Great side dish for about anything. Quick and easy, you can change or add seasonings if desired... but is straight-up good as-is.

- Heat oil in a large stockpot over medium heat; cook and stir onion and bacon until fragrant, 2 to 4 minutes. Add cabbage and mix well; pour in beer. Cover stockpot and simmer, stirring occasionally, until cabbage is tender, 10 to 15 minutes.

- In a deep skillet, cook bacon until done.
- Remove bacon from skillet, add the onions.
- Cook onions until translucent.
- Add cabbage and other ingredients, cover.
- Cook until tender.
- Crumble bacon back into pot and stir.
- Serve hot.

Savoy cabbage is a delicious, & delicate cabbage. Here it's braised with bacon, white beans and sage making it a wonderful supper with crusty bread! Yum!

Steps:
- Cook bacon in 12-inch non-stick skillet over medium-high heat until crisp, about 3 minutes.
- Use slotted spoon to set bacon aside; place on paper towelling.
- Drain off all but 2 tablespoons fat.
- Add garlic, crushed red pepper, and leeks to skillet.
- Cook until fragrant, about 2 minutes.
- Add cabbage, chicken stock, white wine and beans.
- Gently toss to combine.
- Simmer until cabbage is just beginning to wilt, about 3 minutes.
- Crumble bacon.
- Toss cooked mixture with bacon, sage, chives or scallions and pepper.
- Adjust seasoning.
- Serve immediately and enjoy!
SAVORY BRAISED CABBAGE WITH BACON
This is a great, inexpensive and filling side dish. I love cabbage dishes in the winter. This is an adaptation of a recipe from my local paper. My only addition might be to add sliced potatos.

Steps:
- Preheat oven 375°F
- Core cabbage and remove outer leaves and shred.
- Use a deep casserole or baking dish which can go on the stovetop and into the oven.
- Cook bacon over moderate heat, 5 min., until it is crispy. Remove bacon and set aside.
- Add onion and garlic to the bacon drippings, cook about 1 minute to soften.
- Add cabbage, stir, then add chicken broth and wine. Toss to coat the cabbage.
- Add the bacon to the cabbage, season to taste with salt and pepper. Add the bay leaf.
- Cover and bake 90 minutes or until all the liquid is absorbed.
- Remove bay leaf before serving.

- Fry the onion in butter for 2 mins, then add the bacon and cook for a few mins more until golden.
- Stir in the cabbage and boiling water. Cook for 2 mins over a medium heat until wilted, then cover, turn the heat to low and cook for another 5 mins.
- Uncover and stir well; the cabbage should have a little colour. If not, increase the heat and cook for a few moments more. Season to taste.

- Cook bacon in a large wide pot over medium-high heat until just crisp, about 5 minutes. Add sugar and cook, stirring constantly, for 30 seconds more. Add onions and salt and pepper and cook, stirring occasionally, until onions are golden and soft, about 10 minutes. Stir in apples, reduce heat to medium-low, cover, and cook until tender, 6-8 minutes.

- Remove outer leaves from cabbage, then cut into quarters. Remove stem and roughly dice. Wash to remove any debris, then drain well.
- Add cabbage and stir to coat in fat, then increase heat to medium-high. Once pan is sizzling hot, add salt and cumin (if using), then deglaze with your liquid of choice. Stir well, scraping any browned bits off the bottom of the pan.
- Reduce heat to medium and cook cabbage for 15-20 minutes, until tender. Stir a few times, adding more liquid as needed (cabbage should caramelize and brown lightly, so do not add too much liquid - but don't let the pan completely dry out either, else the cabbage will burn).
