1 pound ground beef
1/2 medium onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and chopped
1 can pinto beans, drained and rinsed
2 cups tomato sauce, homemade or store-bought
1 medium tomato, chopped
1 cup grated Cheddar cheese
1 cup self-rising cornmeal mix
1/2 cup self-rising flour
1 large egg
1 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet or Dutch oven set over medium heat, cook the ground beef, breaking up the meat with a wooden spoon, until browned through, 3 to 5 minutes. Drain the fat from the meat. Add the onion, garlic, jalapeno, pinto beans, tomato sauce, and tomato and remove the pan from the heat. Top with the cheese.
  • In a medium bowl, combine the cornmeal, flour, egg, and buttermilk. Pour the mixture on top of the meat mixture.
  • Bake until the cornbread topping is lightly browned, 15 to 20 minutes. Serve hot.

7 ounce packet cornbread mix
½ cup milk
1 large egg
1 pound ground beef
3 Tablespoons taco seasoning ((or 1 packet))
1/3 cup water
11 ounce can Mexicorn (drained)
10 ounce can Rotel (drained)
2 cups sour cream
2 cups shredded Mexican cheese blend ((divided use))
1/2 cup chopped green onions
shredded lettuce, sliced olives, diced tomatoes, taco sauce

Steps:

  • Preheat oven to 350f degrees. Spray a 9" x 9" (or 2 1/2 quart) baking dish with nonstick cooking spray.
  • Combine cornbread mix with milk and egg. Stir well.
  • Pour batter into prepared baking dish and bake for about 15 minutes.
  • Meanwhile, cook and crumble ground beef until no longer pink, drain excess grease.
  • Then add in taco seasoning and 1/3 cup water and stir to combine.
  • Then add in Mexicorn and Rotel. Stir well and simmer for a couple of minutes.
  • Once cornbread is cooked, take out of oven, then cover with ground beef mixture.
  • Next, combine sour cream, ONE cup of shredded cheese and green onion in a bowl.
  • Gently spread the sour cream mixture on top of the ground beef mixture.
  • Sprinkle the top with the remaining cup of shredded cheese.
  • Bake for about 25 minutes until heated through and cheese is melted.
  • Allow to cool for a few minutes. Slice and serve.

Steps:

  • Preheat oven to 350F and move the rack to the middle position. Prep your ingredients.

14.75 oz cream style corn
8.75 oz canned corn
10 oz Rotel diced tomatoes and green chilies
1 oz taco seasoning
1 tsp salt
1 tsp pepper
1 tbsp onion powder
3 cups shredded Mexican cheese blend
17 oz Jiffy cornbread mix (2 boxes)
2 eggs, large
2/3 cup milk

Steps:

  • Preheat oven to 400F.
  • Dump the ground beef into a large saute pan over medium-high heat.
  • Crumble the ground beef well as it cooks.
  • Once the ground beef is fully cooked, drain the grease from the pan and reduce the heat to medium.
  • Without draining any of the cans, add the cream style corn, canned corn and Rotel to the pan.
  • Stir all of the ingredients together well.
  • Add the taco seasoning, salt, pepper and onion powder to the pan.
  • Stir well and leave to simmer and thicken for 5 minutes.
  • After 5 minutes, remove the pan from the heat and add 2 cups of the shredded cheese to the pan.
  • Stir until the cheese is melted.
  • Dump the mixture into a greased 9 x 1 3 inch baking dish and spread it out evenly.
  • Pour the cornbread mix into a large mixing bowl.
  • Add the eggs and milk to the bowl with the cornbread mix.
  • Stir until no large chunks remain.
  • Pour the cornbread batter over the ground beef mixture in the baking dish.
  • Place the dish in the oven and bake the casserole until the cornbread is starting to brown on top. 17-20 minutes.
  • Remove the dish from the oven and sprinkle the remaining cup of shredded cheese on top of the cornbread.
  • Return the dish to the oven and continue baking until the cheese on top is completely melted. 4-5 minutes.
  • Remove the casserole from the oven and allow it to sit for a few minutes before scooping and serving.

