Shrimp Cakes with Scallion Dip image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 13

1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 scallion, roughly chopped
1 small clove garlic, grated
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 pound medium shrimp, peeled and deveined
1 cup panko breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon grated lemon zest
3 tablespoons vegetable oil, plus more for forming
1 5-ounce package mixed greens (about 6 cups)
4 radishes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
  • Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
  • Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
  • Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

Yield Makes 8 (first course) servings

Number Of Ingredients 10

2 garlic cloves
3/4 cup water
2 large eggs, beaten
1 tablespoon Asian sesame oil
3/4 cup all-purpose flour
1 bunch scallions, cut into thin matchsticks
1/2 red bell pepper, cut into thin matchsticks
1/2 pound medium shrimp, peeled and halved lengthwise
1/4 cup vegetable oil, divided
Accompaniment: soy-pickled jalapeños including liquid

Steps:

  • Preheat oven to 200°F. Set a rack in a 4-sided sheet pan and put in oven. Mince and mash garlic with 3/4 teaspoon salt, then whisk together with water, eggs, and sesame oil. Whisk in flour until smooth. Stir in scallions, bell pepper, and shrimp.
  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat until hot. Stir batter, then cook pancakes in batches of 4 (2 tablespoons each, with some vegetables and 1 or 2 pieces shrimp), pressing down lightly with a large spatula to flatten and evenly distribute vegetables, turning once, until golden and cooked through, 3 to 5 minutes per batch. Drain on paper towels, then transfer to rack in oven to keep warm. Add oil to skillet between batches as needed.

SCALLION PANCAKES

Scallion Pancakes image

From Bon Appitite site: The secret to layered, flaky, chewy-crunchy scallion pancakes? It's all in the roll (and the spin, and the re-roll). Not to mention the low and slow crisping. Once you master this recipe, you might not ever order them at a restaurant again.

Time 55m

Yield 8 pancakes, 8 serving(s)

Number Of Ingredients 11

2 1/2 cups all-purpose flour, plus more for surface
1/4 teaspoon kosher salt
1 tablespoon toasted sesame oil
1/3 cup vegetable oil
2 bunches scallions, thinly sliced (about 2 cups)
8 tablespoons vegetable oil, divided, plus more for brushing
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 teaspoon chili oil
1/2 teaspoon sugar
1/4 teaspoon crushed red pepper flakes

Steps:

  • Pancakes:.
  • Whisk 2½ cups flour and 1 teaspoons salt in a large bowl. Mix in sesame oil and 1 cup boiling water with a wooden spoon until a shaggy dough forms.
  • Turn out dough onto a lightly floured surface and knead, adding flour as needed to prevent sticking, until dough is smooth, about 5 minutes. Cover with plastic wrap; let rest at room temperature 1 hour.
  • Divide dough into 8 pieces. Working with one at a time, roll out on a lightly floured work surface as thin as possible (each should be approximately 10" in diameter). Brush about 2 teaspoons vegetable oil on dough and top with about ¼ cup scallions; season with salt. Roll dough away from you (like a jelly roll) into a thin cylinder, then, starting at 1 end, wind roll onto itself to create a coil (like a cinnamon roll). Cover with plastic wrap and repeat with remaining dough. Let rest at room temperature 15 minutes.
  • Working with 1 coil at a time, roll out on a lightly floured surface to a 5" round (keep other coils covered). Repeat with remaining dough and stack as you go, separating with parchment or lightly greased foil brushed with vegetable oil.
  • Heat 1 tablespoons vegetable oil in a medium skillet over medium-low. Working with one at a time, cook pancake, turning frequently to prevent scallions from burning, until golden brown and crisp on both sides and cooked through, 8-10 minutes. Transfer pancakes to a wire rack and let rest about 5 minutes before cutting into wedges.
  • Sauce:.
  • Whisk vinegar, soy sauce, chili oil, sugar, and red pepper flakes in a small bowl until sugar is dissolved. Serve alongside pancakes for dipping.

