Steak-Spinach Salad With Sour-Cream Potatoes image

2 medium russet potatoes
3 tablespoons olive oil, plus more for brushing
1/2 cup sour cream
2 tablespoons buttermilk
1/4 cup chopped fresh chives
Juice of 1/2 lemon
Kosher salt and freshly ground pepper
1 3/4-pound boneless sirloin steak
1 large red onion, sliced into thick rings
6 ounces baby spinach or chopped regular spinach
2 to 3 tablespoons steak sauce

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes with a fork and brush with olive oil. Bake directly on the oven rack until tender, about 1 hour. Cool slightly, then cut into chunks. Mix the sour cream, buttermilk, chives and lemon juice in a large bowl and season with salt and pepper. Stir in the potatoes.
  • Meanwhile, preheat a grill to high. Brush the steak and onion rings with olive oil and season with salt and pepper. Grill the steak until marked on the bottom, about 7 minutes, then turn and cook 4 to 5 more minutes for medium-rare. Grill the onion rings until charred, about 2 minutes per side. Transfer the steak and onion rings to a cutting board and let rest 5 minutes.
  • Roughly chop the onion rings and toss with the spinach, steak sauce, 3 tablespoons olive oil, and salt and pepper to taste in a bowl. Thinly slice the steak. Divide the salad among plates, top with the steak and serve with the potatoes.

1/2 cup A.1. Roasted Garlic Steak Sauce
2 Tbsp. honey
2 Tbsp. HEINZ Red Wine Vinegar
1 Tbsp. GREY POUPON Dijon Mustard
1/3 cup olive oil
1 pork tenderloin (1 lb.)
1 large red onion, cut into wedges
6 large fresh mushrooms
8 cups tightly packed torn fresh spinach
3 hard-cooked eggs, cut into wedges

Steps:

  • Whisk first 5 ingredients until blended. Reserve 1/3 cup steak sauce mixture; refrigerate for later use. Pour remaining steak sauce mixture over combined meat, onions and mushrooms in shallow dish; turn to evenly coat all ingredients. Refrigerate 2 hours to marinate.
  • Heat grill to medium heat. Drain meat and vegetables; discard marinade. Grill meat 20 to 22 min. or until done (145ºF), turning after 10 min. Meanwhile, grill onions and mushrooms 4 to 5 min. on each side or until tender.
  • Remove meat from grill. Let stand 3 min. Meanwhile, cook reserved steak sauce mixture in saucepan on medium heat until heated through, stirring occasionally.

Salt and freshly ground pepper
1 vidalia onion, peeled and sliced into 1/2 inch thick slices
4 plum tomatoes, sliced in half
Olive oil
8 cups baby spinach, washed
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Poblano Vinaigrette, recipe follows
1 cup ketchup
1/4 cup horseradish
2 tablespoons honey
2 tablespoons Dijon mustard
2 tablespoons maple syrup
1 teaspoon Worcestershire sauce
2 tablespoons ancho chile powder
Salt and freshly ground white pepper
2 poblano pepers, roasted, peeled and seeded
1/4 cup chopped red onion
3 tablespoons fresh lime juice
3/4 cup olive oil
1/2 cup spinach leaves
1 teaspoon honey
Salt and freshly ground pepper

Steps:

  • Place steaks in a shallow baking dish and cover with the steak sauce, let marinate for 2 hours, turning once. Preheat grill. Remove steaks from marinade and season with salt and pepper to taste. Grill for 3 to 4 minutes on each side for medium-rare . Remove and let rest. Brush onion slices and tomatoes with olive oil and season with salt and pepper to taste. Grill on both sides until just cooked through. Place spinach in a large bowl and toss with balsamic vinegar, olive oil and salt and pepper to taste. Divide the spinach among 4 large salad dishes or platters. Slice each steak into 1/2-inch thick slices and fan on top of the spinach. Garnish with grilled tomatoes and onions and drizzle with Poblano Vinaigrette.
  • Mix together in a small bowl until combined. Season with salt and pepper to taste.
  • Combine poblanos, onion and lime juice in a blender and blend until smooth. While the blender is running, add the oil slowly until emulsified. Add the spinach and blend until smoooth. Add the honey and season to taste with salt and pepper.
