5 large eggs, divided
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon chili powder
1-3/4 cups refrigerated shredded hash brown potatoes
1 small onion, finely chopped
1/4 cup canned chopped green chiles
2 tablespoons salsa
2 tablespoons canola oil
1/2 cup shredded cheddar-Monterey Jack cheese
Optional toppings: Salsa, guacamole, sour cream and minced fresh cilantro

Steps:

  • In a large bowl, whisk 1 egg, salt, cumin, pepper and chili powder. Stir in potatoes, onion, green chiles and salsa. Bake in a preheated waffle iron coated with cooking spray until golden brown and potatoes are tender, 8-12 minutes., In a large skillet, heat oil over medium-high heat. Break remaining eggs, 1 at a time, into pan. Reduce heat to low. Cook to desired doneness, turning after whites are set if desired. Remove from heat. Sprinkle with cheese; cover and let stand 3 minutes or until melted., Serve eggs with waffles and toppings of your choice.

1 pound yellow potatoes, shredded
cold water to cover
2 tablespoons vegetable oil
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon smoked paprika
2 eggs, lightly beaten

Steps:

  • Preheat waffle iron according to manufacturer's instructions. Spray waffle iron with cooking spray.
  • Place shredded potatoes in a bowl. Pour enough cold water over potatoes to cover; soak for 2 to 3 minutes. Drain and rinse to remove starch. Squeeze water out of potatoes by hand or by rolling in a clean kitchen towel and twisting towel to wring out water.
  • Toss potatoes with oil, garlic, salt, pepper, and paprika in a bowl until evenly coated. Stir eggs into potato mixture.
  • Spoon half the potato mixture into preheated waffle iron; cook until potatoes are tender and golden brown, 5 to 8 minutes. Repeat with remaining potato mixture.

Steps:

  • Shred the potatoes, then wring out excess water. Mix potatoes with cheddar, French's Crispy Fried Onions, salt, and McCormick Black Pepper Pure Ground. Fold in whisked eggs.
  • Preheat waffle iron on high. Spray iron with cooking spray. Evenly spread half of the potato batter in the waffle iron and close. Cook for 5-7 minutes until nicely browned.
  • Using a fork, remove hash-brown waffle from iron. Cook the second waffle using the rest of the potato batter.

3-1/2 cups (about 1/3 of 30-oz. pkg.) ORE-IDA Shredded Hash Brown Potatoes, thawed
1-1/4 cups KRAFT Shredded Mild Cheddar Cheese, divided
1/4 cup milk
8 slices OSCAR MAYER Bacon, cooked
1 Tbsp. chopped fresh chives

Steps:

  • Spray electric waffle iron with cooking spray. Heat iron to medium-high heat.
  • Whisk 1 egg with onion powder and pepper in large bowl until blended. Add potatoes and 1/2 cup cheese; mix well.
  • Spoon about 1 cup potato mixture onto center of each waffle grid section. Close lid quickly. Cook 10 to 12 min. or until waffle is lightly browned. (Do not open until waffle is done.) When done, lift waffle off grid with fork. Repeat with remaining potato mixture if necessary.

From a Canadian website and posted for the Zaar World Tour to Canada. This is a different way to cook eggs and a yummy one at that! It sure is simple enough. *UPDATE* to the hype about this recipe! A non stick pan is a MUST..once I did these over the campfire in cast iron and burned the heck out of the syrup, BUT that may have been my fault! YES I have done brown and serve sausages in the pan with the syrup, just add a little more syrup. AND I have even done the sausages with some thinly sliced apples in a little butter and the syrup, cooked til tender then add the eggs and a little more syrup. I personally don't like fried eggs or runny yolks, so for my portion I tend to break the yolk and loosely scramble the egg before dropping it in the hot syrup.....then I just let it cook kind of like and omelet with out mixing it too much until it sets then dump the whole thing on the waffle! In a pinch we have this with frozen french toast BUT it is so much better with a nice fat crunch eggo!
