You can't beat a one pan dinner that is one the table in no time! This One Pan Pasta with Peas and Bacon is easy and flavorful and a pasta dinner that is sure to go on repeat in our house!

8 oz bacon, diced
3/4 cup diced onion
2 cloves garlic, minced
2 1/2 cups chicken broth
1/2 cup milk
8 oz dry penne pasta
1 cup frozen peas
1/2 cup sour cream
salt and pepper
grated Parmesan, for serving

Steps:

  • In a large skillet over medium heat, cook the bacon until crisp. Remove with a slotted spoon to a paper towel lined plate. Drain all but about 2 tablespoons of the bacon grease in the skillet.
  • To the hot bacon grease, add the onion and cook until softened, about 5-8 minutes. Add the garlic and cook for an additional minute. Pour in the chicken broth and the milk, and bring to a boil. Once the liquid is boiling, add the dry pasta and reduce the heat to medium-low. Cover the skillet and allow the pasta to cook until al dente, about 15 minutes.
  • Once the pasta is cooked, add the peas and continue to cook until they have defrosted. Stir in the sour cream and the reserved bacon. Taste and season to taste with salt and pepper.
  • Serve immediately, topped with parmesan cheese.

12 ounces fresh linguine
6 slices bacon, cut into 1/2-inch pieces
3 cups cherry or grape tomatoes
1 shallot, thinly sliced
2 large eggs
1/3 cup grated parmesan or pecorino romano cheese, plus more for topping
1 teaspoon finely grated lemon zest
Freshly ground pepper
1 cup fresh basil, torn

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 1/4 cups cooking water, then drain the pasta; set aside.
  • Meanwhile, cook the bacon in a large nonstick skillet over medium-high heat until crisp, about 5 minutes. Add the tomatoes and shallot and cook until the tomatoes are starting to burst, about 5 minutes. Pour off all but 2 tablespoons of the drippings from the skillet.
  • Whisk the eggs, cheese, lemon zest and 1 teaspoon pepper in a medium bowl. Slowly whisk in 1 cup of the reserved cooking water; set aside.
  • Reduce the heat under the skillet to medium low. Add the pasta and toss well. Slowly pour in the egg mixture, tossing, to make a creamy sauce, about 1 minute. Season with salt and add the remaining 1/4 cup cooking water as needed to loosen. Stir in the basil. Top each serving with more cheese and season with pepper.

1 can (10 3/4 oz.) cream of chicken soup with herbs
3/4 cup milk

1 cup Frozen Peas
1/3 cup shredded Parmesan cheese

Steps:

  • Ingredients Cooking Instructions In a large skillet, over medium high heat, heat broth until it comes to a simmer. Reduce heat to maintain a simmer. Add uncooked Linguine. Cover and cook, stirring frequently, for 10 to 11 minutes or until pasta is tender. In a small bowl, stir together soup and milk. Pour soup mixture into pasta. Season with salt and pepper. Add bacon and peas. Cook, covered, stirring occasionally, for 5 minutes or until hot and bubbly. Stir in Parmesan cheese. Tips: Substitute cream of chicken soup for the cream of chicken soup with herbs. Stir in 1/4 teaspoon garlic powder and 1 teaspoon Italian seasoning. Substitute 1/3 cup fully-cooked bacon pieces for crumbled bacon.

2 cups medium pasta shells
6 strips bacon, halved
1 carrot, finely chopped
1 cup frozen peas, thawed
1/2 red onion, finely diced (about 1/2 cup)
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 lemon, zested and juiced
Coarse salt
1/4 cup chopped flat-leaf parsley, for garnish, optional

Steps:

  • Boil the pasta until al dente, then drain and rinse under cold water until cool.
  • Meanwhile, cook the bacon in a nonstick skillet over medium heat until crispy, 5 to 7 minutes. Remove to a paper towel-lined plate. Then crumble or chop into small pieces.
  • Combine the pasta with the bacon, carrots, peas, onions, mayonnaise, yogurt, lemon zest and juice in a large bowl and toss until coated and fully mixed together. Season generously with a pinch of salt and give another toss.
  • Garnish with the parsley leaves if using. Cover and chill the pasta salad for about an hour.

1 cup part-skim ricotta cheese
1/2 cup parmesan cheese, grated
2 tablespoons butter
1 dash salt, to taste
1 dash black pepper, to taste
4 slices bacon
1 medium onion, chopped fine
2 garlic cloves, minced
1 lb small shell pasta (or choice)
2 cups frozen peas
1 tablespoon lemon juice

Steps:

  • Place ricotta, parmesan, butter, salt and pepper in a large bowl. set aside. Fry bacon in skillet til crisp. Transfer bacon to paper plate to drain, crumbling once cooled. Reserve pan and bacon grease.
  • To the bacon pan, add onion and cook about 3 minutes. Add garlic and cook 1 more minute. Transfer onion mixture to cheese mixture.
  • Meanwhile, cook pasta in boiling water. When it is just 1 minute till done, add peas to water.
  • Reserving 1 cup of pasta/pea water, drain pasta and peas. Add half of the pasta water to the cheese mixture along with the lemon juice and mix till smooth.
  • Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.

1/8 tsp crushed red pepper (optional) ($0.01)

Steps:

  • Bring a pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until the pasta is tender (7-10 minutes). Reserve about a half cup of the starchy pasta water before draining the pasta in a colander.
  • While the pasta is boiling, cook the bacon. Add the bacon to a large skillet and cook over medium heat until brown and crispy. Transfer the cooked bacon to a paper towel lined plate with a slotted spoon. Drain most of the bacon grease from the pan, leaving about 2 Tbsp.
  • While the bacon is cooking, finely dice the onion. Add the diced onion to the remaining bacon grease and sauté until tender (about 5 minutes).
  • Add the frozen peas and about ¼ cup of the reserved pasta water to the skillet. Continue to cook and stir until the peas have heated through.
  • Add the drained pasta to the skillet, stir to combine, and remove from the heat.
  • Top the pasta with Parmesan, salt, pepper, crushed red pepper, and crumbled bacon. Stir to combine. Taste and adjust the salt and pepper to your liking.

10 slices smoked bacon or pancetta
1 pound dried mini-shell or other small pasta
2 tablespoons olive oil
1 tablespoon butter
Freshly ground black pepper
2 cups frozen peas
2 tablespoons crème fraîche or heavy cream
2 tablespoons finely chopped fresh mint leaves
Juice of 1 lemon
6 ounces finely grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted to a boil. Meanwhile, cut sliced bacon crosswise into thin slivers, or slice pancetta into julienne. Add pasta to boiling water and cook to taste.
  • While pasta is cooking, place a large skillet over medium heat, and add 2 tablespoons olive oil and the butter. Add bacon or pancetta and a sprinkling of pepper, and fry until golden and crisp. Immediately add frozen peas and stir for a minute or two. Add crème fraîche or heavy cream and chopped mint.
  • Reserve 1 cup of the pasta cooking water, and drain the pasta. Add pasta to the skillet and stir. Add lemon juice, and adjust salt and pepper to taste. Bring to a simmer, then remove from heat. The mixture should be thick; if desired, a splash of the pasta water may be added to the sauce to thin it slightly. Add Parmesan and stir to mix. If desired, serve with a green salad.
