CANNED TOMATOES & CHILIES: ROTEL COPYCAT RECIPE
Make and boiling water can (or freeze) this Rotel copycat recipe at home using fresh, simple ingredients - it's truly like the real thing!

Steps:
- Wash, core, peel and quarter tomatoes. Add to a large stockpot.
- Wash, stem, and seed chilies (leave the seeds to increases spiciness if you'd like). Finely chop by hand or cut into large pieces and finely chop in a food processor.
- Add chilies, salt, pepper, oregano, and coriander to tomatoes in stockpot, bring to a low boil, reduce heat and simmer for 10 minutes.
- While tomato mixture is simmering, prepare canner, jars and lids (see note for a tutorial for water-bath canning).
- To clean, hot, pint canning jars, add 1/4 teaspoon citric acid or 1 tablespoon lemon juice (if using quart jars, add 1/2 teaspoon citric acid or 2 tablespoons lemon juice).
- Ladle the tomato-chili mixture into each jar, leaving 1/2-inch headspace. Remove bubbles with a spatula, wipe rims, and attach lids.
- Add jars to canner, cover, bring to a boil and process 40 minutes for pints (50 minutes for quarts), adjusting heat as needed to maintain a soft boil. When timer goes off, remove lid, turn off heat and allow jars to sit in canner 5 minutes.
- Remove jars from canner to a towel-lined counter and let cool 12 to 24 hours. Remove rings for storage and check lids to be sure they've sealed (gently pull up with your fingers). Refrigerate any that didn't seal.

- 1. Place all ingredients in medium-large saucepan. 2. Simmer until mixture is reduced to 1 quart (I poured out the mixture into a large measuring bowl to make sure it was down to 1 quart.). 3. Store in the fridge or store in 1 cup portions. 1 cup is equal to about one 10 oz. store-bought can of Rotel. (I imagine you can also can this recipe, but I've never tried it.)

- Place in 4 quart saucepan, and simmer until reduced to 1 quart.
- (Measure 1 quart water into saucepan in advance, and mark on outside of pan, to help you judge).
- The cans at the grocers are 10oz in size, so freeze in 1 cup portions.
- This way you can adjust the hot peppers to suit yourself, and making small batches is so easy!
- Remember, freezing makes the peppers hotter.

Steps:
- X the bottom of tomatoes and place 8 in boiling bath of water for about 15 to 30 seconds or until the skin starts to lift up. Then place in ice filled water bath immediately after you take them out.
- Peel and quarter tomatoes. Place in a large mixing bowl.
- Sauté garlic in olive oil for 2 minutes.
- Add onions, peppers, and celery stir till oil gets on all veggies.
- Add Vinegar.
- Add spices and sugar, simmer for 5 minutes.
- Add tomatoes and simmer for 45 minutes.
- Wash canning jars and lids.
- Place lids in warm but not boiling water to soften the rubber.
- Boil water in large pot to place jars into seal.
- Boil in bath for 20 minutes then remove tighten lids and flip on their tops.
- After 15 minutes flip back and they should be sealed. If not sealed repeat bath.
- Store in cool place.

ITALIAN STYLE STEWED TOMATOES -GOOD FOR CANNING
I stewed a whole bushel today, but this is the recipe for one batch. I can these and use them for spaghetti sauce, crock pot chicken cacciatore and anything you would used canned tomatoes for. I never buy canned tomatoes anymore!

- Blanch, peel, core and quarter tomatoes.
- Heat olive oil in a large dutch oven.
- Add garlic and oregano, cook till garlic is tender and oregano is fragrant (about 2 minutes).
- Add chopped onion and peppers and cook until tender (about 5 min).
- Add tomatoes and sugar, simmer uncovered about 45 min or until desired consistency (you will need to cook longer if tomatoes are watery).
- Place in hot sterilized mason jars, and place in hot water bath, bring water back to the boil and boil for about 20 minutes longer, remove and let cool, re-bath any jars that don't seal.
- NOTE: Some people feel that the hot water bath method is not safe for this recipe, and that a pressure canning method should be used, however, I have always done these this way with no problem.
- I leave this up to your discretion.
