1 1/2 lbs potatoes, small and firm
2 tablespoons butter
2 tablespoons olive oil
2 red onions, cut into chunks
8 cloves garlic, unpeeled
2 tablespoons fresh rosemary, chopped
salt, to taste
black pepper, to taste

Steps:

  • Preheat the oven to 450°F Peel the potatoes, cut into quarters, and rinse with water.
  • To ensure that the potatoes remain crisp, they should be completely dry before cooking.
  • Place the butter and oil in a roasting pan and place in the oven to heat.
  • When the butter has melted and is foaming, add the potatoes, red onions, garlic and rosemary.
  • Toss well and then spread out in a single layer.
  • Place the pan in the oven and roast for about 25 minutes until the potatoes are golden and tender when tested with a fork.
  • Shake the pan from time to time to redistribute the potatoes.
  • When they are cooked through, season with salt and pepper.
  • Note: Salt the potatoes a few minutes before the end of cooking, as this will help them retain their shape.

4 cups chicken broth
2 pounds fresh green beans, trimmed

Steps:

  • Place bacon in a large Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a plate lined with paper towels, reserving some of the drippings in the Dutch oven.
  • Stir onion in reserved drippings; cook and stir until browned, about 10 minutes. Stir garlic into the onion; cook until softened, 1 to 2 minutes. Pour broth into the Dutch oven; add green beans. Chop bacon and add to the Dutch oven.
  • Bring the broth to a boil, reduce heat to low, and place a cover on the Dutch oven. Simmer the green bean mixture until the beans are tender, about 1 hour. Add potatoes; season with salt and pepper. Continue cooking until the potatoes are tender, about 30 minutes more.

¼ cup olive oil
6 medium red potatoes, quartered
½ pound fresh green beans, trimmed
2 medium (blank)s portobello mushroom caps, chopped
½ cup matchstick carrots
1 tablespoon olive oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Grease a shallow baking dish.
  • Mix soup mix and 1/4 cup olive oil together in a large zip-top bag. Add potatoes and coat well. Transfer to the prepared baking dish.

1 garlic clove

2 pounds green beans, trimmed and cut into 1-inch pieces

Steps:

  • Halve the potatoes, unpeeled, and cut them into 1-inch wedges. In a large roasting pan heat 1/3 cup of the oil in the middle of a preheated 425°F. oven for 5 minutes, add the potatoes, tossing them to coat them with the oil, and roast them, stirring them every 10 minutes, for 30 minutes, or until they are tender. Let the potatoes cool in the pan. In a blender purée the garlic, the vinegar, the rosemary leaves, and salt to taste, with the motor running add the remaining 1/3 cup oil in a stream, and blend the dressing until it is emulsified. In a small bowl of ice and cold water let the onion soak for 5 minutes, drain it well, and pat it dry. In a kettle of boiling salted water boil the green beans for 5 minutes, or until they are crisp-tender, and drain them in a colander. Refresh the beans under cold water and pat them dry. In a very large bowl combine the potatoes, the onion, the green beans, and the olives, add the dressing, and toss the salad gently. 2 tablespoons olive oil
1/2 cup thinly sliced white onions
1 tablespoon butter
2 tablespoons finely chopped parsley

Steps:

  • Place potatoes in a saucepan, add cold water to cover and salt to taste. Bring to a boil and cook until the potatoes are tender, about 20 minutes. Drain thoroughly and let cool.
  • Cut the potatoes, with skins on, into 1/4-inch slices.
