16 jumbo shrimp or prawns
deveined and butterflied with tail left intact
Olive oil
for liberal drizzling
Salt and pepper
1 tablespoon thyme
finely chopped
Zest of 1 lemon
16 1-inch thick slices cut on a bias Spanish chorizo
preferred brand Gaspar's
1 tablespoon butter
1 large clove garlic
crushed
1/2 cup dry sherry or white wine
Juice of 1 lemon
Scallions
thinly sliced on a bias
Long toothpicks

Steps:

  • Toss shrimp with a little olive oil and dress with salt, pepper, thyme and lemon zest
  • Skewer the shrimp near the tail end then thread a slice of chorizo with cut sides facing out, nesting the chorizo in the natural curve of the shrimp
  • Heat a little oil in a large skillet over medium-high heat and melt butter into it
  • Add garlic and swirl for a minute or 2 then remove
  • Add the shrimp and chorizo bites and cook until the chorizo is crisp and the shrimp are pink and opaque
  • Douse pan with sherry and lemon juice, and sprinkle with green onions to serve

1/2 pound medium shrimp (about 30 shrimp), peeled and deveined if necessary
1 (7.9 ounce) package of Spanish chorizo, sliced into 1/4-inch rounds
1 clove garlic, finely minced
1/2 teaspoon dried oregano
1 Tablespoon red wine vinegar
1 Tablespoon dry Sherry
1/4 cup extra virgin olive oil, plus more for the pan
2 Tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a medium bowl, combine the shrimp, garlic, oregano, vinegar, Sherry, and 1/4 cup of the olive oil; toss to coat. Marinate in the refrigerator for 30 minutes. Skewer one shrimp and one round of chorizo onto wooden toothpicks or skewers. Repeat with the remaining shrimp and chorizo. Working in batches, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place a few skewers into the pan and sear on both sides until the shrimp are cooked through and the chorizo is lightly browned, about 3 to 4 minutes. Transfer the skewers to a serving platter and garnish with the parsley. Serve immediately. Enjoy!

When visiting my family in Spain, I was served a dish similar to this in a Tapa's bar. I have tried to recreate the flavors at home and have come up with this quick recipe. You may serve this over hot cooked rice, or as they did in the Tapa's bar, with a hot crusty bread to mop up the delish sauce!

6 ounces chorizo sausages
6 tablespoons unsalted butter, softened
2 tablespoons olive oil
1 large shallot, -sliced thinly
2 tablespoons parsley, chopped
1/2 teaspoon smoke paprika
1/2 teaspoon sweet paprika (your preferrence) or 1/2 teaspoon hot paprika (your preferrence)
salt and pepper
2 lbs medium shrimp, shelled and deveined
4 tablespoons brandy or 4 tablespoons cognac
lemon wedge

Steps:

  • In small pan place chorizo. Cover with water and bring to boil. Simmer for 2 minutes.
  • Drain water from chorizos. Cut chorizo into 1/4 inch slices, at a bit of an angle.
  • In a bowl combine butter, shallots, parsley, smoked paprika, and sweet/hot paprika. Add salt and pepper to taste. Set aside.
  • In large saute pan, add sliced chorizo and fry up on both sides. About 2minutes per side. Increase heat to high and add shrimp to pan and cook until shrimp are starting to turn pink, but not thoroughly cooked.
  • Remove pan from stove and add brandy. Place back on stove and cook high until alcohol evaporates, about 1 minute.
  • Add butter mixture to pan and cook until all is melted and shrimp are cooked and hot.
  • Serve shrimp immediately.
  • You may serve over hot rice or in a bowl so you can dip crusty bread into the sauce.
  • Garnish with lemon.

