2 cans (12 ounces each) frozen lemonade concentrate, thawed
2 packages (10 ounces each) frozen sweetened raspberries, partially thawed
2 to 4 tablespoons sugar
2 liters club soda, chilled

  • In a blender, combine lemonade concentrate, raspberries and sugar. Cover and process until blended. Strain to remove seeds. In a 4-1/2-qt. container, combine raspberry mixture, club soda and ice cubes. Serve immediately.

1/2 cup frozen raspberries
4 lemons
3/4 cup sugar
6 ounces raspberry or citrus vodka, divided, optional

Steps:

  • Reserve 4 raspberries and cut off 4 slices of lemon for the garnish. Mash the raspberries and sugar in a small bowl and let sit at room temperature to thaw and bring out their juices, about 15 minutes. Set a sieve over a pitcher and juice the lemons. Rinse the sieve and add the raspberries. Push the raspberry mixture through the sieve with a rubber spatula, leaving the seeds in the sieve. Pour 1 quart of cold water through the sieve to get remove the remaining juices. Stir the lemonade and check for sweetness. Serve in ice-filled glasses and garnish with raspberry and a lemon slice. For the adults, add 1 1/2 ounces vodka to each glass.

1 1/2 cups sugar
1/2 10-ounce bag frozen raspberries

Steps:

  • Put the lemon juice in a pitcher. Mix the sugar and 1 1/2 cups water to make a syrup, stirring well until the sugar dissolves. Add the sugar syrup to the lemon juice and top with 4 cups water. Taste to make sure it's sweet enough for you, then add the raspberries. (Keep in mind that the raspberries are tart, so be sure to sweeten enough!) Stir the lemonade, then chill in the fridge.
  • Fill mason jars with ice cubes and top them off with the lemonade.

1 (12 ounce) package frozen unsweetened raspberries (about 3 cups)
1 cup sugar
1/2 cup water
1 1/2 tablespoons grated lemons, rind of
1 cup fresh lemon juice
1 (1 liter) bottle chilled sparkling water or 1 (1 liter) bottle club soda
ice cube
fresh raspberry (optional)
lemon slice

Steps:

  • Combine frozen raspberries, sugar and 1/2 cup water in medium saucepan.
  • Stir over medium heat until sugar dissolves and berries thaw.
  • Increase heat and boil 3 minutes.
  • Strain raspberry mixture into bowl, pressing on solids to extract as much liquid as possible; discard solids in stainer.
  • Mix lemon peel into raspberry syrup in bowl.
  • Chill until cold.
  • Stir raspberry syrup, lemon juice, and sparkling water in large pitcher to blend.
  • Fill 6 glasses with ice cubes.
  • Pour raspberry lemonade into glasses.
  • Add fresh raspberries to each glass, if desired.
  • Garnish with lemon slices and serve.

  • Combine lemons, raspberries, and sugar in a large pot. Pound the mixture firmly with the end of a straight rolling pin (or a large wooden spoon), extracting as much juice as possible, about 10 minutes. Stir in water. 4 egg yolks (at room temperature)
Zest of 3 lemons
1/3 c. fresh lemon juice
1/2 c. sugar
pinch of salt
3 tbsp. unsalted butter (softened)
1/2 c. heavy cream
1 tbsp. powdered sugar
1 - 6 oz. container Mascarpone cheese (softened)
1/3 c. lemon curd
1 - 6 oz. container fresh raspberries
1 box angel food cake mix
juice and zest of 2 lemons
1 c. water
2 c. heavy cream
2 tbsp. powdered sugar

Steps:

  • In a small bowl, whisk together the egg yolks, lemon zest, lemon juice, sugar and salt. Transfer to a small saucepan.
  • Cook the mixture over low-medium heat, stirring constantly, until it is thick enough to coat the back of a spoon, 3 to 5 minutes.
  • Remove from heat and add the butter. Mix until smooth.
  • Transfer the curd to a small bowl and cover with plastic wrap.
  • Refrigerate until chilled, about 30 minutes.
  • In a large mixing bowl, combine heavy cream and powdered sugar.
  • Beat on high speed until soft peaks form, about 3-5 minutes.
  • Beat in Mascarpone cheese. Mix until smooth.
  • Fold in the 1/3 c. lemon curd.
  • In a large mixing bowl, combine angel food cake mix, lemon juice and zest, and water.
  • Beat until light and fluffy, or about 1 minute.
  • Pour into an ungreased angel food cake pan.
  • Bake at 325 degrees for 35-40 minutes, or until golden brown on top, and a toothpick inserted near the center comes out clean.
  • Invert on a bottle top (or other rack), and cool completely.
  • Run a knife around the edges to loosen the cake, and remove it to a serving plate.
  • Carefully slice the top of the cake off in one piece with a serrated knife, about 1/3 of the way down, or about 1.5 inches from the top.
  • Using your fingers, carefully tear out a tunnel from the bottom part of the cake, leaving about 1-inch shell on all sides and the bottom.
  • Evenly spread the Mascarpone cream mixture into the cake's tunnel.
  • Top the Mascarpone cream evenly with the remaining lemon curd.
  • Top the lemon curd with a layer of fresh raspberries, reserving a few for the garnish.
  • Replace the top of the cake.
  • In a large mixing bowl, combine heavy cream and powdered sugar.
  • Beat on high speed until soft peaks form, 3-5 minutes.
  • "Frost" the cake evenly with the whipped cream, and top with a few fresh raspberries for garnish.
  • Store in refrigerator. EAT!!!
