Toss in the dressing to evenly coat everything. You may find that you don't need to use all of the dressing.
  • Serve: Portion into bowls, top with mulberries and serve.
  • Store: Salad will keep marinated for up to 2 days in the fridge.

24 large shrimp, in the shell (1 - 1 1/4 pounds)
2 ripe avocados

Steps:

  • To make the vinaigrette, whisk together the lime juice, cumin, lime zest, garlic, mustard, salt and pepper. Whisk in the olive oil. Set aside.
  • To make the salad, bring a saucepan three-fourths full of water to a boil. Add the shrimp and cook until they curl and turn pink, about 3 minutes. Drain and pat dry. Peel and devein and place in a large non-aluminum bowl. Add half of the vinaigrette to the shrimp, toss well, and let stand for 10 minutes.
  • Meanwhile, halve, pit and peel the avocados and cut lengthwise into slices 1/2 inch thick. Core and halve the tomatoes and cut into wedges 1/2 inch wide. Add the avocados, tomatoes, and cilantro to the shrimp and toss gently.
