A delicious, creamy textured soup without the cream. The secret is in the beans! This soup is an all time favorite in my family. Serve hot or cold with a dollop of sour cream, or goat cheese. Sprinkle with some chopped watercress.

3 red bell peppers
1 onion, chopped
1 tablespoon minced garlic
1 tablespoon olive oil
2 (15 ounce) cans cannellini beans, drained and rinsed
2 (14.5 ounce) cans chicken broth
salt and pepper to taste

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a paper bag, close tightly and allow them to cool for 20 to 30 minutes. Then peel the skin off the peppers and discard the stem and all the seeds. Chop the peppers and set aside.
  • In a large pot over medium heat, saute the onion and garlic in the oil for 5 minutes, or until onion is translucent. Now add the chopped, roasted red bell peppers and saute for 2 to 3 more minutes.
  • Next, add the chicken broth and the beans, stirring well. Using a blender, puree the soup in small batches and return to the pot over low heat for 5 minutes.

8 large red bell peppers
2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream
2 tablespoons chopped fresh cilantro leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 to 2 tablespoons cornstarch
1 cup sweet corn kernels, lightly roasted
Cilantro Lime Sour Cream, recipe follows
1 cup sour cream
1/2 lime, juiced
1 teaspoon finely minced fresh cilantro leaves

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.
  • Saute the butter, onions, and garlic until soft in a heavy bottomed soup pot on medium-low heat. Add the reserved red peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, salt, and pepper. Stir in the cornstarch mixed with a little cold water to thicken. Simmer 5 minutes. *Let the soup cool slightly, and then blend in batches in a blender, or use an immersion blender to puree. Sprinkle the roasted corn over the soup before serving and top with a dollop of Cilantro Lime Sour Cream.
  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

2 large red bell peppers ((left whole))
1 28-ounce can crushed or peeled tomatoes in juices
1 6-ounce can tomato paste
1 cup water ((sub up to half with extra coconut milk for creamier soup))
1 14-ounce can light coconut milk ((use full fat for creamier soup))
1 1/2 Tbsp dried dill ((or sub 3 Tbsp (5 g) minced fresh dill per 1 1/2 Tbsp dried))
1 Tbsp garlic powder
1 tsp dried basil ((or sub 2 tsp minced fresh basil per 1 tsp dried))
1/2 tsp each sea salt and black pepper
3-4 Tbsp coconut sugar ((or stevia to taste))
1 pinch red pepper flake ((optional // for heat))
Croutons
Sliced tomatoes
Fresh dill
Full-fat coconut milk
Crispy baked chickpeas
Nutritional yeast or Vegan Parmesan Cheese
Black pepper

Steps:

  • Roast red peppers in a 500 degree F (260 C) oven (on a foil-lined baking sheet) or over an open flame on a grill or gas stovetop until tender and charred on all sides - about 10-15 minutes in the oven, or 5 minutes over an open flame. Then wrap in foil to steam for a few minutes.
  • In the meantime, add remaining soup ingredients to large pot and bring to a simmer. Then unwrap red peppers, let cool to the touch, and remove charred outer skin seeds and stems. Add to soup (see photo).
  • Transfer to blender or use immersion blender to purée soup. Then transfer back to saucepan/pot and bring to a simmer over medium-low heat. Taste and adjust seasonings as needed, adding more coconut sugar or stevia to sweeten, red pepper flake for heat, basil or dill for earthiness, garlic powder for overall flavor, or salt for saltiness. I added a bit more of each. Go for big flavor!
  • Let simmer on low for at least 10 more minutes. The longer it simmers, the deeper the flavor develops.
  • Serve as is or top with desired toppings, such as croutons, fresh dill or basil, tomatoes, crispy baked chickpeas, nutritional yeast or Vegan Parmesan Cheese, and/or black pepper.
  • Leftovers will keep covered in the refrigerator for 4-5 days or the freezer for 1 month.