1 1/2 pounds peeled and deveined raw medium shrimp

Steps:

  • In a large skillet or cazuela, heat 1 tablespoon of the olive oil and saute the sliced chorizo until it begins to brown around the edges, 7 to 8 minutes. Add the onion and cook, stirring occasionally, until they are caramelized around the edges and softened somewhat, 4 to 6 minutes. Add the garlic and cook, stirring, for 1 minute. Add 1/4 cup of the sherry and cook for 1 minute. 1 tablespoon extra-virgin olive oil
8 ounces chorizo, casing removed and chopped
1 starchy potato, peeled and chopped
1 medium onion, chopped
1 carrot, peeled and chopped
3 to 4 cloves garlic, chopped or thinly sliced
1 Fresno or Holland pepper, thinly sliced
2 tablespoons chopped fresh thyme
1 bay leaf
1 small bunch flat-leaf kale, leaves stripped and chopped
Freshly grated nutmeg
1 (15-ounce) can chick peas, drained
1 (15-ounce) can diced tomatoes or diced tomatoes with chiles
3 cups chicken stock
Kosher salt and freshly ground black pepper
1 1/2 pounds medium shrimp, deveined and stemmed
Juice of 1 lemon
Portuguese rolls, for serving

Steps:

  • Heat 1 tablespoon extra-virgin olive oil in a Dutch oven or soup pot over medium-high heat, add the chorizo and render 2 minutes. Then add the potato, onion, carrot, garlic, chile pepper, thyme, and bay leaf, soften 5 to 6 minutes. Wilt in the kale and season with a little nutmeg. Stir in the chickpeas, tomatoes, and stock into the pot, bring to a low boil and season with salt and pepper, if necessary. Cool and store for make-ahead meal.
  • Heat the chorizo and vegetable sauce base to a low boil, when ready to serve. Add the shrimp and cook until pink and firm. Add the juice of 1 lemon and turn off the heat. Serve the shrimp and chorizo in shallow bowls garnished with a drizzle of extra-virgin olive oil, and warm Portuguese rolls alongside.

1 1/2 cups extra-virgin olive oil
1 pound spicy Mexican chorizo, casing removed
1/4 cup finely chopped sweet or Vidalia onion
1 teaspoon adobo seasoning
1 teaspoon Hungarian paprika
Freshly ground black pepper
1 head garlic, peeled and finely chopped
Salt
1 1/2 pounds peeled deveined shrimp (16/20 count)
Crusty, chewy bread, for sopping

Steps:

  • In a medium straight-sided pan, heat 2 tablespoons of oil over medium-high heat and saute the chorizo and onions, breaking the chorizo up with a wooden spoon while cooking until it resembles ground beef. Add the adobo, paprika and a few grinds of black pepper. Cook until the fat is rendered and the onions are tender and cooked into the chorizo, 8 to 10 minutes.
  • Add the remaining oil and the garlic and lower the heat to medium-low. Let the flavors infuse over the low heat for 5 to 7 minutes. Add the shrimp to the garlic oil, raise the heat slightly, and stir and turn to cook the shrimp evenly, 6 to 8 minutes. Serve as an appetizer on toothpicks with crusty, chewy bread.

9 oz large shrimp (shelled and deveined)
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper
1 tbsp olive oil
9 ounces chorizo sausage (cut into slices)
1 onion (finely diced)
3 cloves garlic (minced)
1/3 cup chicken stock
1/2 cup halved cherry tomatoes
1 1/2 tsp paprika
1/2 cup canned chopped tomatoes

Steps:

  • Place the shelled shrimp in a bowl, season with the salt, pepper and paprika and toss to ensure they are all evenly coated in the spices.
  • Heat the oil in a pan on medium high heat. Add in the shrimp and sear for 2 minutes per side until pink. Remove the cooked shrimp from the pan and set aside on a plate.
  • Add the chopped chorizo to the pan and cook for 4-5 minutes until the chorizo slices are golden and slightly crispy. Add the diced onion and garlic to the pan and cook for another 2 minutes until the onion begins to soften.
  • Add the chicken stock, cherry tomatoes, canned tomatoes and paprika to the pan and cook for another 5 minutes until the tomatoes begin to soften and the sauce has thickened.
  • Return the cooked shrimp to the pan and stir to coat them in the sauce. Leave to cook for another minute until the shrimp are warmed through. Remove the pan from the heat and garnish with chopped parsley and lemon wedges before serving.

