SIMPLE HONEY GLAZED CARROTS

Steps:
- Rinse carrots under cold water and put in a medium saucepan. Cover with water and add salt. Bring to a boil. Reduce heat to medium-low, cover, and continue cooking for about 15 minutes, or until tender. Drain and set aside.
- In a saute pan, melt butter over medium-low heat. Add honey and brown sugar and cook, stirring, until sugar is dissolved. Add the lemon juice and gently stir in carrots, coating well. Continue heating, gently stirring, until carrots are hot and glazed. Serve immediately garnished with freshly ground pepper or chopped parsley, if desired.
OVEN GLAZED CARROTS
These are nice and convenient to make when roasting a chicken or pot roast in the oven. I usually make it with baby carrots but sliced carrots may also be used instead of strips. Seasoning is very simple, which I'll often change depending on the meal.

- Bring a pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Blanch the carrots in the boiling water. When they are cooked but still have some crunch, plunge them immediately into the ice water. When cool, use a clean tea towel to rub the skin off the carrots. Reserve.
- To a large skillet add the butter, sugar, lemon juice, garlic, thyme, cayenne and about 1/2 cup of water. Bring the pan to medium heat swirling occasionally. When most of the water has reduced and the mixture seems homogenous, removed the garlic and add the carrots and stir until they are coated. Cook for another 2 to 3 minutes or until the carrots are completely coated and hot.

- Place about 1 inch water in medium sized saucepan and set heat to high. Once water is boiling, add carrots and cook about 8-10 minutes longer (or until tender). Drain (set aside).
- Add honey, brown sugar and lemon juice to the saucepan (can have heat to low to medium-low at this point). Stir until blended (just a minute or two).
- Add carrots and stir thoroughly so it's well coated. Serve!

- Heat the oven to 350 degrees.
- Fill an ovenproof skillet that can fit the carrots with 1 to 2 inches of water. Bring to a boil over high heat. Add the carrots and add more water if needed to cover the carrots. Reduce the heat to simmer the carrots until they're tender but not soft, about 15 minutes.
- Pour the water out of the skillet, keeping the carrots in the skillet by holding them back with a spatula. Add the juice, honey and butter to the skillet and stir to mix (the butter may not melt all the way). Roll the carrots in the mixture, season them with salt and transfer to the oven.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease the bottom of a 9x13 inch baking dish.

EASY GLAZED CARROTS AND RAISINS
I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o)

- Put raisins into a small saucepan, add hot water. and let stand 5 minutes to plump raisins slightly.
- Meanwhile, drain and rinse the carrots.
- Add brown sugar, butter, and salt to the pan and stir to dissolve sugar.
- Bring glaze to a boil over medium-high heat and cook 1 minute.
- Add carrots to glaze and toss to coat.
