Here is the thing about this spinach omelette. It's amazingly simple, easy-to-cook, healthy, and with a great balance of flavours. It's DELICIOUS!

1 cup spinach leaves
2 cloves garlic
2 eggs
1 tablespoon milk (skimmed optional)
salt (to taste)
1 teaspoon olive oil
2 tablespoon Parmesan cheese (grated)
1/2 teaspoon chilli flakes (optional for seasoning)

Steps:

  • Prep the ingredients. Wash and chop the spinach leaves. Don't let the leaves go dry. Leave some water. Thinly slice the garlic. Crack the eggs into a bowl, and add a tablespoon of milk. Add a pinch of salt, and whisk the eggs gently just enough for the yolk to mix well.
  • Heat a cast iron skillet (or any other frying pan), and add the chopped spinach, garlic, and sprinkle some salt. Let the leaves wilt, and take them off the skillet.
  • Pour a teaspoon olive oil on the pan, and spread it evenly with a spatula. Reduce the flame to medium, and pour the egg mixture. Tilt the pan and let the eggs spread evenly. As soon as the omelette start to set, lift near the edges with the spatula so that the uncooked eggs can reach the bottom of the pan. Once the center starts to set, top half of the omelette with the cooked spinach and garlic. Now sprinkle the grated cheese on top of it.
  • Lower the flame, and cook further. Wait for the cheese to start melting, and once the omelette starts to get detached from sides, fold in half. Gently slide the omelette to a plate.

Ok, folding over an omelet, French-style, isn't easy and for the longest time, I wouldn't try it. But, really, I found it's pretty simple once you try a few times. Now, I do it daily. Also, don't be fooled by restaurants who offer 3-egg omelets: in the average, 9" pan, that many eggs will result in an omelet too thick to easily fold over the ingredients. Stick with two eggs, and you'll fare better.

1 teaspoon olive oil
1 tablespoon garlic (minced)
2 large eggs
2 teaspoons skim milk
1/8 teaspoon thyme (dried)
salt and black pepper
1/2 ounce feta cheese
1 ounce shrimp (pre-cooked or canned)
1/2 ounce spinach (baby leaves, no stems, finely chopped or chiffonade)

Steps:

  • Using a non-stick, 9" skillet or omelet pan, heat the oil over medium-low heat and add the minced garlic.
  • In a bowl, whisk together the eggs, skim milk, and thyme. Season the eggs with a pinch of salt and a few grinds of fresh, black pepper.
  • When the garlic is just barely browning on the edges, pour the egg mixture into the skillet and, tilting it slightly or stirring, slosh it around so it covers all the garlic and the bottom of the pan.
  • Keep an eye on the omelet as the eggs stiffen. When the bottom of the eggs are fairly solid but there is still a good amount of liquid eggs on top, sprinkle the feta cheese over the eggs.
  • Continue cooking for about 2-3 more minutes and , then, make a thin line of shrimp about one-third of the way across the eggs. On top of that, sprinkle the finely chopped spinach in a row (reserving a pinch for garnish).
  • With a slender spatula (or turner), loosen the edges of the eggs from the skillet. Then, slide the spatula under the third of the omelet that has the shrimp and spinach on it. Fold the eggs over the ingredients towards the center of the omelet and hold, there, for just a few moments.
  • Over the serving plate, slide the omelet out -unfolded side first- and roll the already folded section over the flatter portion. You may have to do this several times on subsequent attempts to get the hang of it.
  • Sprinkle the top of the omelet with the reserved spinach and serve.

CHEESY SPINACH OMELET SANDWICH

One large skillet is all you need to make this easy and cheesy omelet sandwich for four. Cut into quarters, then stuff into a warm baguette with sliced ham for a weeknight bistro dinner in less than 25 minutes.