1 pound taco seasoned ground beef ((either leftover meat or beef cooked specifically for this purpose))
8 ounces Jiffy Corn Muffin mix ((1 box))
15 ounces whole kernel corn ((drained))
15 ounces creamed corn ((not drained))
1 cup sour cream
1/2 cup melted butter
1 cup shredded cheddar cheese
1/4 cup diced green chilies ((drained))
pico de gallo
sour cream

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl, mix all of the ingredients together and pour into a greased 9x9" or 9x13" baking pan. (NOTE: Ours fit in an 9" baking pan with deep sides. This casserole WILL expand slightly while baking so if you are afraid of it spilling over or want it to bake more quickly, use a 9x13 baking pan. Baking time will change if you use a different pan.)
  • This casserole will take about 60-70 minutes to bake if using a square 9x9 baking dish or 45-50 minutes in a 9x13 baking pan. Bake until lightly browned and set in the center. (The exact time will depend on the pan you use so watch it closely. The center should not be jiggly. If it is a deep casserole it will take longer to bake.)
  • Serve immediately with fresh salsa and a dollop of sour cream.

1 Tablespoon olive oil
1 green bell pepper (diced)
1 red bell pepper (diced)
2 cups shredded rotisserie chicken
1/2 cup water
1 Tablespoon taco seasoning
1 can sweet corn (drained, 15 ounce can)
1 can black beans (drained and rinsed, 15 ounce can)
1 can tomato sauce (8 ounce)
1 package Jiffy corn muffin mix (8.5 ounce)
1 egg ((as per muffin mix))
1/3 cup milk ((as per muffin mix))
4 ounces French fried onions ((divided))
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
  • Heat the olive oil in a medium skillet pan over medium-high heat and saute bell peppers for 2-3 minutes.
  • Add the chicken, water, taco seasoning, corn, beans and tomato sauce to the pan and cook for about 5 minutes, stirring frequently. Remove from heat and set aside.
  • Prepare the corn muffin mix according to the package instructions and stir half of the French fried onions into the batter.
  • Pour the chicken mixture into the prepared dish and spread the cornbread batter on top.
  • Bake for 20 minutes, or until the cornbread topping is golden brown.
  • Top the casserole with the remaining onions and shredded cheese.
  • Bake for another 3-5 minutes or until the cheese has melted.
  • Remove the casserole from the oven and allow it to rest for a few minutes before serving.

1 lb ground beef
1 medium onion, finely chopped
1 green bell pepper, finely chopped
1 (3/4 ounce) envelope taco seasoning
1 (15 ounce) can tomato sauce
1 cup frozen corn
4 ounces cheddar cheese, shredded
1 cup cornmeal
1 tablespoon all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 tablespoon lemon juice
1 cup milk
1 tablespoon melted butter

Steps:

  • Brown ground beef and drain. Return to skillet, add onions & peppers and cook until vegetables are soft.
  • Add corn, tomato sauce, corn and taco seasoning. Mix well and cook, over med about 15 minutes to reduce liquid.
  • Spoon into baking dish and top with cheese.
  • Mix cornmeal, flour baking powder and salt together in mixing bowl. Add egg and milk and then add butter and blend. Pour over meat mixture.
  • Bake for 25 minutes at 375°F.

1 tablespoon Chopped cilantro ((optional for garnish))

Steps:

  • Preheat oven to 400 degrees. Prepare a pie dish with nonstick cooking spray and set aside.
  • Start by cooking your ground beef in a large skillet. Drain fat and return to stove top. Add taco seasoning, salsa, and cream cheese. Cook until cream cheese is melted and all ingredients are well combined. Add this to your prepared pie pan.
  • Drain corn well and add to the top of your pie.
  • Mix your cornbread according to box instructions. Mine called for 1 egg and 1/3 cup milk. Spoon this on top of your pie. Top with shredded cheese.
  • Bake for 20-25 minutes or until cornbread is cooked through. Optional: garnish with fresh cilantro.