KOREAN SEAFOOD SCALLION PANCAKES RECIPE BY TASTY

This traditional scallion pancake, known as pajeon haemul, features fresh whole scallions embedded in a savory pancake batter. Provided by Tikeyah Whittle

Categories     Dinner

Time 35m

Yield 2 servings

Number Of Ingredients 24

2 tablespoons rice vinegar
2 tablespoons sugar
1 clove garlic, grated
¼ cup korean chili paste
6 tablespoons soy sauce
2 teaspoons toasted sesame oil
2 ½ teaspoons rice vinegar
1 tablespoon sugar
2 scallions, white and light green parts, very thinly sliced
2 cloves garlic, grated
1 teaspoon sesame seed
1 cup cake flour
¼ teaspoon baking powder
1 ½ teaspoons kosher salt, divided
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
1 cup ice water, plus 2 tablespoons
20 scallions, about 2 bunches, root trimmed
2 tablespoons vegetable oil, plus 2-4 teaspoons
¼ lb shrimp, peeled, deveined, and halved lengthwise (butterflied)
¼ lb calamari bodies, sliced into ¼-inch rings, rinsed, and patted dry
2 large eggs
1 red chili, thinly sliced

Steps:

  • Make the chili dipping sauce: In a medium bowl, whisk together rice vinegar, sugar, garlic, and gochujang until smooth. Set aside until ready to use. The sauce will keep in an airtight container in the refrigerator for up to 1 week.
  • Make the sesame soy garlic dipping sauce: In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, and sugar until the sugar dissolves. Add the scallions, garlic, and sesame seeds and whisk until well combined. Set aside until ready to use. The sauce will keep in an airtight container in the refrigerator for up to 1 week.
  • Make the pancake batter: In a large bowl, whisk together the flour, baking powder, 1 teaspoon salt, garlic powder, onion powder, and black pepper. Stream in the ice water and whisk until the batter is smooth, about 1 minute.
  • Place the scallions in a large nonstick skillet to measure, then remove from the pan and trim so the scallions will lie flat in the bottom of the pan.
  • Add 1 tablespoon vegetable oil to the skillet and heat over medium-low heat for 1-2 minutes. Arrange half of the trimmed scallions in a single layer in the skillet and cook for 1-2 minutes, until softened. Slowly pour about ½ cup batter over the scallions, ensuring that the batter gets between each scallion and to hold everything together.
  • Immediately arrange half of the shrimp and half of the squid over the batter, distributing evenly. Pour another ¼ cup of the batter over the seafood, and let cook for 2-5 minutes, until the batter is starting to set. Carefully slide a spatula under the edge of the pancake and lift up to see if the underside of the pancake is turning golden brown. If it is starting to burn, reduce the heat to low.
  • Add each egg to a small bowl with ¼ teaspoon salt each. Whisk with a fork to combine.
  • When the pancake is mostly set on top, sprinkle with half of the red chile, then pour 1 beaten egg over the pancake. Cook for 2-4 minutes more, until the egg is mostly set.
  • Quickly flip the pancake, then drizzle 1-2 teaspoons of vegetable oil around the edges of the pan to prevent sticking. Cook the pancake for 2-3 minutes more, until the egg is fully cooked and the bottom of the pancake is golden brown and crispy. Set a plate over the skillet and quickly invert the pancake onto the plate. Repeat with the remaining ingredients to make another pancake.
  • Slice the pancakes and serve with the dipping sauces.
  • Enjoy!

  • First, make the batter. Whisk together the flour, cornstarch, baking powder, sugar, salt, and pepper in a bowl. In a separate, large bowl, whisk together the egg yolk, sparkling water, soy sauce and garlic. Lightly whisk the flour mixture in just until combined (the batter should be lumpy, not smooth). Refrigerate the batter for 15 minutes.
  • Meanwhile, make the dipping sauce. Combine all of the ingredients in a small bowl and set aside.
  • Stir the chives into batter (if using). Heat a large cast iron skillet or non-stick frying pan over medium heat. Add 1 tablespoon of the oil and carefully place 8 pieces of the scallions in a single row, like a ladder (be careful, there may be oil splatter). Spoon 2 tablespoons of the batter over the scallions, filling in the gaps between. Then layer with 8 more pieces of scallions (adding a drizzle more batter if needed to adhere). You may have enough room to make two at a time.
  • Lightly press and cook until browned and crisp on the bottom, 2-3 minutes. Flip and continue cooking until browned on both sides, slightly flattening with the spatula and flipping a few times.