2 tablespoons butter
1 rib celery, chopped
1 small carrot, chopped
1/2 small onion, chopped (1/2 cup)
1 small garlic clove, minced
3 medium red bell peppers, ribs and seeds removed, and cut into 1-inch chunks (5 cups)
1 can (14.5 ounces) reduced-sodium chicken broth
1 bay leaf
1/2 cup heavy cream
1 pinch sugar
Coarse salt and ground pepper
2 tablespoons roughly chopped chives, for garnish

Steps:

  • In a large saucepan, melt butter over medium-low heat. Add celery, carrot, onion, and garlic; cook until onion is opaque and carrot is crisp/tender, about 10 minutes.
  • Add peppers, broth, 2 cups water, and bay leaf; bring to a boil. Reduce heat to medium, and simmer until peppers are very tender, about 15 minutes.
  • Remove bay leaf; puree soup in batches in blender. Return to pot; add cream and sugar. Season with salt and pepper. If necessary, gently reheat before serving, and garnish with chives.

HEALING ROASTED TOMATO AND RED PEPPER SOUP

This soup is packed with sweet roasted tomatoes and smoky roasted red bell peppers. It's thick and comforting. It's great on its own or delicious served with gluten free croutons, bread, or a grilled cheese sandwich.

6 cups tomatoes (I used a combo of cherry and vine-ripened, but any kind will do)
1 white onion, sliced
2 tablespoons olive oil
Salt
6 to 7 garlic cloves, peeled
2 large red bell peppers
Red pepper flakes to taste (optional)
Salt to taste
2 teaspoons red wine vinegar
2 teaspoons olive oil

Steps:

  • Preheat your oven to 400 degrees.
  • TOMATOES/ONION/GARLIC:
  • If using larger tomatoes, cut them into fourths.
  • Place the tomatoes and onion on a large rimmed baking sheet (or divide into two smaller baking sheets if too close together). Toss with the olive oil and the salt and spread out evenly.
  • Place the garlic cloves on a large piece of tin foil and drizzle with a little oil. Wrap the garlic up tightly so that the cloves are all laying flat. Place the garlic on the baking sheet.
  • Roast everything for 20 to 22 minutes, flipping halfway through. Everything should be tender and the tomatoes will have released their juices.
  • RED PEPPERS:
  • While the tomatoes are roasting start roasting the peppers.
  • Gas Stove method: Turn two gas burners on high. Place a red pepper on each gas burner and allow the skin to char, about 2 to 3 minutes per side. Use tongs to rotate the pepper so each side is really black and blistered (see picture). You may see the skin catch on fire every once in awhile.That's okay, it usually goes out quickly. Don't walk away from the peppers.
  • Broiler Method: Turn on your broiler. If you don 't have a broiler that is separate from your oven then you will need to wait until the tomatoes are done roasting. Place the peppers on a rimmed baking sheet and place them as close to the broiler as you can. Broil for 3 to 5 minutes per side, or until all the sides are well charred.
  • Once the peppers are charred place them in a large mixing bowl. Cover tightly with plastic wrap. Allow the steam to help loosen the skin, about 5 minutes.
  • Use a paper towel to peel off most of the blackened skin from the red pepper. Make sure to leave behind some char as it adds that smoky flavor. I actually like to leave a lot of the char on the pepper.
  • Cut the bell pepper, removing the core and seeds.
  • BLEND:
  • Allow the roasted tomatoes to cool slightly. Add all ingredients to your blender, including the red wine vinegar, red pepper flakes, and olive oil, working in batches so that the blender is only halfway full at a time. Blend until smooth.
  • Taste and adjust seasoning as needed: more salt to bring out the flavor, or a little red wine vinegar for more tang, or red pepper flakes for a little more heat.
  • If the soup has cooled too much you may need to reheat it before serving.
  • Serve with gluten free stove top croutons, other gluten free bread, or gluten free grilled cheese sandwich, if desired. Also delicious on its own. Enjoy and be healed my friends!

