1 cup roasted red peppers, drained and patted dry
1 ounce finely grated Parmesan cheese
1 tablespoon balsamic vinegar
1 clove garlic, peeled

Steps:

  • Heat a skillet over medium heat; cook and stir almonds until toasted and fragrant, 2 to 4 minutes.
  • Combine toasted almonds and mayonnaise in a food processor; process until finely chopped. Add roasted red peppers, Parmesan cheese, balsamic vinegar, garlic, salt, and pepper; process until desired consistency is reached, scraping down the sides as needed.

1/2 inch thick slice crusty bread (about 1/2 cup roughly chopped)
2 roasted red bell peppers, or 1 (12-ounce) jar
1 cup toasted slivered almonds
1/4 cup parsley leaves
2 garlic cloves
2 tablespoons extra virgin olive oil
1 tablespoons red wine vinegar
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt

Steps:

  • 1. Place the roughly chopped bread in the food processor and pulse for about 30 seconds to chop a little more finely.
  • 2. Add the remaining ingredients to the food processor and pulse until smooth.

4 red bell peppers
2 small links chorizo or a 4-inch piece of large chorizo
Extra-virgin olive oil
2 to 3 tablespoons sherry vinegar
2 garlic cloves, smashed and chopped
1 teaspoon pimenton (smoked paprika)
Kosher salt
1/4 cup toasted sliced almonds
2 cups baby arugula
1/4 cup shaved manchego
3 scallions, thinly sliced

Steps:

  • Preheat the broiler.
  • Put the peppers on a broiler pan and broil them until they are black on all sides. Remove them from the broiler, put them in a bowl and cover with plastic wrap. Let them sit for at least 15 minutes, then remove the plastic wrap and let them cool. Using your fingers scrape off all the black char from the outside of the peppers; use a paper towel if needed to assist with this. Remove the stem and seeds and cut the peppers into 1/2-inch wide strips.
  • While the peppers are cooling, heat a small skillet over medium-high heat and coat the bottom with olive oil. Add the chorizo and cook until it is crispy on all sides. Remove from the pan to a cutting board and finely chop.
  • In a small bowl, whisk together the vinegar, 2 to 3 tablespoons of olive oil, the garlic, and pimenton. Season with salt, to taste. In a large bowl toss together the roasted peppers, chorizo, almonds, arugula, and a little of the vinaigrette. Add the vinaigrette in stages to make sure the veggies are well coated but not overdressed. Taste to check the seasoning. Arrange on a pretty serving dish and sprinkle with shaved manchego and scallions. OLE!!

Once you taste this roasted red pepper dip, you'll never need to make another full-of-cheese, loaded-with-fat, red pepper dip again. I tweaked the recipe given to me by the chef of a local brewpub, Harvest Moon, where they charged $9 for a little ramekin of this stuff with some crudites and pita crisps. It was well worth the $9. That's how good this dip is. Trust me, try it.

1 (6 ounce) container nonfat plain yogurt
3/4 cup raisins

3 heads garlic, peeled (about 36 cloves)
1/4 cup oil
2 teaspoons Worcestershire sauce
1 1/2 teaspoons Dijon mustard
1 1/2 cups blanched almonds, toasted and coarsely chopped (about 6 oz)
1 cup sour cream
1 cup mayonnaise
6 tablespoons chopped fresh parsley
2 teaspoons dried rosemary, crumbled
salt and pepper

Steps:

  • Position rack in lowest third of oven and preheat to 300°F.
  • Place garlic in small baking dish and toss with oil.
  • Bake until garlic is soft and golden- approx 30 minutes.
  • Transfer to blender and let cool- approx 30 minutes.
  • Add Worcestershire sauce and mustard to garlic.
  • Blend until garlic is finely chopped.
  • Scrape mixture into large bowl.
  • Stir in almonds, sour cream, mayonnaise, and herbs, salt and pepper.
  • Cover and refrigerate at least 2 hours or best overnight to mellow flavors.
  • Let stand at room temperature for at least 1 hour prior to serving.

80 g almonds, shelled
285 g roasted red peppers packed in oil (reserve 2 tablespoons of olive oil from the jars)
3 garlic cloves, peeled and finely chopped
2 teaspoons red wine vinegar
black pepper, to taste

Steps:

  • Preheat oven to 220°C, gas mark 7.
  • Place almonds on a baking tray and roast for 8 minutes until just golden.
  • Allow to cool slightly then whiz in a blender until fine.
  • Drain the peppers reserving 2 tbsp of oil.
  • Add the peppers, garlic and vinegar to the blender and whiz until coarse.
  • With the machine running pour in the oil.
  • Season and serve with any raw vegetables you like to use for dipping.

2 tablespoons tomato paste
2 tablespoons mayonnaise
1 tablespoon sour cream
2 teaspoons vinegar
1 clove garlic
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a plastic bag, tied loosely with some air inside, for 15 minutes. Remove the stems and peel the peppers. Discard the cores and seeds. Cut peppers into wide strips.
  • Add the peppers, tomato paste, mayonnaise, sour cream, vinegar, garlic, and cayenne pepper in the bowl of a food processor. Pulse until almost smooth, 7 or 8 times. Salt to taste, if needed.
  • Refrigerate until ready to serve.
