4 (3 by 8-inch) untreated cedar shingles soaked in water for 2 hours
Vegetable oil, for brushing shingles
4 salmon fillets (8 ounces each)
Salt and pepper
8 medium tomatillos, husked
4 garlic cloves, peeled
1 small red onion, peeled and quartered
2 tablespoons olive oil
1 canned chipotle
1/4 cup cilantro leaves
2 teaspoons honey
Salt and freshly ground pepper
6 potatoes, peeled, quartered and boiled
4 tablespoons unsalted butter
3/4 cup heavy cream, warmed
1 tablespoons chipotle puree
4 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper

Steps:

  • Salmon: Preheat a grill to high. Remove shingles from water and brush with vegetable oil on both sides. Place on the grill and allow to heat through, about 10 minutes. Remove to a sheet pan. Preheat oven to 375 degrees F. Season salmon with salt and pepper, then sear on all sides quickly. Place a salmon fillet on each shingle and cover sheet pan with foil. Place in oven and cook until just done, about 5 to 8 minutes.
  • Roasted Tomatillo Sauce: Preheat the oven to 350 degrees F. Rub the tomatillos, garlic and onion with olive oil, place on a baking sheet, and roast for 20 minutes or until the tomatillos are soft. Place all the ingredients in a food processor and puree until smooth, season with salt and pepper to taste.
  • Chipotle Mashed Potatoes: Place potatoes in a large bowl, add butter, warm cream, chipotle puree and garlic and mash until smooth. Season with salt and pepper.

1 pound tomatillos, husked, washed and halved
4 cloves garlic
2 jalapeno peppers
1 green bell pepper
1 poblano pepper
1 onion, cut into quarters
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 small bunch fresh cilantro, leaves only
Zest and juice of 1 1/2 limes

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the tomatillos, garlic, jalapenos, bell pepper, poblano and onion on a baking sheet and season with salt and pepper. Drizzle with olive oil and toss everything to coat. Roast until the vegetables are soft, 10 to 15 minutes. Let cool for a few minutes.
  • Remove the seeds from the peppers. Put all of the roasted vegetables and the cilantro into a food processor or blender. Process until still a bit chunky. Thin with some water if it is too thick. Stir in the lime zest and juice. Let cool completely.
  • Use immediately or pour into freezer bags, label and freeze.

2 tablespoons mild honey or pure maple syrup
1 teaspoon minced rosemary
1 tablespoon grated lemon zest
1 (2-pounds) salmon fillet with skin (1 1/2 inches thick)
Equipment: a cedar grilling plank (about 15 by 6 inches)

Steps:

  • Soak cedar grilling plank in water to cover 2 hours, keeping it immersed.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure . Open vents on bottom and lid of charcoal grill.
  • Stir together mustard, honey, rosemary, zest, and 1/2 teaspoon each of salt and pepper. Spread mixture on flesh side of salmon and let stand at room temperature 15 minutes.
  • Put salmon on plank, skin side down (if salmon is too wide for plank, fold in thinner side to fit). Grill, covered with lid, until salmon is just cooked through and edges are browned, 13 to 15 minutes. Let salmon stand on plank 5 minutes before serving.

4 pasillas de Oaxaca (dried smoked chiles), wiped clean
1 pound fresh tomatillos, husked and rinsed, then quartered
1 cup packed cilantro sprigs
2 garlic cloves
1 tablespoon packed dark brown sugar
1 teaspoon molasses (not blackstrap)
1/2 teaspoon ground cumin
1/3 cup vegetable oil
For steaks and tomatillo salad:
1/4 cup vegetable oil, divided
3/4 teaspoon ground cumin
1 3/4 pounds skirt steak, halved
1/2 pound fresh tomatillos, husked and rinsed
1 cup cilantro leaves
2 teaspoons finely chopped shallot
2 teaspoons fresh lime juice

Steps:

  • Make salsa:
  • Slit chiles lengthwise, then stem and seed. Heat a dry heavy skillet (not nonstick) over medium heat until hot, then toast chiles, opened flat, turning and pressing with tongs, until more pliable and slightly changed in color, about 1 minute. Cover chiles with hot water in a bowl and soak until softened, about 20 minutes, then drain.
  • Purée chiles, tomatillos, cilantro, garlic, brown sugar, molasses, cumin, and 1 teaspoon salt in a blender until smooth, about 1 minute.
  • Heat oil in a 10-inch heavy skillet over medium-high heat until it shimmers, then cook salsa (it will spatter), stirring occasionally, until slightly thicker, 5 to 8 minutes.
  • Grill steaks:
  • Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure.
  • Whisk together 2 tablespoons oil, cumin, 1 1/2 teaspoons salt, and 1 tsp pepper, then coat steaks.
  • Oil grill rack, then grill steaks, covered only if using a gas grill, turning once, until grill marks appear, 4 to 6 minutes total for medium-rare. Let steaks rest on a cutting board, loosely covered with foil, 10 minutes.
  • Make salad while steaks rest:
  • Thinly slice tomatillos and toss with cilantro, shallot, lime juice, remaining 2 tablespoons oil, and salt and pepper to taste.
  • Cut steaks into serving pieces and top with salsa and salad.

