ROQUEFORT SALAD WITH WARM CROUTONS AND LARDONS

Steps:
- Put a large frying pan on a high heat, and once hot, add a good couple of lugs of olive oil. Cut your bacon into thick 1cm lardons (have a look at the picture - that's roughly the size your croutons and bacon should be), and add to the pan. Fry, stirring occasionally, for around 3 minutes, or until you've got a good bit of colour on the bacon and a lot of the fat has rendered out. Turn the heat down a little and add your bread to the pan, making sure you spread the croutons out so they take on some colour. Fry for another 3 minutes, or until they've sucked up all the wonderful flavour and are lovely, crisp and golden.
- Put the extra virgin olive oil, red wine vinegar, Dijon mustard and a good pinch of sea salt and black pepper into a clean jam jar. Put the lid on and give it a shake, then have a taste and make sure you've got the balance right. You want it to be slightly too acidic at this stage, as you'll get quite a bit of saltiness from the bacon and French dressings tend to be quite sharp.
- Once your dressing is made, get everyone around the table so they're ready to tuck in as soon as the salad is ready. Put your salad leaves on a big platter, tear in the radicchio, then pour over that wonderful, thick dressing. Scatter over most of your walnuts and chives and all the croutons and lardons. Quickly mix it all up with your clean hands so that every single leaf is coated.
- Use the tip of a knife to crumble off little nuggets of Roquefort and let them fall straight on to your salad. Finish by scattering over the rest of the walnuts and chives from a height, and tuck in.

ROQUEFORT DRESSING II
I love Roquefort dressing, but have never really found a bottled brand that I like. This is wonderful! Hope you like it. Be sure to use a real mayonnaise rather than Miracle Whip for this one.

ROQUEFORT-BLUE CHEESE DRESSING
This dressing is for the blue cheese lover, AND for those that like a little blue cheese taste. It's not overpowering because of the sour cream....just a nice balance. Great for the Easter Dinner or buffet table. I even enjoy just dipping vege's in it. A nice change from the typical dressings. If you like sharp salty taste,...

ROQUEFORT DRESSING
This is my version of the wonderful Roquefort dressing that was served at the Magic Lamp Inn in Cucamonga CA when I worked there as a prep-cook 40-45 years ago. As memory serves, it tastes pretty much like the original and is great on salads and as a dip for French fries, chips, chicken wings, or just about anything else you might want to dip in a blue cheese dressing. You have to start this a day ahead to drain the yogurt.

Steps:
- The night before you want to make the dressing, line a colander with a wet paper towel, stir the yogurt well, and place in the colander to drain.
- Cover with another damp paper towel, and allow to drain overnight.
- If you are a wuss, place the colander in a bowl, and let it drain in the fridge; if not, just leave it in the sink overnight.
- Yogurt just gets better when in sets at room temperature; its a living organism; it doesnt like the cold any more than you do!
- The yogurt should have drained down to about 2 cups, more or less.
- If you are a purist, finely chop the scallions, parsley, white onion, and press the garlic; if not, coarsely chop them, throw them in the food processor, pulse until everything is finely chopped, scraping bowl down once, and transfer to a bowl.
- At the Magic Lamp, everything but the mayo and seasonings, went through the meat grinder, which still left a little texture.
- Combine the yogurt, cream cheese, mayonnaise, and blue cheese in a food processor, or whisk until well combined.
- Crumble the Roquefort or additional blue cheese, add to the processor, and pulse a couple more times, or finely crumble, and whisk into the mixture.
- Add seasonings, and pulse or whisk until incorporated.
- Allow to set for at least 30 minutes to allow flavors to develop, taste, and adjust any or all seasonings to taste.
- If possible, refrigerate overnight before using.
- Note: If the dressing seems to need something after setting, I often stir in a couple splashes of balsamic vinegar.
- This is definitely not part of the original recipe.
- Who had ever even heard of balsamic vinegar in the 60s?

STEAK ROQUEFORT
If you're a real bleu cheese fan as we are, eyes will roll and drool will escape while you eat this dish, so wear a bib and don't eat this in front of potential in-laws. I suggest standing the filets at room temperature for 30 minutes and trimming them of fat before frying. For the sauce you'll need about 3 ounces of Roquefort cheese; If you can't get Roquefort, look for a very serious blue cheese, but it also has to be moist - some blue cheeses are just too dry; Do NOT get a blue cheese that looks as if it would crumble really well; We got a piece of Roquefort Vernieres which is manufactured directly by God in France.

Steps:
- Season filets with pepper to taste.
- Cut the cheese in small chunklets.
- Fry the steaks on high heat in the butter, (the way they were intended to be fried before cholesterol was invented); about 5 minutes per side for medium-rare, depending on the thickness.
- Heat the cream in a small saucepan on medium-high heat.
- Add the cheese as soon as the cream nears boiling and keep stirring in on medium-high heat; The sauce has to cook for about 5 minutes to reduce nicely; You should end up with a sauce with the consistency of very thick cream.
- Add chopped parsley for color.
- Put the steaks on plates and add a very generous ladlefull of sauce over the steaks- Eat- Bliss.

ROQUEFORT DRESSING RECIPE
Steps:
- Combine all the ingredients except for the cheese in a bowl and whisk them until smooth.
- Crumble in the blue cheese and mix together gently if you like clumps of cheeses in your dressing or more aggressively if you like it more smooth. If you want it really smooth, you may want to combine everything in a blender but I think you lose the mouth feel when you lose the texture from the chunks of blue cheese.
- Taste and adjust seasonings with a little salt & pepper.
- Serve on greens or try it on grilled chicken breasts. I bet it would work well with steamed or grilled vegetables like asparagus.
CREAMY ROQUEFORT SALAD DRESSING