6 large eggs
Kosher salt and freshly ground pepper
3 scallions, thinly sliced
1 tablespoon unsalted butter
4 cups baby spinach (about 2 1/2 ounces)
1 baguette, cut crosswise into 4 pieces, each piece split open
6 to 8 slices provolone, cheddar or American cheese (about 4 ounces)
2 tablespoons mayonnaise-mustard blend
8 thin slices ham (about 4 ounces)
Radishes and olives, for serving

Steps:

  • Preheat the oven to 350˚ F. Whisk the eggs in a large bowl with 1/2 teaspoon salt and a few grinds of pepper; whisk in the scallions. Set aside. Melt the butter in a large ovenproof nonstick skillet over medium heat. Add the spinach, season with salt and pepper and cook, tossing to wilt, about 1 minute. Add the eggs to the skillet and move the spinach evenly around with a wooden spoon. Cook until the edges are slightly set, about 1 minute.
  • Transfer the skillet to the oven, along with the baguette pieces. Bake until the bread is toasted and the omelet is just cooked through but not browned, 4 to 6 minutes. Arrange the cheese slices over the omelet during the last minute of cooking to melt.
  • Slide the omelet out of the skillet onto a cutting board. Spread the mayonnaise-mustard blend on one side of each baguette piece. Cut the omelet into 8 wedges. Fill each baguette piece with 2 omelet wedges and 2 slices of ham. Serve with radishes and olives.

I make this on Saturday mornings and it is so easy, but tastes so great! Don't be afraid of the cottage cheese, it makes the eggs creamy and delicious. It's pretty enough to serve to guests!

4 large eggs
1/2 cup low fat cottage cheese
1/2 teaspoon cajun seasoning
salt and black pepper
2 cups fresh spinach
1/3 cup cheddar cheese (shredded)
1 teaspoon olive oil

Steps:

  • Beat the eggs until frothy.
  • Add the salt, pepper, and cajun seasoning.
  • Stir in the cottage cheese.
  • Heat a medium skillet on medium-high and add the olive oil, making sure to coat bottom of skillet.
  • Add egg mixture and stir as if making scrambled eggs.
  • When eggs are half cooked, add fresh spinach,reduce heat, and cover.
  • When spinach is wilted (about 3 minutes) turn off heat and sprinkle with cheese.
  • Cover for about 2 more minutes, then serve.
  • You can also add chopped tomatoes to this recipe. Just be sure they are well drained (I use paper towels). Add them when you add the spinach.

8 ounces fresh Baby Spinach, washed and drained
8 medium eggs
1 tablespoon pesto sauce
1 dash Tabasco sauce
1/2 cup grated asiago cheese
1/2 cup artichoke hearts packed in oil
1/2 cup sun-dried tomato packed in oil
2 tablespoons pine nuts

Steps:

  • Preheat the oven to 375°F.
  • Put the oil in a 7x10 inch baking dish and put in the oven to preheat for 10 minutes.
  • Steam the spinach for 7 minutes. Drain well, squeeze out the excess water and coarsely chop. Set aside.
  • Drain the artichoke hearts and sun dried tomatoes. Thinly slice, about matchstick width. Set aside.
  • Beat the eggs with the pesto sauce and Tabasco.
  • Stir in the grated cheese, artichoke slices and sun dried tomatoes. Combine well.
  • Carefully pour half the egg mixture into the preheated baking dish and sprinkle with one tablespoon of pine nuts. Return to the oven and bake for 10 minutes.
  • Remove from the oven and reduce the heat to 325°F.
  • Spread the spinach evenly over the baked egg layer.
  • Pour the rest of the egg mixture over the spinach and sprinkle with the remaining pine nuts.
  • Return to the oven and bake for 20 minutes.
  • Cut into quarters and serve with crusty bread and a mixed salad.

You can use bagged baby spinach or stemmed and washed bunch spinach for this simple omelet with Mediterranean flavors.

2 ounces baby spinach or stemmed, washed bunch spinach (2 cups, tightly packed)
1 large or 2 small garlic cloves, minced or puréed
Salt and freshly ground pepper
2 eggs
2 to 3 teaspoons low-fat milk
2 teaspoons extra virgin olive oil
2 teaspoons freshly grated Parmesan

Steps:

  • Wash the spinach and wilt in a frying pan over medium-high heat. The water remaining on the spinach leaves after washing will be sufficient. Drain, allow to cool and squeeze out excess water. Chop medium-fine and toss with half the garlic and salt and pepper to taste.
  • Break the eggs into another bowl and beat with a fork or a whisk until they are frothy. Whisk in the remaining garlic, salt and pepper to taste and 2 to 3 teaspoons milk.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons olive oil. Hold your hand an inch or two above the pan, and when it feels hot, pour the eggs into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • As soon as the eggs are set on the bottom, sprinkle the spinach over the middle of the egg pancake and top with the Parmesan, then jerk the pan quickly away from you then back toward you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute or two longer. Tilt the pan and roll the omelet out onto a plate.