This recipe is a (very) slightly adapted version of a recipe from Real Simple magazine, Jan. 2009. It was voted No. 9 in a list of readers 50 favorite recipes! It is delicious and SO easy! Buy your salmon fillets fresh (with skin) and you won't get that fishy smell at all! I baked the salmon when I made this recipe, but I have also included instructions for grilling outdoors. The cedar plank adds a wonderful, smoky flavor. It should be 7 x 14 x 1/3 inches. I found cedar planks in the meat department of my local grocery store. You must soak the cedar plank in water for no less than 30 minutes before use. Prep time includes soaking time.

2 tablespoons canola oil

  • Preheat oven to 350 degrees. Place pre-soaked cedar plank on a rimmed baking sheet.

  • Serve with fresh lemon wedges.

Donald Barickman, who developed this crowd-pleasing recipe, cooks the salmon over a homemade barbecue pit, but you can use a large gas or charcoal grill. The longer the salmon cooks, the more pronounced the wood-roasted flavor, so you want to avoid cooking it too close to the heat.

1 cedar plank, untreated (at least 8 by 5 inches and 1 inch thick)
2 fire-resistant supports, such as cinder blocks, for cedar plank
1/3 cup coarse sea salt
1 bunch fresh thyme
1 bunch fresh rosemary
1 three-pound whole side of salmon, skin on, boned and trimmed of excess fat
2 small nails or screws, for cedar plank
1 tablespoon freshly ground pepper
Picture wire (at least 15 feet)

Steps:

  • Build a hot fire. Prepare cedar plank by toasting it over hot coals until it begins to blacken slightly on one side; remove from heat, and let cool completely.
  • Place board, toasted side up, with both ends resting on supports. Sprinkle with one-third salt and a few sprigs each thyme and rosemary. Place salmon on plank, skin side down. About 2 inches from each end, tap one nail horizontally into side of plank, leaving head protruding for the wire. Season salmon with remaining salt and pepper, and arrange remaining herbs across the top.
  • Starting at the larger end of fish, twist wire around the nail several times to secure. Wrap wire entirely around salmon and plank at 2-inch intervals, making sure that it is tight enough to hold fish in place without slicing through the tender flesh. When you reach the other end of the plank, twist the wire several times around other nail, and trim any excess wire with wire cutters.
  • Arrange plank supports near the fire, and rest the plank, fish side down, on top, 15 to 20 inches above the coals. Cook until thicker part of fish is firm to the touch, 25 to 35 minutes, depending on the heat of the fire, the distance from the heat during cooking, and the thickness of the fish. Roll the plank several times during cooking to check for doneness, and spritz fish and plank with water if they begin to smolder.
  • Remove plank from heat, and let cool slightly. Remove wire and herbs, and discard. Cut fish on the diagonal, or flake the flesh with a fork into large pieces, and serve it directly from the plank.

My son prepared this wonderful dish for us and it was my first time to taste this method of griiling; what flavour! Planked salmon is a method of cooking salmon that has been used for many years. The salmon is slow cooked, which produces a rich, smoky flavor. Use only untreated cedar; look for planks at the fish counter at your supermarket or ask your fishmonger.

2 untreated cedar planks
6 (4 ounce) salmon fillets
1/3 cup pure maple syrup
1 large red onion, chopped
1 teaspoon dried tarragon leaves
1/2 tablespoon black peppercorns, crushed

Steps:

  • Submerge untreated cedar plank in water. Soak approximately 12 hours, or overnight.
  • Preheat an outdoor grill for high heat. Place prepared plank on the grill, and sprinkle with coarse salt.
  • Cover grill and heat plank 2 to 3 minutes, until dry. Adjust grill temperature for medium Low heat.
  • Rub salmon filets with maple syrup. Arrange on the plank.
  • Top salmon with red onion,tarragon and black peppercorns.
  • Barbecue with lid closed until a knife tip inserted in centre of fish comes out warm, 20 to 30 minutes depending on thickness of filet.
  • Check fish occasionally during cooking.
  • If plank ignites, spray with water.
  • Remove salmon from plank to dinner plates or a platter.
  • For an extra boost to the flavour soak add a bottle of beer to your water the last 2 hours of soaking.

  • Put a weight atop the cedar plank and soak in water for a minimum of one hour, preferably longer.