3 garlic cloves, thinly sliced

pepper
2 tablespoons Italian parsley, chopped
4 slices Italian bread, toasted

Steps:

  • In a large skillet, heat 2 T oil over medium heat.
  • Add the chorizo and cook, stirring, until lightly browned, about 4 minutes.
  • Using a slotted spoon, transfer to a paper-towel-lined plate.
  • Add the remaining 2 T oil, the garlic and red pepper flakes to the skillet and cook, shaking the pan a bit, until the garlic is lightly golden.
  • Increase the heat to high, add the shrimp and stir to coat.
  • Add the wine and cook, stirring, until the pan is nearly dry, 2-3 minutes. (You do want some pan juice for the finished dish.).
  • Return the chorizo to the pan, season with salt and pepper and sprinkle with the parsley.

2 tablespoons olive oil
1 large onion, chopped
1 red bell pepper, cut into dice
1 green bell pepper, cut into dice
2 garlic cloves, crushed
1 large tomatoes, chopped
1 cup quick-cook Spanish rice (or other variety is OK)
salt and pepper
7 ounces chorizo sausage, casings removed, cut into 1/4 inch slices
2 cups fish stock or 2 cups chicken stock
1 lb raw large shrimp, shelled and deveined
2 tablespoons finely chopped fresh parsley, to garnish

Steps:

  • Heat the oil in a large lidded frying pan over medium-high heat, Add the onion and bell peppers and cook for 2 minutes.
  • Add the garlic, and continue to cook for a further 3 minutes, stirring occasionally.
  • Add the tomato, rice, salt and pepper to taste and cook for 2 minutes.
  • Stir in the chorizo, then the stock and bring to the boil.
  • Reduce the heat to low, cover and simmer for 15 minutes until the rice is tender, but the dish is still moist.
  • Add the shrimp, stir through and cover.
  • Cook for about 5 minutes or until the shrimp turn pink and the liquid has been absorbed.
  • If it looks too moist, simmer an additional 2 minutes uncovered.
  • Taste, adjust the seasoning if necessary, sprinkle with the parsley and serve.

1/2 teaspoon saffron thread (soaked in a little of the broth)
2 tablespoons olive oil
1 lb shrimp
1 teaspoon paprika
1/8 teaspoon cayenne
2 tablespoons butter
1 medium onion, finely chopped
3 garlic cloves, minced
1 chorizo sausage, link sliced julienne
1 teaspoon cumin
1 teaspoon salt
2 cups arborio rice
3/4 cup white wine
5 1/2 cups chicken stock (or vegetable, or shrimp, or with clam juice)
1/2 cup grated parmesan cheese
2 tablespoons fresh parsley (or 2 tsp. dried)

Steps:

  • 1. Put saffron in small dish, pour a half cup chicken stock over it and set aside.
  • 2. Heat one tablespoon oil in large skillet to very hot, add shrimp and stir. Sprinkle with paprika and stir-fry just until shrimp begin to brown but are not fully cooked, 2-4 minutes. Season with cayenne pepper and remove from heat.
  • 3. Add butter and remaining oil and reheat. Add onion and garlic and saute until soft, working up anything stuck to the skillet, 5-6 minutes. Add the chorizo, saute a couple of minutes more, then stir in cumin and rice. Saute, stirring, until the rice turns opaque, 5-6 minutes. Stir in the saffron mixture and wine. Cook, stirring with wooden spoon over medium heat, until most of the liquid has evaporated.
  • 4. Add about 1/2 cup of the hot broth to the rice, stirring constantly until the broth is absorbed. Continue adding the remaining broth 1/2 cup at a time, waiting until each addition is absorbed before adding more. Continue until the rice is tender, about 35 to 45 minutes. The rice should have a creamy consistency. Add the reserved shrimp, parmesan, parsley and adjust the seasoning with salt and pepper. Serve at once.