Steps:

  • Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the potatoes, celery, shallots, 1/2 teaspoon salt, and pepper to taste and cook, stirring frequently, until the potatoes begin to soften, about 5 minutes. Add the red peppers, sun-dried tomatoes, chicken broth and 1 cup water. Cover and bring to a simmer, then uncover and cook until the potatoes are tender, about 15 minutes.

ROASTED RED PEPPER SOUP

Steps:

  • Remove the seeds from the peppers and cut into quarters. Place them on a baking tray and and lightly brush with olive oil. Season with salt and pepper and place them into the oven for 6-8mins at 180C, until the skins just start to look charred.
  • Place the water and stock cube in a saucepan. Add the chopped carrots, celery, onion and garlic. Bring to the boil and cook for 5 mins. Turn down the heat to a gentle simmer for 15 to 20 minutes until the chopped vegetables become tender.
  • Remove the peppers from the oven and when cool enough to handle, put them into a sealed plastic bag and let them cool. Once they have cooled, remove from the bag and peel off the charred skin. Chop the flesh into small pieces and add to the saucepan along with the tinned tomatoes.
  • Simmer for a further 10 minutes. Remove from the heat and and add the fresh basil. Whizz everything together with a hand held blender, taste and check for seasoning.
  • Serve with a drizzle of olive oil or splash of cream.

  • Heat oil in a large pot over medium heat.

6 large red bell peppers
2 tablespoons olive oil
1/2 cup coarsely chopped onion
1 tablespoon minced garlic
1 tablespoon chopped basil, plus basil chiffonade, for garnish

1/4 teaspoon cayenne
black pepper
4 cups chicken stock
1 cup light cream

Steps:

  • Roast peppers: Turn burner to high.
  • Impale a red pepper on a long-handled fork and hold over high heat, turning to char skin evenly.
  • When skin is brown and crackly, immediately plunge pepper in a bowl of ice water; the skin will fall away.
  • Repeat with remaining peppers.
  • Seed peppers and chop coarsely.
  • Alternatively, broil peppers in a preheated broiler 4 inches from element, turning to char all sides evenly.
  • Combine oil, onions, garlic, basil, salt, cayenne, 3 turns of pepper and roasted peppers in a medium saucepan.
  • Cook 3 minutes over high heat.
  • Stir in stock and 1/4 cup cream and bring to a boil.
  • Reduce heat to medium and simmer, stirring occasionally, about 8 minutes.
  • Purée red pepper mixture in food processor or with a hand blender until smooth, about 2 minutes.
  • Return red pepper soup to pan with remaining cream and heat on medium-low heat before serving, garnished with basil chiffonade.

Roasted Red Pepper Soup! This bold and flavorful soup is made from roasted red peppers. My kids say it tastes like pizza! The perfect warm and comforting dish!

6 red bell peppers
½ cup yellow onion (chopped)
2 tbsp extra virgin olive oil
5 cloves garlic
4 cups chicken broth
2 tsp hot sauce
½ tsp salt
½ tsp ground black pepper
¼ cup sour cream
1 tsp dried oregano

Steps:

  • Clean the bell peppers, cut them in half and remove the seeds and membranes.
  • Place them on a baking sheet covered in foil, pressing them down to make them as flat as possible. Place the garlic cloves on the baking sheet among the peppers.
  • Place the baking sheet of peppers and garlic under the broiler in the oven and broil for about 15 minutes until the skins are blackened. Remove from the oven and place the peppers inside a tupperware container, and close the lid. This will allow the steam to soften them more. Keep in there for another 15 minutes.
  • While prepping the bell peppers, in a dutch oven, saute the onions with the olive oil until the onions are soft and translucent.
  • After peppers have cooled enough to touch, about 15 minutes. Remove from the tupperware and peel off the burnt skin. It will peel off. (I only peeled the burnt parts that were easily removed and left the skin that was still red and attached)
  • Place the bell pepper, garlic cloves, and onion into a food processor and processes for about 3-5 minutes until there are no large chunks left.
  • Add the mixture to the dutch oven, add in the chicken stock, hot sauce, salt, and pepper. Bring to a simmer, cover and allow to simmer for another 20 minutes.
  • Remove from the heat. Stir in the sour cream. Place the oregano in your hand and crush it up slightly to release the flavor and to make the pieces smaller, then pour into the pot. Stir until completely combined.
  • Serve with extra sour cream and fresh herbs on top if desired.

