SAUTéED GREEN BEANS WITH SMOKY SHALLOTS

Sautéed Green Beans with Smoky Shallots image

Tender green beans topped with smoky sauteed shallots instead of bacon. This vegetarian (and vegan!) side is a welcome addition to the holiday table.

Provided by Kare for Kitchen Treaty

Time 40m

Number Of Ingredients 7

2 pounds fresh green beans (ends trimmed)
1/4 cup + 2 teaspoons coconut oil* (divided (can also use vegetable oil or canola oil))
2 pounds shallots (peeled and sliced thin)
1 teaspoon smoked paprika
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/4 teaspoon red pepper flakes

Steps:

  • Bring a large pot of water to a boil. Add green beans and cook for one minute. Lift the beans out of the water and plunge them into a bowl of ice water to cool and stop the cooking. Drain and set aside.
  • Set a large saute pan over medium-high heat. Add coconut oil. When melted and shimmering-hot, add shallots. Cook, stirring occasionally, until tender and starting to turn golden, about 10 minutes. Add the smoked paprika, salt, and pepper. Stir and cook until the shallots are well-browned, 2-4 additional minutes. Transfer to a paper-towel-lined baking sheet to drain the excess oil. Set aside.
  • Allow the saute pan to cool enough so you can wipe out the excess oil. Return to the stove over medium heat. Add 2 teaspoons coconut oil. When hot, add the blanched green beans, red pepper flakes, and a pinch of salt and pepper. Cook, stirring occasionally, until heated through, 1-2 minutes. Taste and add additional salt and pepper if desired. Transfer to a platter and top with smoky shallots. Serve.

SAUTéED GREEN BEANS WITH GARLIC

Sautéed Green Beans with Garlic image

This is a wonderful, classic preparation for a green beans side dish - simmer beans until bright green then toss with garlic until golden and crispy. Serve as a side with everything, any cuisine, from Western to Italian, Middle Eastern to French! If serving with Asian food, I like to add the tiniest drizzle of sesame oil at the end and sometimes a sprinkle of sesame seeds. Just gives it that little Asian-esque finishing touch!Love green beans? So do I! See all my Green Bean Sides.

Provided by Nagi

Categories     Side Dish

Number Of Ingredients 6

250g/ 8oz green beans (, trimmed (Note 1))
1 tsp salt
1 tbsp extra virgin olive oil ((or... butter!))
2 garlic cloves (, finely minced (~ 2 tsp), do not use jar or garlic crusher (Note 2))
1/8 tsp salt
1 pinch black pepper

Steps:

  • Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
  • Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
  • Serve: Transfer beans to serving dish. Serve warm!
  • Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!

  • Begin by heating your wok or skillet over medium/low heat. I like to use a wok because the shape allows for optimal heating and stir-frying.
  • When the wok is hot, add the sesame oil. When it starts to become fragrant - it won't take long, about 30 seconds - add the onions and cook them until they are translucent and slightly caramelized.
  • Now add ginger, garlic, and red peppers, cooking just briefly so that the ginger and garlic become fragrant and the bell pepper begins to soften.
  • Add the green beans and toss them in the garlic, oil, and ginger. Now let them cook until they are your desired tenderness. We like to keep them a little crunchy so we cook them for only 1 to 2 minutes.

  • Pineapple Salsa. This is an excellent idea because it pairs well with the shrimp and gives you some more complex flavors to enjoy. You can use a store-bought salsa or make it at home from fresh pineapple, tomatoes, red onion, and cilantro.
  • Sautéed Garlic Spinach. This goes well with the shrimp if you want something healthier or all green things on your plate. One tip for cooking spinach is that it will cook better if you remove any hardened parts from the leaves before adding them into the hot oil.
  • Arugula Salad with Pine Nuts, Parmesan and Lemon. This will provide a great fresh salad that goes well with shrimp but is also light enough not to overpower the other flavors on your plate.
  • Creamed Spinach and Bacon Potato Gratin. Cream spinach in butter until they are soft, then add bacon bits (or pancetta) for saltiness, followed by adding heavy cream before baking one hour at 400 degrees Fahrenheit.
  • Gingered Rice. This is a perfect addition for those who love Asian flavors. Cook rice with ginger, soy sauce, sugar, sesame oil and cook it in the oven at 300 degrees Fahrenheit or microwave until fully cooked before adding your desired amount of water to make this fluffy.
  • Honey-Coconut Pork Chops. How about a dish that features two of the main ingredients? This simple recipe is well worth the time and effort. It tastes like a piece of heaven.
  • Parsnip Fries. A new take on fries but just as tasty. Peel parsnips with a sharp vegetable peeler or mandolin slicer (or better yet, shave them), toss in olive oil, then roast at 400 degrees Fahrenheit for about 15 minutes – flip halfway through cooking time to get an even crispiness.
  • Spicy Thai-style Red Curry. Asian-inspired dishes begin to gain recognition in the west, and spicy Thai-style red curry is no exception. This dish serves as a perfect accompaniment for coconut shrimp, or you can serve it with some rice if you’re not feeling so adventurous.
  • Chinese Egg Drop Soup. Chinese egg drop soup, which can be served alongside your favorite dishes or as an appetizer in itself, consists primarily of soy sauce and chicken broth mixture to make for a strong base flavor profile.
  • Sautéed Asparagus and Mushrooms with Black Pepper Sauce. Emboldened by the smoky flavor of a robust black pepper sauce, sautéed asparagus and mushrooms are paired with coconut shrimp to create an exotic dish that will satisfy your taste buds.
