Found this recipe on the back of a pkg of Emeril's sausage. Thought it was yummy. Have made it without thyme springs and it was still yummy.

3 tablespoons unsalted butter, divided
4 links emeril's chicken-apple sausages
2 medium onions, halved and thinly sliced
2 tablespoons light brown sugar
1/4 teaspoon salt
1 teaspoon fresh ground pepper
2 sprigs fresh thyme
1 tablespoon minced garlic
1/2 cup dark beer
3 tablespoons Bourbon

Steps:

  • Heat medium-size skillet over low heat for 30 seconds.
  • Melt 2 tablespoons butter and add onions and brown sugar.
  • Cook, stirring occasionally for 20 minutes until onions are partially browned. Season with salt and pepper, and place thyme sprigs in skillet.
  • Add sausage whole and cook, stirring occasionally until sausage is browned, about 15 minutes.
  • Add chopped garlic and cook, stirring for 2 minutes.
  • Add beer; reduce heat and cook, covered for 15 minutes.
  • Remove pan from heat and stir in remaining butter and boubon.
  • Remove thyme springs before serving.
  • Serve sausages and onions in toasted French or Hoagie roll with Emerils Kicked up Horseradish mustard.

1/4 cup vegetable oil
1/2 lb andouille sausage, cut in rounds and quartered
1 lb smoked sausage, cut in half moons
2 lbs chicken breasts, sliced
1/4 teaspoon cayenne pepper
2 tablespoons Emeril's Original Essence or 2 tablespoons other creole seasoning
3 cups onions, chopped
1 cup green pepper, chopped
2 tablespoons garlic, minced
2 cups long grain rice
6 cups chicken stock
1 bay leaf
1 cup green onion, chopped
1/2 cup flat leaf parsley, chopped

Steps:

  • Heat oil in Dutch oven over medium heat. Cook sausage 5 minutes and remove from pan.
  • Add chicken, cayenne pepper, and 1 tablespoons Emeril's essence to pan and cook 5 minutes. Remove from pan.
  • Add onions, bell peppers, remaining essence and garlic to pan and cook 8-10 minutes, until vegetables are softened. Add rice and cook, stirring 3-5 minutes.
  • Return sausage and chicken to pan. Add stock and bay leaf. Increase heat to medium-high and bring to a boil. Cover and reduce heat to low. Cook 25 minutes; remove from heat. Let stand, covered, 10 minutes.
  • Remove bay leaf and stir in green onions and parsley to serve.

1 large eggplant, cut crosswise into 1/3 inch thick rounds
1/2 cup olive oil, plus
more olive oil, as needed
salt
fresh ground black pepper
1 cup chopped yellow onion
1 lb Italian sausage, removed from casings
2 tablespoons tomato paste
1 (28 ounce) can whole Italian tomatoes, crushed, and their juices
1 teaspoon Italian spices
1/2 cup pitted black olives, coarsely chopped
1/4 teaspoon crushed red pepper flakes
1/4 cup minced fresh basil leaf
4 tablespoons butter
4 tablespoons flour
2 cups whole milk
1/8 teaspoon freshly grated nutmeg
1/2 cup grated parmesan cheese
8 ounces ziti pasta, cooked according to package directions and drained
1 cup grated mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Lightly grease a 9 by 13-inch casserole dish and set aside.
  • In a large skillet over medium-high heat, heat 1/4 cup of the oil.
  • Add the eggplant in batches, seasoning on both sides with salt and pepper, and cook until golden, adding more oil as needed.
  • Transfer to a plate as they cook, and set aside.
  • Heat 2 tablespoons of the remaining olive oil in a large skillet over medium-high heat.
  • When hot but not smoking, add the onion and sausage, and cook, stirring, until the sausage is browned and the onion is soft, about 6 minutes.
  • Add the tomato paste and cook, stirring frequently, until it begins to brown, about 1 to 2 minutes.
  • Add the tomatoes, their juices, the Italian seasoning, black olives, 1 teaspoon of salt, and the crushed red pepper.
  • Reduce the heat to medium-low and gently simmer, uncovered, until the flavors marry and the sauce slightly thickens, about 20 minutes.
  • Remove from the heat.
  • Add the basil and adjust seasoning, to taste.
  • Meanwhile, melt the butter in a medium saucepan over medium-high heat.
  • Stir in the flour and cook, stirring constantly, until thickened and forms a light roux, about 2 minutes.
  • Whisk in the milk and, whisking frequently, cook until the sauce is thickened and smooth, about 4 minutes.
  • Remove from the heat and season with the nutmeg and salt and pepper, to taste.
  • Arrange half of the eggplant slices on the bottom of the casserole, overlapping as necessary.
  • Top with half of the cooked pasta, then half of the sausage-tomato sauce.
  • Place another layer of eggplant slices on top of the sauce, then layers of pasta and sausage-tomato sauce.
  • Pour on the white sauce, then top with the grated mozzarella and Parmesan.
  • Bake for 1 hour, or until puffed and golden brown on top.