2 tablespoons olive oil (DeLallo's Extra Virgin Olive Oil is my favorite)
1 medium yellow onion, diced
1 medium carrot, diced
1 teaspoon kosher salt
4 cloves garlic
2 tablespoons tomato paste
optional: 1 teaspoon crushed red pepper flakes
1 cup fresh basil, roughly chopped
8 sprigs fresh thyme, leaves picked from the stem
1 14-ounce jar DeLallo Roasted Red Peppers, drained
14 ounces DeLallo Crushed Italian Tomatoes (use half of the 28-ounce can)
2 cups vegetable stock or broth
optional: 1/2 cup white wine
2 cups unsweetened almond milk (or other mild plant milk of choice)
for serving, as desired: fresh basil, cracked black pepper, crusty bread

Steps:

  • Add the olive oil to a large pot or Dutch oven over medium heat. Once hot, add the onion and carrot. Season with the kosher salt, and stir to combine. Cook, stirring occasionally, until the carrot softens & the onion becomes translucent, 4-5 minutes. Add in the garlic, tomato paste, & crushed red pepper (if using). Stir to combine, and cook until the tomato paste melts down & the garlic is fragrant, 1-2 minutes.
  • Add the basil, thyme, roasted red bell peppers, tomatoes, vegetable broth, & wine (if using) to the pot, stirring to combine. Bring the soup to a boil, then reduce heat to simmer. Simmer, stirring occasionally, for 15 minutes.
  • Carefully transfer the soup to a blender. Blend until smooth & creamy. Carefully transfer the soup back to the pot. (Alternatively, you can use an immersion blender & blend right in the pot.)
  • Pour the almond milk into the soup. Cook over medium-low heat, stirring ocassionally, until the soup is warmed through.
  • immediately, topped with lots of fresh cracked pepper & some fresh basil, as desired. A piece of crusty bread never hurts, either. Enjoy!

1 whole medium yellow onion, chopped
3 cloves garlic, minced
2 tsp. fresh oregano, minced
1 whole russet potato, peeled and chopped (optional)
2 16-ounce jars of roasted red peppers, drained and sliced
2 tbsp. tomato paste
1/2 c. white wine
4 c. vegetable stock
1/2 c. heavy cream
1 tbsp. red wine vinegar
1 tsp. salt, plus more to taste
1/2 tsp. black pepper
Grated parmesan cheese, for serving
Fresh oregano leaves, for serving

Steps:

  • In a Dutch oven over medium heat, heat the butter and olive oil. Add the onions, garlic, and oregano and cook for 3 minutes, stirring occasionally.
  • Add the potato and roasted red peppers and stir, cooking for 3 more minutes. Stir in the tomato paste and cook for 2 more minutes. Sprinkle in the salt and pepper and turn up the heat to medium-high.
  • Pour in the white wine and let it reduce for a couple of minutes, then pour in the stock. Bring the mixture to a gentle boil, then reduce the heat to medium-low and simmer until the potatoes are very tender, about 18-20 minutes.
  • Puree the soup using an immersion blender (or you can let it cool and puree it in a regular blender.) Add the cream and red wine vinegar and heat for a couple of minutes. Taste and adjust seasonings, then serve with grated Parmesan and fresh oregano leaves.