Wholesome broccoli pairs with irresistible sausage in this one-pot dinner that will please kids and adults alike. Anchovies are the secret ingredient in this dish. They give it deep, savory flavor without a bit of fishiness, so if you're tempted to skip them, don't!

Coarse salt and ground pepper
1 pound rigatoni
2 heads broccoli, cut into florets (about 4 cups)
1/4 cup extra-virgin olive oil
2 garlic cloves, minced
1 tablespoon finely grated lemon zest, plus 2 tablespoons lemon juice
4 anchovy fillets, minced
1 pound sweet Italian sausage, casings removed
Parmesan, grated, for serving

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. In last 2 minutes of cooking, add broccoli and cook until bright green and crisp-tender. Reserve 1 cup pasta water; drain pasta and broccoli.
  • Meanwhile, in a small bowl, whisk together oil, garlic, lemon zest and juice, anchovies, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Add sausage to pot and cook over medium-high, breaking up meat with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Remove from heat, return pasta and broccoli to pot, and add oil mixture. Toss well to combine, adding enough pasta water to create a thin sauce that coats pasta. Serve sprinkled with Parmesan.

9 tablespoons unsalted butter
1/2 lb elbow macaroni
1 lb homemade-style spicy pork sausage, removed from casings and crumbled
1 cup yellow onion, chopped
1/2 cup green bell pepper, chopped
1 tablespoon Emeril's Original Essence (see Emeril's Essence Creole Seasoning)
4 teaspoons garlic, minced
1/2 teaspoon anise seed
1/4 cup butter
1/2 cup all-purpose flour
3 cups whole milk
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne
3 cups sharp cheddar cheese, grated (8 ounces)
1/2 cup fine dry breadcrumb

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a large casserole dish with 1 tablespoon of the butter and set aside.
  • Bring a large pot of salted water to a boil.
  • Add the macaroni and cook until al dente, about 10 minutes.
  • Drain in a colander and rinse under cold running water.
  • Drain well.
  • In a large skillet over medium-high heat, cook the sausage, stirring, until browned and the fat is rendered.
  • Remove with a slotted spoon and drain on paper towels.
  • Pour off all but 1 tablespoon of fat from the pan.
  • Add the onions, bell peppers, and 1 teaspoon of the Essence, and cook, stirring, over medium-high heat until soft, about 3 minutes.
  • Add the garlic and anise seeds, and cook, stirring, for 1 minute.
  • Remove from the heat.
  • Melt the butter in a large, heavy saucepan over medium heat.
  • Add the flour, and stirring constantly with a wooden spoon, cook over medium heat until thick, 3 to 4 minutes, being careful not to let the flour brown.
  • Using a whisk, add the milk in a steady stream and cook, whisking constantly, until thick and smooth, 4 to 5 minutes.
  • Remove from the heat.
  • Add the salt, pepper, cayenne, and 2 cups of the cheese, and stir well.
  • Add the noodles, cooked sausage and vegetables, and stir well to combine.
  • Pour into the prepared baking dish.
  • In a mixing bowl, combine the remaining 1 cup of cheese with the breadcrumbs and remaining 2 teaspoons of Essence.
  • Sprinkle over the macaroni and bake until golden brown and bubbly, about 25 minutes.
  • Remove from the oven and let rest for 5 minutes before serving.
